This no bake pineapple pie with cool whip is the perfect cool treat!

Steps:
- To make the best no bake pineapple pie recipe, using softened cream cheese or cream cheese at room temperature is best.
- To mix the ingredients well, using an electric mixer or stand mixer is going to work the best.
- If you want to make a homemade graham cracker crust, it's simple and easy to do! Or, if you want to leave out the graham cracker pie crust, you can make it a crustless easy pineapple pie as well.
- If you want to make your own graham cracker crust but don't have enough graham crackers to do so, you can also make a crust using crushed-up nilla wafers as well.
- If all you have is a can of pineapple chunks, chop them up in the food processor and put them in the pie! There's really no wrong way to make this old school recipe.
- Add some pineapple tidbits and maraschino cherries on top to really complete the look!

Steps:
- In a med-large bowl, cream together the softened cream cheese and sugar with an electric mixer on high speed for 3-4 minutes.
- Stir in the slightly drained crushed pineapple, coconut and pecans; mix well.
- Carefully fold in half of the whipped topping, until filling is blended well.
- Reserve the remaining half for top.
- Spoon the filling into prepared crust.
- Chill for several hours before serving.
- NOTE: A alternative, is to fold in the full amount (2 cups) of whipped topping into the filling; this works quite well, and produces an even lighter texture of pie, but, allow more chilling time before serving for this method.
- ALSO: this pie has a better texture, and holds up better and longer if prepared with Cool Whip topping.

BLUEBERRY PINEAPPLE CREAM (NO BAKE)

There's so many goodies in this, you might want to make one all for yourself! This is a sure-fire winner! Refrigerating time is the cooking time. Servings will vary, depending on how large your portions are.

Steps:
- Preheat oven to 350°.
- Toast corn flakes in a 13X9" pan for 8-10 minutes. Be careful not to burn, not all ovens bake the exact same.
- Combine butter and sugar.
- Pour over cereal;stir until evenly coated.
- Press in the 13X9" pan. Refrigerate for 30 minutes.
- In medium saucepan, stir marshmallows and the reserved pineapple juice.
- over low heat until melted. Cool for 10 minutes.
- In large mixing bowl, beat cream cheese until smooth.
- Add marshmallow mixture; beat well.
- Fold in the pineapple and whipped topping; spread half over crust.
- Cover with pie filling, and chill for 30 minute.
- Fold in the pineapple and Cool Whip.
- Pour half of this mixture over the base.
- Spoon blueberry pie filling over the top. Freeze for 2 hours.
- Refrigerate remaining cheese mixture. After 2 hours, spread the cheese mixture over the blueberries.
- Refrigerate.
COOL PINEAPPLE PIE
My sister made this pie for this 4th of July and it was delicious... and sooo easy. She said it actually called for cream cheese, but thought that would be too "heavy" so she subsituted Cool Whip...

- In large bowl combine pineapple and juice with instant vanilla pudding, whisk together until mixed good.
- Add Cool Whip and whisk together, pour into graham cracker pie shell and refrigerate.
- You can garnish with toasted coconut and a cherry-- or just serve as is, either way it's a great summer dessert, light cool and refreshing.
