Dungeness Crabs Steamed on the Grill in Ginger, Lime, Mirin and Soy image

Number Of Ingredients 12

2 cups crab stock
1 cup mirin
1 cup soy sauce
1/2 cup sliced fresh ginger
2 tablespoons toasted sesame oil
2 limes, juiced
4 large Dungeness crab, 2 to 2 1/2 pounds each, killed and cleaned
2 to 3 tablespoons honey
1/4 teaspoon coarsely ground black pepper
Pinch red chile flakes
4 tablespoons cold unsalted butter
2 tablespoons chopped fresh cilantro

Steps:

  • Prepare a grill to medium-high heat.
  • In a large roasting pan over high heat, add the stock, mirin, soy sauce, ginger, toasted sesame oil and lime juice and bring to a boil. Add the crabs, shell-side up, and place the pan on the grill. Cover the grill and steam the crabs until they are just cooked through, about 30 minutes, flipping the crabs halfway through cooking. Remove the crabs to a platter.
  • Strain the steaming liquid into a bowl. Return the liquid to the roasting pan and whisk in the honey, black pepper and chile flakes. Bring to a boil and simmer until slightly reduced, about 10 minutes. Whisk in the butter. Halve the crabs and put 2 halves into 4 serving bowls. Pour the sauce over and garnish with cilantro.

4 dungeness crabs, cleaned, cooked & cracked
1/3 cup butter
1/3 cup olive oil
3 tablespoons minced garlic
salt & pepper
3 tablespoons fresh lemon juice
1/4 cup chopped fresh parsley

Steps:

  • Preheat the oven to 500°F.
  • Heat butter, oil, and garlic is a large saucepan over medium-high heat. Add crabs, 2 at a time, toss well, season with salt & pepper.
  • Transfer to a large baking pan. Roast about 12 minutes, tossing well halfway through. Warm butter mixture, add lemon juice and parsley.
  • Arrange crabs in a large shallow bowl & drizzle butter mixture over. Serve immediately with chunks of hot bread and a nice white wine.

3 lemons, juice and zest of, grated
4 dungeness crabs, cleaned, cooked, and cracked
assorted seasonal vegetables
salt and pepper
1/4 cup fresh parsley, chopped
crusty sourdough bread

Steps:

  • Preheat grill to medium high.
  • Melt butter with olive oil, garlic, and lemon juice and grated peel.
  • Toss crab in the butter mixture to coat and place it on the grill away from the flame.
  • Toss vegetables in the butter mixture and season to taste with salt and pepper; place vegetables on the grill.
  • Cook the crab for 4 minutes and turn over, burshing with the butter mixture.
  • Turn the vegetables over and cook until the crab is heated through and the vegetables are tender crisp.
  • Arrange the vegetables on a platter.
  • Toss the herbs in the remaining butter mixture and add the crab; toss to coat.
  • Arrange the crab over the vegetables and pour the remaning butter mixture over the platter, serve with crusty bread.

KILLER CRAB WHOLE DUNGENESS CRAB ROASTED IN GARLIC SAUCE



Killer Crab Whole Dungeness Crab Roasted in Garlic Sauce image

2 whole crabs (2 plus pounds each)
Crab butter
Crab innards (optional)
1/2 cup white wine
2 tablespoons olive oil
1 chopped medium shallot
1/2 sprig rosemary (chopped)
1 sprig thyme, leaves chopped
2 tablespoons Szechwan peppercorns
1/2 cup canola oil
1 tablespoon garlic salt
8 to 10 garlic cloves, roasted and pureed
Chopped parsley, for garnish

Steps:

  • Crabs: Depending on where you get the crabs they could be alive or preboiled.
  • If they're alive, place the crabs in boiling water for 5 minutes (until red in color). Remove from pot and cool them in iced water (quick cool). With your thumb and index finger pry open the head, remove innards and save. Under running water wipe clean the head area.
  • Crab innards: In a blender add the innards with 1/4 cup of white wine, blend on pulse, strain, and save.
  • In a pot on medium heat add olive oil, shallots, rosemary, thyme, and peppercorns. Cook until light brown, about 5 minutes. Deglaze with 1/4 to 1/2 cup of wine. Add the blended crab innards, the canola oil, and the garlic salt. Simmer for 10 minutes. Skim the top, remove from the heat and cool for a few minutes. Strain through a sieve or cheesecloth. Whisk in the garlic puree and let rest.
  • Preheat the oven to 325 degrees F.
  • Place the 2 crabs in a large oven-proof skillet, ladle the crab butter over them, (be generous) and bake for 15 to 20 minutes. Set the crabs on your serving dish, sprinkle with garlic salt, put the empty head shells back on (you can brush the shell with olive oil to shine) sprinkle. Sprinkle with chopped parsley.

My two favorite things: dungeness crab and curry meet together to make an unusual, but lovely curry. Very romantic, and it would be great treat for a dinner-date. This recipe is from "Pacific Passions Cookbook" by Karen Barnaby.

