PEDAS FROM MATHURA
Mathura is one of the most popular pilgrimage places for the followers of Lord Krishna in India and this sweet dish is very very special out there.

Steps:
- Add saffron in lukewarm milk and leave aside.
- Combine sugar with khoya, mix and then cook over medium heat until the mixture is smooth.
- Add milk in a slow trickle to khoya, stirring continuously and cook till milk is absorbed.
- Repeat the same process till all the milk is used.
- Take off the heat, add rose essence, cardamom powder and chopped pistachio.
- Mix well.
- Now take a little of the mixture and shape it into a round flat peda.
- Make same-sized pedas from the remaining mixture.
- Leave aside to cool thoroughly before serving.

Steps:
- Powder a few cardamom pods and leave a few strands of saffron in warm milk.
- Melt the butter in a heavy bottom cooking pot or pan.
- Stir in the milk powder and keep stirring for about 5 mins on slow flame.
- Add the condensed milk slowly and keep stirring till the mixture thickens the leaves sides of the vessel.
- At this point add cardamom powder and saffron milk.
- Keep stirring again till the milk is absorbed and the mixture starts leaving the sides of the vessel again.
- Switch off the gas and leave the mixture for cooling either in the pan or lay it on a plate.
- When the mixture is easy to handle, prepare Pedas by rolling a chunk of the mixture into a ball first and softly flaten it.
- You can garnish the Pedas the way you desire. I used cookie cutters. You can use almonds/pistachio too.
- Store it in an airtight box.
