Savory Walnut Spread image

Spread this smooth, rich dip on crackers or raw vegetables, or serve with grilled vegetable or meatloaf sandwiches.

1 cup chopped California walnuts
1/2 cup plain low-fat yogurt
1 1/2 teaspoons Dijon mustard
1 small clove garlic, peeled
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons walnut oil

Steps:

  • Combine walnuts, yogurt, mustard, garlic, salt and pepper in a food processor. Process until walnuts are finely chopped.
  • Add walnut oil and process until smooth. You'll have about 1 1/2 cups. One serving equals 2 tablespoons.

Adapted from a suggestion in Dean Ornish's book "Eat More, Weigh Less". This is a nice nonfat substitute for cream cheese and doesn't have any of the chemicals and additives that nonfat cream cheeses usually contain. Be sure not to use yogurt that contains gelatin for this recipe. You could also add things like sundried tomatoes and grated carrots for more of a veggie spread, or chives in place of green onions.

1 cup nonfat yogurt
2 small green onions, finely chopped
1/8 teaspoon dry mustard
1/8 teaspoon paprika
1/8 teaspoon salt

Steps:

  • Mix all ingredients together.
  • Place a small strainer over a small empty bowl, then place a piece of cheesecloth or a clean cloth napkin over the strainer, and scoop the entire mixture onto the cheesecloth covered strainer.
  • Cover the mixture and place in the refrigerator for several hours or overnight.
  • Take the mixture out of the strainer, and keep in an airtight container in the fridge for a week or more.
  • The mixture will have the consistency of cream cheese after being strained.
  • Enjoy with a bagel or on top of a baked potato.

I came up with this recipe for a Mexican themed pot-luck we had at work and it was a huge success. They are very easy to make and can be made ahead of time. By using non-fat cheeses, this is an excellent low-fat recipe.

2 (8 ounce) packages cream cheese, room temp
3/4 tablespoon taco seasoning mix
4 ounces pimientos, drained
4 ounces diced green chilies, drained
1/8 cup finely diced black olives, dried on a paper towel
1 cup shredded quesadilla-style mexican cheese
20 ounces thinly sliced deli smoked chicken
5 -6 large flour tortillas
salsa

Steps:

  • In a medium bowl, mix the first 6 ingredients until everything is well incorporated into the cream cheese.
  • Spread the cream mixture onto a tortilla and top the mixture with a layer of the sliced deli chicken.
  • Roll the tortilla tightly and wrap in plastic wrap.
  • Refrigerate for 2 hours.
  • Remove the rolls from the plastic wrap and cut off the ends. Cut the roll into 1/2" slices.
  • Serve with salsa.
