5-Ingredient No Bake Brownies image

Real food brownies made with dates, walnuts and cocoa powder. Gluten-free, grain-free, dairy-free and vegan!

1 1/2 cup walnuts + extra for topping*
2 cups pitted medjool dates
4 Tablespoons cacao (or cocoa powder)
1 teaspoon vanilla extra
1/2 teaspoon sea salt
1 Tablespoon chocolate chips or dark chocolate (melted with 1/2 teaspoon coconut oil (optional))

Steps:

  • Add walnuts, dates, walnuts, cacao powder, vanilla, and salt in a food processor. Process until completely mixture is well combined and sticking together. If the mixture isn't sticking together well, add a little water starting with 1-2 teaspoons. Process again and add more water if needed. The amount of water needed will vary based on the dryness of your dates.
  • Line a dish loaf pan with parchment paper. Transfer brownie batter from the food processor to the loaf pan and press dough firmly into dish with your hands until dough is evenly distributed. I like covering the exposed dough with extra parchment while doing this to keep my hands from sticking.
  • Once dough is evenly distributed, press pieces of walnuts into the top of the brownies. If you want a chocolate drizzle, melt chocolate chips with coconut oil and drizzle over brownies.
  • Place loaf pan in the fridge to allow the brownies (and chocolate drizzle) to set up for 20-30 minutes. Remove from fridge, cut into 8 pieces and enjoy. Store any leftovers in the fridge.

19 graham crackers, finely crushed (about 2-1/2 cups crumbs)
2 cups JET-PUFFED Miniature Marshmallows
1 cup chopped walnuts
1-1/2 pkg. (4 oz. each) BAKER'S Semi-Sweet Chocolate (6 oz.), broken into pieces
1 cup canned evaporated milk
1/2 cup light corn syrup
1/4 tsp. salt
1 Tbsp. margarine or butter
1 Tbsp. vanilla

Steps:

  • Mix crumbs, marshmallows and walnuts in large bowl; set aside.
  • Combine chocolate, evaporated milk, corn syrup and salt in large saucepan. Cook on low heat until chocolate is completely melted, stirring frequently. Increase heat to medium. Bring to full rolling boil, stirring constantly. Boil 10 minutes, stirring constantly. Remove from heat. Add margarine and vanilla; stir until margarine is completely melted.
  • Add to crumb mixture; mix well. Spread into greased 9-inch square pan. Refrigerate 3 hours or until set. Cut into 24 bars.

3/4 cup crushed vanilla wafers (about 20 wafers)

1/4 cup confectioners' sugar
1/4 cup chopped pecans or walnuts

Steps:

  • In a microwave-safe bowl, melt chocolate chips with 1/4 cup milk; stir until smooth. Transfer 2 tablespoons to another bowl; stir in remaining milk and set aside for topping. , In a small bowl, combine the crushed vanilla wafers, marshmallows, confectioners' sugar and pecans; beat in remaining chocolate mixture. Press into a 5-3/4x3x2-in. loaf pan coated with cooking spray. Spread with reserved chocolate mixture. Cover and refrigerate for 1-2 hours or until firm. Cut into bars.

Steps:

  • Preheat oven to 350°. Combine cracker crumbs, sugar and cinnamon. Stir in melted butter. Press onto bottom of an ungreased 13x9-in. baking pan. Bake until lightly browned, 7-9 minutes. Cool on a wire rack., For brownies, melt unsweetened chocolate on high in a microwave, stirring every 30 seconds. Cool slightly. Cream butter and sugar on medium speed until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition; beat in melted chocolate and vanilla. In another bowl, whisk together flour, cocoa, baking powder and salt; stir into creamed mixture. Fold in 1 cup miniature marshmallows. , Spread batter over graham cracker crust. Top with 1 cup marshmallows and broken graham crackers. Bake until center is set, 18-22 minutes (do not overbake).

Nonstick cooking spray
1 cup graham cracker crumbs (from 8 to 10 whole graham crackers)
1/2 cup finely chopped roasted hazelnuts
1/4 cup cocoa powder
1/2 teaspoon coarse salt
3/4 cup sweetened condensed milk
4 ounces bittersweet chocolate

Steps:

  • Coat an 8-inch square baking pan with cooking spray and line with parchment paper, leaving a 2-inch overhang on all sides.
  • In a large bowl, mix together the graham cracker crumbs, hazelnuts, cocoa, and salt. Stir in the condensed milk. Place bittersweet chocolate in a medium bowl and set over a pot of barely simmering water until chocolate is melted, about 4 minutes.
  • Stir chocolate into graham cracker mixture until combined. Scrape mixture into prepared pan. Cover mixture with a piece of plastic wrap and press firmly into the pan. Chill until firm enough to cut, at least 1 hour.
  • Lift the parchment paper to remove brownies from pan. Cut into 16 small squares. Store brownies in an airtight container in the refrigerator for up to 5 days.
