LEMONY PASTA WITH ZUCCHINI AND FRESH HERBS



Lemony Pasta With Zucchini and Fresh Herbs image

This simple pasta comes together quickly and makes use of what can sometimes be an overwhelming bumper crop of zucchini and other summer squash come August. Browning the squash in two batches is the only semi-fussy request, and it pays off by giving the squash an almost crunchy texture. Lemon and an abundance of fresh herbs provide brightness to this soon-to-be summer staple. Serve it with a tomato and onion salad dressed with plenty of grassy olive oil.

Number Of Ingredients 10

1 pound fusilli or other short curvy pasta
1 1/2 pounds zucchini or other summer squash, or a combination, halved lengthwise and cut into 1/2- inch thick pieces
Kosher salt and black pepper
4 tablespoons olive oil
2 garlic cloves, thinly sliced
1/2 teaspoon red-pepper flakes
Juice and zest of 1 lemon
1/2 cup grated Pecorino or grated Parmesan cheese, plus more for serving
1 1/2 cups roughly chopped herbs, such as mint, basil, chervil, Italian parsley, plus more for garnish
Flaky salt, for serving (optional)

Steps:

  • Bring a large pot of well-salted water (2 heaping tablespoons kosher salt to about 7 quarts water) to a boil. Add pasta and cook until it is just under al dente, 1 minute less than package directions. Drain, reserving 1 cup of the pasta cooking water.
  • Meanwhile, prepare the zucchini or other squash: Season chunks with salt and pepper. Heat 3 tablespoons of olive oil in a large skillet over medium heat and add the squash in one layer (you may need to do this in two batches) and cook undisturbed until it begins to turn golden brown, about 3 minutes. Flip and cook 2 to 3 minutes more. Remove from the pan and set aside. Taste and season again, if necessary.
  • Add the remaining 1 tablespoon oil to the pan. Add the garlic and red-pepper flakes and cook until the garlic becomes translucent, about 30 seconds. Add the squash back to the pan along with the lemon juice and half the lemon zest. Toss to combine.
  • Add the pasta to the skillet, and toss to combine. Add 1/2 cup of the pasta water and the grated cheese, and toss until the cheese emulsifies and is silky. If needed, add an additional 1/4 cup pasta water or more to loosen. Add the fresh herbs and toss again. Top with additional herbs and the remaining lemon zest. Serve in bowls, and pass grated cheese at the table. Season with flaky salt, if desired.

No Cook Summer Squash Salad with Lemon and Herbs image

3 medium-small summer squashes, preferably different colors of green, yellow and a mixture
2 teaspoons minced fresh chives
2 tablespoons extra-virgin olive oil
1 lemon
1 to 2 tablespoons chopped fresh tarragon or chervil or a mixture
Kosher salt and freshly ground black pepper
5 shaved slices Parmigiano-Reggiano (about 1 ounce)

Steps:

  • Thinly slice the squash lengthwise on a mandoline. As you slice, lay the slices on a large platter. Once you cover the plate, lightly sprinkle the squash with some chives and about 1 teaspoon olive oil.
  • Cut into the lemon about halfway so you can squeeze the juice but still grate off the zest. Finely grate about 1/4 teaspoon of the lemon zest and squeeze 4 or 5 drops of juice over the squash. Top with a sprinkling of tarragon, about 1 teaspoon. Keep it light because the flavor adds up as you layer the vegetables. Season evenly with salt and pepper. Repeat with the ingredients to make 4 or 5 layers of squash flavored with the herbs, lemon and olive oil. Finish with a nice drizzle of the olive oil and herbs.
  • Set aside to allow the squash to soften slightly, about 30 minutes. Lay the slices of cheese on top. Serve.

Originally a Fine Cooking recipe, this was pointed out to me by Mean Chef and Shelly. It is a fabulous salad that has great presentation. Would be excellent as a side to salmon.

1 garlic clove
kosher salt
1/4 cup fresh lemon juice
1/2 cup olive oil
1 lb summer squash (Yellow, Zucchini or a mix)
fresh ground black pepper
4 cups baby arugula, loosely packed
1/2 cup Italian parsley
1/2 cup chives, cut into 1/2 inch lengths
2 tablespoons capers
1/4 cup parmigiano-reggiano cheese, finely grated, plus a chunk to shave for garnish

Steps:

  • Mash garlic to a paste with a pinch of salt, put in a small bowl and whisk in lemon juice. Let sit for 10 minutes and then whisk in olive oil.
  • Using a mandoline or sharp chef's knife, cut squash into very thin ovals (1/16 inch thick). Put into a medium bowl and toss with 2/3 of the vinaigrette. Season with salt and pepper.
  • Combine Arugula, parsley, chives and capers in a separate bowl, season with salt and pepper, and toss with just enough vinaigrette to lightly coat.
  • Layer about 1/3 of squash in a shallow bowl or platter, scatter 1/3 of arugula mixture on top and sprinkle with 1/3 of the grated Parmesan. Repeat layering two more times.
  • For garnish, shave long strips of Parmesan with a vegetable peeler onto the salad. Serve immediately.

1 zucchini, shaved into thin strips
1 teaspoon salt
2 tablespoons chopped fresh mint

3 slices prosciutto, chopped
¼ cup crumbled feta cheese

Steps:

  • Toss yellow squash and zucchini with salt in a large bowl.
  • Whisk mint, olive oil, lemon juice, lemon zest, and black pepper in a small bowl; pour over squash mixture. Toss to coat.
  • Heat a small nonstick skillet over medium heat; cook and stir prosciutto in the hot skillet until crisp, about 2 minutes.
  • Divide squash salad over 4 plates. Evenly sprinkle prosciutto and feta cheese over salads.
