2 cups freshly brewed espresso, chilled
2 cups orange-flavored vodka (recommended: Stoli Ohrani)
1 cup coffee liqueur (recommended: Kahlua)
8 slices orange peel, twisted

Steps:

  • Fill a cocktail shaker halfway with ice. Add the espresso, vodka, and coffee liqueur. Shake for 30 seconds, or until foamy. Strain into a chilled martini glass and decorate with the orange peel. Serve at once.

1 oz. coffee liquor
1 oz. espresso (or cold brew coffee concentrate)
1/2 oz. simple syrup
Coffee beans, for garnish (optional)

Steps:

  • In a cocktail shaker, one-half full of ice, combine the vodka, coffee liquor, espresso and simple syrup. Shake very well, until a layer of foam develops on the surface of the liquid.
  • Pour into a chilled coupe or martini glass and top with 3 coffee beans to garnish, it desired. Serve immediately.

The espresso martini, made with vodka, coffee liqueur and fresh coffee, has became a global sensation since it was invented in the 1980s by British bartender Dick Bradsell. At the NoMad Bar in Manhattan, it is one of the most popular cocktails on the menu. But Nathan McCarley-O'Neill, the bar director, has put his own stamp on the recipe, including cold brew liqueur, cold brew concentrate and a touch of aquavit. "By using a concentrate, we reduced the amount of water and dilution being added to the cocktail," he said. "This meant that the espresso martini had a distinct freshness to it." For the NoMad drink, Mr. McCarley-O'Neill makes his own concentrate, but for home bartender purposes, a high-quality purchased brand like Stumptown can be substituted. The drops of saline solution - a common trick that cocktail bartenders have been employing for more than a decade - serve to bring out the drink's innate flavors.

3/4 ounce cold brew concentrate, such as Stumptown
3/4 ounce vodka
1/2 ounce aquavit, preferably Linie
Scant 1/2 ounce cane syrup
5 drops saline solution (1 part kosher salt to 100 parts water), or a small dash of kosher salt

Steps:

  • Combine ingredients in a cocktail shaker half filled with ice. Shake until chilled, about 15 seconds. Strain into a chilled coupe glass. No garnish.

15ml Pedro Ximénez sherry
1 tsp sugar syrup, or to taste
30ml hot espresso
5-6 ice cubes
10g coffee beans, plus 3 extra beans to garnish
40ml vodka

Steps:

  • First, make the coffee vodka. Put the coffee beans in a small glass or jug, then top up with the vodka. Cover and leave to steep at room temperature overnight. The next day, strain into a jug, discarding the coffee beans.
  • Pour the coffee vodka into a large cocktail shaker, ideally a Boston-style one. Add the sherry, syrup and espresso.
  • Add the ice, then immediately put the shaker together and shake very hard and fast until the outside of the shaker feels very cold. Open to check the drink - it should be really foamy. If not, continue shaking and check again (see tip, below).
  • Double-strain the cocktail (do this by pouring it through a hawthorne strainer or the built-in strainer, and through a fine sieve) into a chilled coupe or martini glass. Garnish with the extra coffee beans to serve, if you like.

100g golden caster sugar
ice
100ml vodka
50ml freshly brewed espresso coffee
50ml coffee liqueur (we used Kahlua)
4 coffee beans (optional)

Steps:

  • Start by making the sugar syrup. Put the caster sugar in a small pan over a medium heat and pour in 50ml water. Stir, and bring to the boil.
  • Turn off the heat and allow the mixture to cool. Put 2 martini glasses in the fridge to chill.
  • Once the sugar syrup is cold, pour 1 tbsp into a cocktail shaker along with a handful of ice, the vodka, espresso and coffee liqueur. Shake until the outside of the cocktail shaker feels icy cold.
  • Strain into the chilled glasses. Garnish each one with coffee beans if you like.
