NORTHERN ITALIAN BEEF STEW



Northern Italian Beef Stew image

This hearty beef and vegetable stew that can be made in the slow-cooker is a family favorite. It is also the backbone for an excellent beef soup, if you actually find yourself with leftovers.

Number Of Ingredients 16

2 tablespoons olive oil
2 pounds lean top round, trimmed and cut into 1-inch cubes
2 large sweet onions, diced
2 cups large chunks of celery
4 large carrots, peeled and cut into large rounds
1 pound crimini mushrooms, sliced
2 tablespoons minced garlic
2 cups dry red wine
4 large tomatoes, chopped
1 ½ pounds red potatoes (such as Red Bliss), cut into 1-inch chunks
1 tablespoon dried basil
1 teaspoon dried thyme
1 teaspoon dried marjoram
½ teaspoon dried sage
1 quart beef stock
2 cups tomato sauce

Steps:

  • Heat olive oil in a large skillet over medium-high heat. Cook beef in batches in hot oil until browned completely, about 5 minutes per batch. Remove browned beef cubes to a plate lined with paper towels, keeping skillet over heat and retaining the beef drippings.
  • Cook and stir onion, celery, and carrots in the retained beef drippings until just softened, 2 to 3 minutes. Stir mushrooms and garlic into the onion mixture.
  • Pour red wine into the pan; bring to a boil while scraping the browned bits of food off the bottom of the pan with a wooden spoon. Continue cooking the mixture until the wine evaporates, 7 to 10 minutes. Stir tomatoes into the mixture.
  • Return beef to skillet with potatoes, basil, thyme, marjoram, and sage. Pour beef stock and tomato sauce over the mixture. Bring the liquid to a simmer.
  • Reduce heat to low and simmer until the beef is very tender and the sauce is thick, 4 to 6 hours.

5 plum tomatoes, chopped, divided
2 red bell peppers, chopped
½ red onion, chopped
½ red onion, sliced
2 habanero peppers, chopped
6 cloves garlic
12 oz tomato paste
1 tablespoon salt, plus 1 teaspoon salt, divided
1 ½ teaspoons black pepper, divided
½ cup water
1 cup vegetable oil
1 ½ lb flank steak, cut into strips
1 teaspoon fresh rosemary
1 teaspoon paprika
1 teaspoon curry powder
2 cubes beef bouillon
1 bay leaf
white rice, cooked, for serving
fried plantain, for serving
scallion, for serving
fresh parsley, for serving

Steps:

  • In a food processor or blender, combine 4 chopped plum tomatoes, red bell peppers, chopped red onion, habanero peppers, garlic cloves, tomato paste, 1 tablespoon salt, 1 teaspoon pepper, and water. Puree until smooth.
  • Heat vegetable oil in a large pot over medium-high heat.
  • Add the remaining tomato, sliced onion, remaining salt, and remaining pepper. Sauté until fragrant.
  • Add steak, rosemary, paprika, curry powder, and bullion cubes. Cook until the steak is golden brown and cooked through, about 10 minutes.
  • Add the blended tomato and pepper mixture and the bay leaf.
  • Bring to a boil over high heat. Cover and simmer at low heat for 20 minutes, until the stew has thickened.
  • Fish out the bay leaf.
  • Remove stew from heat and let sit 10 minutes.
  • Serve with white rice and fried plantains. Garnish with scallions and parsley, if desired.
  • Enjoy!

2 lbs beef
5 cups beef broth
1 lb carrot
1 small rutabaga
3 cups potatoes (chopped)
1 onion, finely chopped
salt
pepper

Steps:

  • Dice the beef, cover with water, and simmer for one hour.
  • Separately, wash and peel the vegetables and potatoes, and cut them into bite-size cubes.
  • Bring the beef broth to a boil. Add the carrots and the rutabaga, and cook for 15 minutes.
  • Then add potatoes, and cook another 15 minutes.
  • Add the meat and onion, and season to taster with salt and pepper.
  • Continue to cook until the stew thickens and the meat, vegetables and potatoes ae all tender (but not mushy).
  • Stir occasionally while cooking, being careful not to let them burn.

1 lb stew meat (or lean ground beef)
1 dash salt & pepper
1 dash parsley
1 medium onion, chopped finely
2 -3 medium potatoes, quartered
2 large carrots, chopped
1 (16 ounce) can cream of mushroom soup (family size)
1 (16 ounce) can tomato soup (family size)

Steps:

  • Put items in crock put as listed above. Mix cans of soup together and pour on top of other ingredients. Cook on high for 4 hours or low for 8 hours. If you double then lengthen cooking time to next setting. Do not add water and don't stir. Just let it cook and enjoy when it's done!

2 ¼ pounds beef stew meat, cut into 3/4-inch cubes
2 onions, roughly chopped
2 cloves garlic, chopped
2 tablespoons harissa
salt and ground black pepper to taste
water to cover
2 potatoes, chopped
1 (14.5 ounce) can chopped tomatoes

Steps:

  • Cook and stir beef in a stockpot over medium heat until browned, 5 to 7 minutes. Add onions and garlic; cook and stir until onions are softened, 5 to 10 minutes. Stir harissa into beef mixture until coated; cook and stir for 2 minutes more. Season beef mixture with salt and pepper.
  • Pour enough water over beef to completely cover ingredients and bring to a boil. Add potatoes and tomatoes to stew; reduce heat to medium-low and simmer until beef and potatoes are tender, 2 to 3 hours.
