Ingredients

2 cups sweet potatoes, cooked (peeled)
1 cup Splenda granular
1 cup milk
3 eggs
1 (8 ounce) package reduced-fat cream cheese, softened
1 teaspoon vanilla
1 teaspoon cinnamon
1 teaspoon nutmeg

Steps:

Combine all ingredients in blender; blend well.
Pour into greased (I use olive oil cooking spray) pie pan.
Bake at 350°F for 25 to 30 minutes.

Simple Crustless Sweet Potato Pie image

This recipe is pretty versatile. I used a can of Farmer's Market sweet potato puree, and you can easily swap out for a can of squash puree or pumpkin. Unsweetened soymilk does just fine in this too, I just happened to have vanilla on hand and think that made it a little sweeter.

Ingredients

2 cups sweet potatoes, mashed
3 eggs
1 tablespoon flour
2/3 cup maple syrup (honey and sugar also work)
2 teaspoons vanilla
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ground ginger
1 pinch sea salt
1 cup vanilla soymilk

Steps:

Beat eggs, then the sugar and flour.
Add everything else and beat together.
Grease a 9" pie pan with cooking spray, then pour the mixture inches Bake at 400F for 35-40 minutes.

2 large cooked and peeled sweet potatoes
1 cup brown sugar
1 cup plain yogurt
1/2 cup orange juice
3 large eggs
1 teaspoon vanilla extract
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1 frozen or fresh pie shell

Steps:

Preheat oven 400°F.
Blend skinned potatoes in food processor til smooth.
Mix in all other ingredients.
Pour into pie crust.
Bake approximately 50 minutes (until filling sets and puffs around edges).
Let cool.
Refrigerate 3 hours.
Top with toasted pecan and whip cream.
