When you accidentally come home with 17 pounds of strawberries from a morning at the pick your own berry patch, you have to do something. And you have to do it fast! I started to can the strawberry jam, but quickly saw that if I continued on the canning path to use up all the strawberries that I'd be up all night. While I did can many jars of strawberry jam, I needed a "quicker" alternative to help us get through all the strawberries. This No Sugar Freezer Jam was the answer!

Number Of Ingredients 3

3 lbs strawberries, hulled and stems removed
1 3/4 cups apple juice
1.5 (3 ounce) packages no sugar pectin (I find that using 1 1/2 packages really gets the jam to set perfectly!) or 1.5 (3 ounce) packages low sugar pectin (I find that using 1 1/2 packages really gets the jam to set perfectly!)

Steps:

  • Mash the strawberries in a large bowl.
  • In a small saucepan, bring the apple juice and pectin to a boil and boil for 1 minute.
  • Pour straight into the mashed strawberries and stir hard for 1 minute.
  • Ladle into the freezer containers and place in the refrigerator overnight to let it cool slowly and set.
  • Then store in the freezer.
  • Good in the freezer for up to 1 year, in the fridge for 3 weeks.

I found this on the web someplace and I tried this one and it came out fine. makes a great sugar free jam, and is delicious as a sauce.Time is guess work... don't know for sure.And serving size of course, is impossible to guess at, so I am guessing at the number of containers, since it depends on the size you use.

2 tablespoons lemon juice
2 tablespoons water
2 cups fresh strawberries, washed & diced or 2 cups fruit, of your choice washed & diced
1 cup sugar substitute (I use splenda)
1 (1 7/8 g) envelope unflavored gelatin
1 1/2 teaspoons cornstarch

Steps:

  • Combine lemon juice, water, gelatin and cornstarch in a saucepan.
  • Heat slowly, stirring constantly, until gelatin and cornstarch dissolves. Add fruit to gelatin mixture.
  • Heat to boiling point over low heat, stirring constantly. Boil berries 3 minutes.
  • (Other fruit may take longer.) Remove from heat and add sugar substitute.
  • Pour into heat proof jars and cover. Let set at room temperature until cooled.
  • Store in refrigerator or freeze.

I have been searching everywhere for a good sugar free strawberry jam recipe...I finally found one...this turned out perfect...You cannot tell the difference. Where it says sugar, I mean Splenda.

4 cups crushed fresh strawberries
1 1/2 cups sugar substitute
1/4 ounce ball fruit jell freezer jam pectin

Steps:

  • Clean and slice up strawberries. Crush. In a big bowl mix splenda and pectin together. Add crushed strawberries. Stir well for 3 minutes. Put into freezer containers leaving 1/2 inch from the top. Let sit 30 minutes. Put on top. Refrigerate or freeze. Enjoy.

Freezer Jam is a great option for fresh berries in the summer. Last year I tried this quick and easy No-Cook Freezer Jam recipes with strawberries, blueberries and peaches, and was pretty please with the results. For more traditional jams, just follow the directions on the pectin packets or use your favorite recipe.

4 cups mashed fruit
1 1/2 cups sugar (the granulated kind for baking) or 1 1/2 cups Splenda sugar substitute (the granulated kind for baking)
5 tablespoons ball brand real fruit instant pectin (Make sure you're using INSTANT pectin for this recipe)

Steps:

  • Wash and mash your fruit - about 2 pounds makes about 4 cups of fruit. If you like your jam with chunks of fruit you can do it by hand with a potato masher, but I just gave it a whirl in my food processor -super easy!
  • In a separate bowl, briskly whisk 1 1/2 cups of sugar and 5 tablespoons of pectin.
  • Add the mashed fruit to the pectin/sugar mixture and stir for 3 minutes making sure to scrape sides and bottom of bowl. (I did all the whisking/mixing in my Kitchen Aid with the whisk attachment - again, super easy!).
  • Pour into clean containers that can freeze (glass jars or plastic freezer containers) and let it set on the counter for 30 minutes before freezing.

1-1/2 cups cold water
1 cup of your jam or jelly
2 Tbsp. sugar

Steps:

  • PREPARE CONTAINERS: Rinse clean plastic containers and lids with boiling water; dry thoroughly.
  • PREPARE PECTIN MIXTURE: Gradually add pectin to water in small (1-qt.) saucepan, stirring constantly. Bring to boil on medium heat; boil 2 min., stirring constantly. Remove from heat.
  • PREPARE TRIAL BATCH: Measure jam or jelly into small bowl. Add sugar; stir 3 min. or until sugar is completely dissolved. Add 1 Tbsp. of the pectin mixture; stir an additional 3 min. Immediately pour into one of the prepared containers. Cover and let stand up to 24 hours before checking to see if set. Meanwhile, store remaining pectin mixture in refrigerator.
  • PREPARE REMAINDER OF BATCH: If Trial Batch sets satisfactorily, prepare remaining jam or jelly, remaking no more than 8 cups of jam or jelly at one time and using same directions as for Trial Batch with the above-listed measures of sugar and pectin mixture for each 1 cup of jam or jelly. Pour into prepared containers. Discard any leftover pectin mixture.

4 cups prepared fruit (about 3 pt. fully ripe red raspberries)
3-1/2 cups sugar, measured into separate bowl
1 box SURE-JELL For Less or No Sugar Needed Recipes Premium Fruit Pectin
1 cup water

Steps:

  • Rinse clean plastic containers and lids with boiling water. Dry thoroughly.
  • Crush raspberries thoroughly, one layer at a time. (Press 1/2 of the pulp through sieve to remove some of the seeds, if desired.) Measure exactly 4 cups crushed raspberries into large bowl.
  • Mix sugar and pectin in large saucepan. Stir in water. Bring to boil on medium-high heat, stirring constantly. Continue boiling and stirring 1 minute. Remove from heat. Add raspberries; stir 1 minute or until well blended.
  • Fill all containers immediately to within 1/2 inch of tops. Wipe off top edges of containers; immediately cover with lids. Let stand at room temperature 24 hours. Jam is now ready to use. Store in refrigerator up to 3 weeks or freeze extra containers up to 1 year. Thaw in refrigerator before using.

1 (1 5/8 ounce) package ball simple creations no cook freezer jam pectin
1 1/2 cups sugar or 1 1/2 cups Splenda granular
4 cups fresh fruit (see NOTE) or 4 cups frozen fruit (see NOTE)

Steps:

  • Stir sugar and contents of package in a bowl until well blended.
