- Preheat oven to 400°. Pour 3 tablespoons oil in a 12-inch cast-iron skillet, and place skillet in oven to preheat.
- In a large bowl, whisk together cornmeal, flour, sugar, baking powder, baking soda, and salt. In a medium bowl, whisk together corn, buttermilk, eggs, and remaining ⅓ cup oil. Stir corn mixture into cornmeal mixture just until combined; stir in cheese. Pour batter into hot skillet.
- Bake until a wooden pick inserted in center comes out clean, about 25 minutes. Let cool in pan for 5 minutes; serve warm.

- Swirl the canola oil in the hot cast iron skillet. Pour the batter into the skillet. Bake until the cornbread is golden brown and springs back upon the touch, about 20 minutes.

SWEET CREAMED CORN CASSEROLE RECIPE
This stupid easy Creamed Corn Casserole recipe is made with a store bought Jiffy cornbread mix, and that's not an apology. It is SO good! If you grew up with this Thanksgiving side dish you know what I'm talking about. It is creamy, corny, custardy, and sweet. It's the perfect compliment to a holiday meal, but I also love serving it with a bowl of chili!

- Preheat your oven to 350 degrees F.
- In a 8x8 or 9x9 inch glass pan, add 1/2 cup butter. Put it in the microwave and melt it right in the pan. (If you only have a metal pan, melt it in a bowl and then transfer to the pan.*) Use a spatula or pastry brush to spread the butter up the sides of the pan, so that it doesn't stick while baking.
- Open the can of whole corn kernels and drain. I usually just press the lid down on the corn holding it upside down over the sink. Add the drained corn to the butter in the pan.
- Open the can of creamed corn and dump the whole thing into the pan.
- Add 1 cup sour cream.
- Add 3 tablespoons sugar and 1/2 teaspoon kosher salt (add 1/4 teaspoon if using table salt).
- Add an 8 ounce box of Jiffy cornbread mix.
- Use a spatula to stir it all together until well combined. Scrape down the edges.
- Bake at 350 for about 35-40 minutes. The edges should be turning golden brown and pulling away from the sides. When you shake the pan, the center should not be jiggling more than the edges. You can also use the toothpick test, when a toothpick inserted in the center comes out with no wet batter, it's done.
- Let cool on a wire rack for a couple minutes before serving warm!

(more on this ahead)So, let's dig-in and make some Cornbread!Cornbread is widely eaten with chili con carne and barbecue. This recipe is made in iron skillet which makes it perfect to even bake on BBQ grill.Last weekend I was craving cornbread... And I had plans to make No Bean Chili. Corn bread dunked in chili. OMG, that is outrageous delicious combination. I first had these two together in a Award Wining Chili Restaurant in LA. I clearly remember that day was my birthday. Vishal planned a surprise visit to this Chili Restaurant. One bite of cornbread with spicy chili and I was hooked.Honestly, I don't want to have chili any other way. - Preheat oven at 425 degrees Fahrenheit. Place 10-inch iron skillet in oven while it heats up.
- In a wide bowl, add dry ingredients: all purpose flour, corn meal, salt, sugar, baking powder and baking soda. Whisk or soft to combine everything. Set aside.
- In another wide bowl, add eggs, 1 tbsp oil, sour cream, buttermilk, creamed corn and corn. Whisk well until eggs are well combined.
- Add dried ingredients into the wet and fold to make smooth batter.
- Remove skillet from oven (careful it will be hot). Add a tablespoon of oil in skillet and swirl it around. Add all of the batter, smooth top with spatula. Bake in preheated oven for 24-27 minutes or until tooth pick inserted comes out clean. Bread is golden brown from top and has left sides.
- Brush warm out-of-oven bread with a melted butter. Set aside to cool for 10-15 minutes before serving. Slice, serve, and enjoy!

From Martha's book in 2002. This makes a wonderful 18th Century approprate cornbread. I make it at encampments in a dutch oven. If you are not interested in the historic authenticity, use a boxed mix (like Jiffy) for the dry and sugar in place of the maple syrup. Be sure to test your baking dish for fit inside the dutch oven before heating.

- Preheat the dutch oven in the fire pit by placing embers around and on top. If using an oven preheat to 425 degrees. Butter an 8x8 or 9 inch baking dish.
- Combine the dry ingredents and stir with a fork to airate. Set the bowl aside.
- Whisk together the milk, sour cream, egg, melted butter and syrup. Stir in the corn
- Fold the wet ingredents into the dry until well combined. Do not try to get out all the lumps, you will make the dough tough.
- Turn into the prepared pan and place into the dutch oven. If you are using a home oven place on the middle rack for 30 minutes.
- Carefully add embers around and on top of the oven and bake at least 30 minutes.
- Take the oven from the fire pit and check for doneness with a straw or toothpick. Be careful not to get embers inside when you lift lid.
- Remove from oven and let cool before serving.
