15 oz. chickpeas (drained and rinsed (1 can))
5 oz. albacore or skipjack tuna (liquid drained (1 can))
1 cup grape tomatoes (sliced)
1/3 cup cucumber (sliced)
2 tbsp red onion (sliced or diced)
2 tbsp feta cheese
1 tsp fresh parsley (chopped)
3 tbsp lemon juice (or more to taste)
2 tbsp olive oil
salt and pepper to taste

Steps:

  • Place all ingredients into a bowl and toss to combine. Adjust lemon juice, salt and pepper as needed.
  • Enjoy!

An easy Chickpea Tuna Salad that's filled with bright flavor and fresh ingredients like tomatoes and bell pepper. Canned tuna has never been so delicious!

1/2 small red onion (thinly sliced, about 1/2 cup)
1 15-ounce can reduced sodium chickpeas, rinsed and drained
1 pint cherry or grape tomatoes ( halved)
1 large seedless English cucumber (halved lengthwise and cut into 1/4-inch slices (I leave the peel on))
1 red bell pepper (cored and cut into 1/4 inch strips, then cut into halves (or thirds if very long))
12 ounces solid pack albacore tuna in water (wild caught if possible)
3 cups arugula
1/4 cup parsley (finely chopped)
1/4 cup Feta Cheese
1/4 cup freshly squeezed lemon juice (from about 1 large lemon)
3 tablespoons extra virgin olive oil
2 cloves garlic (minced (about 2 teaspoons))
1 teaspoon kosher salt
1/2 teaspoon ground black pepper

Steps:

  • Place the red onion in a small bowl and cover with cold water. Let sit while you prepare the rest of the salad (this preserves its flavor but takes off some of the harshness...and the continual red onion after taste).
  • To a large mixing bowl, add the chickpeas, tomatoes, cucumber, onions, and bell pepper. Drain the tuna and flake into the bowl. Add the arugula.
  • Prepare the dressing: In a small bowl or measuring cup, stir together the lemon juice, olive oil, garlic, salt and pepper. (You can also shake them all together in a mason jar with a tight fitting lid). Drizzle enough over the salad to moisten it, then toss to coat. Sprinkle the feta and parsley over the top, then toss lightly again. Taste and add additional salt, pepper, or dressing as desired. Enjoy!

2 tablespoons lemon juice
1 tablespoon nonpareil capers, rinsed and chopped
1 tablespoon finely chopped shallot
¼ teaspoon salt
¼ teaspoon ground pepper
1 (15 ounce) can no-salt-added chickpeas, rinsed
1 (6.7 ounce) jar oil-packed tuna, drained
1 cup halved cherry tomatoes
1 cup thinly sliced English cucumber
½ cup crumbled feta cheese
2 tablespoons chopped fresh dill
3 tablespoons extra-virgin olive oil
3 cups baby spinach

Steps:

  • Stir lemon juice, capers, shallot, salt and pepper together in a large bowl. Let stand for 5 minutes.
  • Meanwhile, toss chickpeas, tuna, tomatoes, cucumber, feta and dill together in a large bowl.
  • Whisk oil into the lemon juice mixture until fully incorporated. Spoon about 5 tablespoons of the dressing into the chickpea mixture; toss to coat.
  • Add spinach to the remaining dressing in the large bowl; toss to coat. Divide the spinach evenly among 4 plates; top each plate with 1 1/4 cups chickpea mixture. Serve immediately.

My boyfriend and I came up with this while trying to figure out a good recipe for this contest. A perfect summer snack, light lunch or guest appetizer. You may want to cut up the tomato, onion and bell pepper into chunks to make blending easy but it is not necessary. A teaspoon of lemon juice and tabasco sauce can be added for zing. Prep time varys depending on whether you are cutting up the veggies or not. My family enjoyed this very much with lettuce and stuffed in a tortilla. Very easy to make and very good! :)

I liked it more oniony so I added a little extra minced onion, but it's still wonderful without it. I enjoyed this the most stuffed in pita bread with slices of ripe plum tomatoes, and also would serve it often on crackers as a snack or appetizer.
