This is the classic noodle kugel that my mom always made for Shabbat dinner. It is incredibly easy to make and tastes so good!

1 (16 ounce) package egg noodles
½ cup margarine
4 eggs, beaten
1 cup white sugar
1 ½ cups applesauce
1 teaspoon vanilla extract
ground cinnamon, for dusting

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the egg noodles, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 5 minutes. Drain well in a colander set in the sink.
  • Place noodles in a large bowl. Mix margarine into the noodles until melted. Stir in the eggs, sugar, applesauce, and vanilla extract. Pour noodle mixture into a 9x13 inch baking pan, then sprinkle with cinnamon. Cover baking pan with aluminum foil.
  • Bake in the preheated oven for 30 minutes. Uncover the kugel and bake until golden brown, 20 to 30 minutes.

1/2 pound wide kosher for Passover egg noodles
1/2 stick butter, melted
1 pound cottage cheese
2 cups sour cream
1/2 cup sugar
6 eggs
1 teaspoon ground cinnamon
1/2 cup raisins

Steps:

  • Preheat oven to 375 degrees F.
  • Boil the noodles in salted water for about 4 minutes. Strain noodles from water. In a large mixing bowl, combine noodles with remaining ingredients and pour into a greased, approximately 9-by-13-inch baking dish.
  • Bake until custard is set and top is golden brown, about 30 to 45 minutes.

8 tablespoons (1 stick) unsalted butter (cut into pieces, plus extra for buttering the pan)
1 cup raisins
Grated zest and strained juice of 1 orange
1 package (12 ounces wide egg noodles)
6 large eggs
2 cups cottage cheese
2 cups sour cream
2 cups whole milk
½ cup sugar
1 teaspoon ground cinnamon
1 teaspoon pure vanilla extract
½ teaspoon kosher or coarse salt

Steps:

  • Preheat the oven to 350°F. Butter a 9 by 13-inch baking pan.
  • Combine the raisins and the orange juice and set aside to soak. Cook the noodles according to the package directions.
  • Whisk together the orange zest, eggs, cottage cheese, sour cream, milk, sugar, cinnamon, vanilla, and salt in a medium-size bowl. Add the plumped raisins and up to 1 tablespoon of any remaining juice.
  • Drain the noodles and return them to the pot. Add the butter in pieces and toss until melted. Add the cottage cheese mixture and stir gently until well combined. Transfer the noodles to the prepared pan.

1 pound cream cheese
12-ounce package egg noodles
1 cup golden raisins
1 cube chicken bouillon
1 pound (pint) cottage cheese

1 tablespoon butter or butter substitute

Steps:

  • Preheat the oven to 375 degrees. In a pan, saute the onions in oil until browned and caramelized. Put the cream cheese in a large bowl and pour the hot onions over to melt. In the meantime, in a large pot of boiling water, cook the noodles until done. Drain and add to the mixing bowl. Stir in the raisins, bouillon then the cottage cheese and sour cream. Steps:

  • Butter a 13 x 9-inch baking pan.
  • Spread the UNCOOKED egg noodles and raisins or dried fruit into the pan.
  • In a bowl in whisk the eggs with sour cream until very smooth, then whisk in melted butter, sugar, cinnamon and salt; whisk vigorously until well combined and no sugar granules remain (mix in order stated starting with eggs and sour cream).

12.3-ounce container firm or extra-firm silken tofu
8-ounce container vegan cream cheese, at room temperature
1 cup lightly drained crushed pineapple
2/3 cup dark or golden raisins
1 medium apple or pear, peeled, cored, and finely diced
1/4 cup vegan butter, melted
2/3 cup natural granulated sugar
2 teaspoons vanilla extract
1 teaspoon cinnamon

Steps:

  • Preheat the oven to 350º F.
  • Cook the noodles according to package directions, then drain.
  • In a large mixing bowl, mash the tofu and cream cheese together until finely crumbled.

Noodle ingredients:
1 pound wide egg noodles
1/2 cup butter (healthy version, 1/6 cup)
1 cup whole milk (healthy version, low fat)
4 large eggs (yolks are healthy! And give texture to your kugel.)
3/4 cup sugar (healthy version, 1/2 cup)
2 1/2 teaspoons vanilla
1 teaspoon salt
1- pound container sour cream (healthy version, Greek yogurt)
1- pound container cottage cheese (healthy version, low fat)
Topping ingredients:
3 cups crushed cornflakes
3 tablespoons sugar
1 1/2 teaspoon cinnamon
3 tablespoons soft butter (cut into bits (this topping is so tasty, I shunned all healthy versions))

Steps:

  • Preheat to 350 degrees F.
  • Butter a 9x13x2 inch glass or ceramic dish and set aside.
  • Cook noodles according to directions until al dente.
  • Drain well, then return to the pot and add amount of butter of your choosing, totally coating the noodles.
  • Mix together milk, eggs, sugar, vanilla, and salt.
  • Then stir in sour cream or Greek yogurt.
  • Lastly, mix in cottage cheese.
  • Combine your noodles with the mixture, and transfer into the dish.
