These burgers will put an island twist on your next backyard barbecue. Mango creates a bright and sunny flavor and the jerk seasoning brings a little heat.This recipe is courtesy of Beef - It's What's For Dinner.

1-1/2 pound ground beer (93% lean or leaner)
2 tablespoon caribbean jerk seasoning
4 hamburger buns, split
1 large mango, peeled, coarsley chopped (about 1 cup)
1 tablespoon chopped fresh cilantro
1 tablespoon chopped green onion
1 tablespoon finely chopped seeded jalapeño pepper
1 tablespoon fresh lime juice

Steps:

  • Combine Ground Beef and jerk seasoning in large bowl, mixing lightly but thoroughly.
  • Shape into four 3/4-inch thick patties.
  • Place patties on grid over medium, ash-covered coals.
  • Grill, covered, 11 to 15 minutes (over medium heat on preheated gas grill, covered, 13 to 14 minutes), until instant-read thermometer inserted horizontally into center registers 160°F, turning occasionally.
  • Season with salt, as desired.
  • Meanwhile, combine salsa ingredients in medium bowl, mixing lightly.
  • About 2 minutes before burgers are done, place buns, cut sides down, on grill.
  • Grill until lightly toasted.
  • Serve burgers with salsa.

1/2 head red cabbage, thinly sliced
4 limes, juiced
2 tablespoons sriracha
1 teaspoon kosher salt, plus more for seasoning
1/4 teaspoon ground black pepper, plus more for seasoning
2 fresh mangos
1 bunch scallions, green and white parts, thinly sliced
4 sprigs mint, leaves torn
2 pounds ground beef
3 tablespoons teriyaki sauce
1 tablespoon sriracha
1 tablespoon grated fresh ginger
3 cloves garlic, finely grated
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
6 brioche hamburger buns, toasted
Vegetable oil, as needed
Mayonnaise, as needed
6 leaves green leaf lettuce
1 avocado, peeled and thinly sliced

Steps:

  • For the slaw: Toss the cabbage with the lime juice, sriracha, salt and pepper in a large bowl. Cover and chill until ready to serve.
  • Cut the mangos into spears. Reserve 12 spears for your burgers. Chop the remaining spears for your slaw. Add them to the slaw just before serving along with the scallions and mint and toss to finish.
  • For the burgers: Combine the ground beef, teriyaki sauce, sriracha, ginger, garlic, salt and pepper in a medium bowl. Mix with your hands until combined. Form into 6 patties roughly 3/4-inch thick and 4 inches in diameter.
  • Brush a grill, grill pan or skillet with vegetable oil and heat on medium-high. When nice and hot, add the patties and cook for about 4 minutes per side for medium-rare. Take them off the heat.
  • To build the burgers: Spread mayonnaise on the bottom bun. Season with salt and pepper. Place a lettuce leaf on top of the seasoned mayo and top it with a patty, 2 slices of avocado, 2 spears of the reserved mango and the bun lid. Repeat with the 5 other burgers. Serve the slaw on the side.

2 lbs ground chicken, or
2 lbs pork, or
2 lbs turkey breast
1 1/2 teaspoons ground allspice
1/2 teaspoon ground cinnamon
1/2 teaspoon grated nutmeg
1 teaspoon thyme (ground or dried)
1/2 teaspoon cayenne pepper
1 tablespoon brown sugar
5 -6 leaves fresh basil or 5 -6 leaves cilantro, chopped
salt and black pepper
1 ripe mango, peeled and chopped into 1/4-inch dice
1 small red bell pepper, seeded and chopped into 1/4-inch dice
1 jalapeno pepper, seeded and finely chopped
1 lime, juice and zest of
cornmeal kaiser roll, split
bibb lettuce
spicy specialty potato chips

Steps:

  • Heat a large nonstick skillet with EVOO, two turns of the pan, over medium-high heat.
  • Place meat of choice into a mixing bowl. Combine the dry spices and sugar in a small dish, then sprinkle evenly over the meat. Add fresh basil or cilantro, lots of salt and pepper to the meat. Mix the meat and spices and form four large patties. Make a divot in the center of the burger. As the burgers cook, the well will swell up and you'll end up with a flat surface instead of the dreaded burger bulge. Cook the patties for 3-4 minutes on each side, turning once.
  • While the burgers cook, make the mango salsa: in a small bowl, combine the mango, red pepper, jalapeño, cucumber and lime zest and juice. Season with salt, to taste.
  • Toast the buns lightly under a hot broiler.
  • When the burgers are done, transfer them to bun bottoms and top with Bibb lettuce, lots of salsa and bun tops. Serve burgers with a few chips alongside.
