1 tablespoon butter
2 celery stalks, thinly sliced
1/2 medium onion, diced
Coarse salt and ground pepper
2 pints grape or cherry tomatoes, 1 pint halved
1/4 teaspoon dried basil

Steps:

  • In a large saucepan, heat butter over medium. Add celery, onion, and 1/2 cup water; season with salt and pepper. Cook, stirring occasionally, until water has evaporated and celery is tender, 7 to 10 minutes.
  • Add tomatoes; cook until tomatoes are soft and juicy, 3 to 5 minutes. Stir in basil; season with salt and pepper.

Here is a good recipe for stewed tomatoes that I have on my site. This is a good way to use up the remaining tomatoes you may have on your vines!

4 large tomatoes
2 stalks celery, chopped very fine
1/4 bell pepper, chopped very fine
1 teaspoon Accent seasoning
4 tablespoons sugar
salt and pepper
2 cups water

Steps:

  • Peel the tomatoes by soaking them in boiling water for one minute. Gently pull away the skin.
  • Place tomatoes in a large pot and add the remaining ingredients.
  • Cover and boil gently for 15 minutes, until tomatoes are tender.
  • Serve with croutons.
  • I like my stewed tomatoes with toast and butter.

Steps:

  • Gather the ingredients.
  • Peel the tomatoes .
  • Cut them into chunks.
  • Heat the tomatoes in a medium saucepan over medium-low heat, stirring constantly for about 5 minutes.
  • Continue cooking over low heat for 10 to 15 minutes, stirring frequently, or until desired consistency is reached.
  • Add salt, pepper, sugar, and butter; taste and adjust seasonings. If desired, serve with croutons on top. Enjoy.

3 slices stale homemade bread, cut in cubes
1 (28 ounce) can tomatoes with juice
1/2 cup sugar
4 tablespoons butter
1/2 teaspoon salt

Steps:

  • Preheat oven to 350°F.
  • Spray an oven proof casserole with cooking spray and set aside.
  • Put the tomatoes with their juices into the casserole and cut up into chunks.
  • Add the sugar and stir.
  • Cut the butter into chunks and add to tomato mixture.
  • Stir in the stale bread cubes-enough to make a thick mixture.
  • Bake uncovered for 30-35 minutes, or until the top is lightly browned and the mixture is very thick.
  • Cover with foil if it appears to be browning too quickly towards the end.

4 tablespoons butter
1/4 cup sugar
2 teaspoons kosher salt
4 slices fresh ginger, about the size of a quarter, peeled and julienned
1/4 teaspoon paprika
Pinch ground cloves
1/4 pound yellow onion, peeled, halved and thinly sliced
3 pounds ripe tomatoes, cored and cut into 1-inch wedges
2 tablespoons cornstarch dissolved in 1/4-cup water
2 tablespoons fresh lemon juice
Freshly ground black pepper

Steps:

  • In a glass or ceramic dish (11 by 14 by 2 inches), combine butter, sugar, salt, ginger, paprika, cloves and onion. Cook, uncovered, at 100 percent for 4 minutes.
  • Stir in tomatoes. Push tomatoes to the edge of the dish so that they make a ring, leaving an open area in the center. Cover dish tightly with polyvinyl microwave plastic wrap. Cook at 100 percent for 8 minutes. Pierce plastic and stir in dissolved cornstarch. Patch plastic. Cook at 100 percent for 3 minutes longer.
  • Prick plastic. Uncover carefully. Stir in lemon juice and pepper to taste. Serve immediately.
