NORWEGIAN FISKEGRATENG; FISH 'N MACARONI AU GRATIN RECIPE
A mild tasting fish and macaroni casserole in a roux sauce, old Norwegian recipe loved by kids and adults.

- Grease a 9 x 13 baking dish. Preheat oven to 400°F.
- In a large pot, cook macaroni according to the package, or slightly less to keep the pasta a little bit on the firm side. Drain, pour into a bowl and set aside.
- Rinse fish. In the same pot, gently simmer fish in lightly salted water for 5-10 min. until flaky. Drain, keep the fish in the pot and break into bite sized pieces with a fork. Set aside.
- Separate the eggs, set aside and allow to come to room temperature.
- Melt butter in a medium sized heavy sauce pan. Add flour, whisk until smooth, and cook for a couple of minutes.
- Pull away from heat, add milk, egg yolks, and spices, and whisk well until smooth. Bring to a boil over medium heat until thickened, stirring often with a whisk to keep lumps from forming. Set aside.
- Whip egg whites with an electric mixer until very stiff peaks form. Set aside.
- To assemble the casserole, combine macaroni and 3 cups of the sauce together with the fish in the large pot. Save the rest of the sauce for serving with the casserole later.
- Very gently fold the egg whites into the fish mixture with a rubber spatula until mostly mixed but not entirely. Some little bits of egg white should still be seen.
- Pour the mixture into the greased baking dish, and top with the crumbs or crushed crackers.
- Bake at 400° F for 40 min. until golden brown and set.
NORSK FISKEGRATENG (FISH AU GRATIN)
This is a very good way to get your serving of that important fish. I use Cod for this recipe, but any white, firm fish will do. The recipe comes from a book entitled "Trolldom in the Kitchen".

- Flake the poached fish into a well greased baking dish.
- In a small saucepan, melt margarine, and add 1/2 cup flour.
- Gradually add the milk, salt, pepper and the beaten eggs.
- Beat thoroughly until smooth and lump-free.
- Pour over fish and top with a layer of buttered bread-crumbs OR grated cheese.
- Bake at 175°C (350°F) for 45 minutes.

- Heat oven to 400 degrees.
- Place half fish in greased baking dish. Cover with 4 slices cheese.
- Top with another layer of fish and cheese. Sprinkle with thyme and parsley.
- Saute onions in oil over medium heat.
- Remove onions from heat and add flour, salt and pepper. Return to heat and add milk. Stir over medium heat until thick. Pour over fish. Bake 20-30.
FISH GRATIN WITH BUTTON MUSHROOMS

Steps:
- Clean button mushrooms and slice. Mince the shallot. Braise both in butter for approximately 5 minutes. Deglaze with white wine, cook and reduce liquid slightly.
- Butter a gratin dish. Mix half of the mushrooms with herbs and distribute on the bottom of the dish.
- Add salt and pepper to the filets and place on top the mushrooms. Cover with the remaining mushrooms and bake in the 350°F oven for approximately 20 minutes.
- Stir egg yolk into the cream. Remove the juice that formed while baking the fish and add it to the egg-cream mixture. Season with pepper and salt and pour over the fish filets. Sprinkle cheese over the dish and add a few flakes of butter.
- Bake another 10 minutes at 350°F heat. Don't let a brown crust form, if necessary cover with aluminum foil.
- Serve with freshly peeled boiled potatoes, grainy rice or fine noodles.

- Preheat oven to 350°F.
- place fillets in 13 x 9-inch baking dish sprayed lightly with cooking spray.
- Combine mayonnaise, cheese and seasoning in bowl.
- mix well and spoon over fillets.
- Spray breadcrumbs lightly with cooking spray and toss to blend.
- sprinkle over cheese topping.
- Bake uncovered for 9 to 11 minutes.
- Toast in broiler for 30 seconds or until breadcrumbs are golden brown.