2 (1 1/2 lb) live dungeness crabs
2 tablespoons whole coriander seeds
1 teaspoon whole black peppercorn
2 tablespoons bright red sweet paprika
1/2-1 teaspoon cayenne pepper
1/2 teaspoon turmeric
4 tablespoons vegetable oil
1 teaspoon black mustard seeds
1 medium onion, peeled and sliced into thin half-moons
5 garlic cloves, cut into thin slivers
2 cups water
2 (14 ounce) cans coconut milk

Steps:

  • Bring a large pot of water to a boil.
  • Drop in the crabs and cook until they stop moving, about 3-4 minutes.
  • Remove the crabs from the pot and cool.
  • When they are cool enough to handle, pull of and discard the top shell.
  • Scrape the insides clean with a small spoon.
  • Remove the spongy lungs on both sides of the body.
  • With a heavy knife, cut the crabs in quarters and crack the claws; set aside.
  • Heat a small frying pan over medium heat.
  • Toast the coriander seeds and peppercorns, stirring constantly, for 1 minute, then grind finely in a spice mill or coffee grinder.
  • Place in a bowl and add the paprika, cayenne and turmeric; set aside.
  • Heat the oil over medium heat in a frying pan or pot that will be able to accommodate the crab pieces.
  • Fry the black mustard seeds until they pop.
  • Add the onions and garlic and cook until lightly browned.
  • Stir in the spice mixture and the water.
  • Bring to a boil, and then simmer until the mixture is reduced by half.
  • Add the coconut milk and bring to boil.
  • Season with salt and add the crab.
  • Cook for 5 minutes, turning the pieces over to ensure even cooking.
  • Remove from the heat and serve.

1/4 cup olive oil
2 tablespoons minced garlic
1 tablespoon minced shallot
1 1/2 teaspoons dry crushed red pepper
2 large dungeness crabs, cooked, cleaned, and cracked (about 4 1/4 pounds)
2 tablespoons chopped fresh thyme, divided
2 tablespoons chopped fresh parsley, divided
1/2 cup blood orange juice or 1/2 cup regular orange juice
1 teaspoon finely grated blood orange peel or 1 teaspoon regular orange peel

Steps:

  • Preheat oven to 500°F Melt butter with oil in heavy large ovenproof skillet over medium-high heat. Stir in garlic, shallot, and dried crushed red pepper. Add crabs; sprinkle with salt and pepper. Sprinkle 1 tablespoon chopped thyme and 1 tablespoon chopped parsley over crabs. Stir to combine. Place skillet in oven and roast crabs until heated through, stirring once, about 12 minutes.
  • Using tongs, transfer crabs to platter. Add orange juice and peel to same skillet; boil until sauce is reduced by about half, about 5 minutes. Spoon sauce over crabs. Sprinkle with remaining 1 tablespoon thyme and 1 tablespoon parsley and serve.

Dungeness crab is my favorite type of shell food. It also reminds me of Christmas eve as a child where my grandma had all you can eat crab. I got this recipe from "Pacific Passions Cookbook" by Karen Barnaby.

5 tablespoons unsalted butter
1/4 cup onion, finely chopped
1/4 cup celery, finely chopped
3/4 cup milk
6 tablespoons flour
2 large egg yolks
1/2 teaspoon salt
8 drops Tabasco sauce
2 teaspoons fresh parsley, finely chopped
1 1/2 cups dungeness crabmeat, picked over and squeezed dry
1 1/2 cups breadcrumbs
1 large egg
2 tablespoons water
1 cup flour
vegetable oil (for frying)

Steps:

  • Melt the butter in a saucepan over low heat. Sauce the onion and celery until the vegetables are very soft but not brown. While they are cooking, heat the milk to a simmer.
  • Add the 6 tablespoons flour to the vegetables and cook over low heat, stirring constantly for 3-4 minutes. Slowly whisk in the hot milk. The mixture will be very thick. Continue stirring until the mixture comes to a boil.
  • Remove from the heat and beat in the egg yolks one at a time. Beat in the salt, pepper, Tabasco sauce and parsley. Spread onto a large baking sheet and cool completely. Transfer to a bowl and stir in the crab meat. Refrigerate until firm.
  • Form the mixture into 12 fat, hamburger-shaped cakes. Sprinkle a baking sheet with ½ cup of bread crumbs. Beat the egg with the water in a shallow bowl. Spread the flour and remaining breadcrumbs on separate plates. Coat each cake in flour, then in the egg, then in the breadcrumbs and place on the baking sheet.
  • Heat 1 inch of vegetable oil in a large heavy frying pan over medium-high heat. Without overcrowding, fry the crab cakes until they are golden brown on both sides. Remove and drain on absorbent paper. Keep the cooked crab cakes warm in a 200 F oven while frying the rest. Serve immediately.
