NO-BAKE FUDGY SNOW BALLS
These No-Bake Fudgy Snow Balls are made with dates, almonds and cocoa powder, no oil or butter, and no baking required!

Steps:
- Add almonds to your food processor and pulse until ground.
- Add dates, cocoa powder, honey, and water. Mix until it forms a sticky mass. If it seems too dry, add a little water, 1 tsp at a time.
- Wash hands and using damp hands (keep sink running) measure 1 tbsp and roll into a ball with the dough. Set balls on parchment paper.
- Put confectioner's sugar in a bowl.
- Roll balls in your hand and then roll in sugar.
- Can be stored in the fridge for up to a week.

NO BAKE SNOWBALLS
When I make these, they always bring me back to my childhood. They are perfect to make with children. Keep them in the freezer for the chewy texture or room temperature for soft melting texture. Either way they are sooo yummy!! This is a Christmas favorite!

Steps:
- In a sauce pan, bring sugar, cocoa and milk to a boil. Add in butter and remove from heat.
- Stir in 1 cup sweetened coconut and oats. Chill for 30 minutes or cool to touch.
- Shape into 1 inch balls and roll in 1 cup unsweetened coconut and store in freezer.
- Its better to eat them from the freezer in my opinion. If you serve them thawed its too soft for my liking =) Try both ways and see what you like!

- 1 Grease 8-inch square baking pan or line with foil.
- 2 In a medium saucepan over low heat, combine the sweetened milk and chocolate; cook and stir just until boiling. Reduce heat; cook and stir for 2-3 minutes or until mixture thickens.
- 3 Remove from heat and stir in vanilla.
- 4 Stir in 2 cups of cookie crumbs. Spread evenly in prepared pan. Sprinkle with remaining cookie crumbs and sprinkles or nuts; press down gently with a spatula.

Wonderful little treats, great to take to potlucks (they travel well). I have made these without using the dried fruit, and just with raisins, and they are still wonderful, but even better with the dried fruit!

Steps:
- Combine butter, sugar and salt in a saucepan over medium heat; bring to a boil, cook 4-5 minutes, stirring constantly (start timing when mixture starts to bubble around the edges of pan).
- Remove from heat; add marshmallows, chocolate chips, vanilla, walnuts, raisins and candied pineapple OR apricots.
- Stir vigorously for 1 minute (until marshmallows melt and are blended), working quickly, drop by teaspoonfuls onto waxed paper.
- Store in an airtight covered container, in the fridge or out of the fridge.
