Easy No-Bake Cranberry Cheesecake is delicious and loaded with fresh cranberries and luscious cream cheese. With its festive appearance, It's a perfect make-ahead holiday dessert!

2 cups fresh or frozen cranberries
⅓ cup granulated sugar
1 tablespoon cornstarch
1½ cups graham cracker crumbs
1 tablespoon granulated sugar
½ cup unsalted butter (melted)
¼ teaspoon kosher salt
16 ounces cream cheese (softened or at room temperature)
14 ounces sweetened condensed milk
1 tablespoon vanilla extract
¼ cup fresh lemon juice

Steps:

  • Combine the sugar and cornstarch in a small saucepan. Mix well. Add ½ cup plus two tablespoons of cold water and the cranberries and place the pan over medium heat. Stir to combine.
  • Bring the cranberry mixture to a boil and reduce the heat to low. Simmer for 10 minutes, remove the pan from the heat, and set aside to cool.
  • Combine the graham cracker crumbs, sugar, salt, and butter in a large bowl. Mix to combine.
  • Press the graham cracker mixture into the bottom and up the sides of a nine-inch springform pan. Place the pan in the refrigerator to chill while you make the cheesecake filling.
  • Add the cream cheese to a large bowl and beat with an electric mixer for a few minutes or until it is smooth, light, and fluffy. Add the sweetened condensed milk, vanilla extract, and lemon juice and beat until the mixture is smooth with no lumps.
  • To assemble, pour the cream cheese mixture into the pie crust. Smooth out with an offset spatula. Top with the cranberry mixture and spread the topping out evenly.
  • Cover and refrigerate the cheesecake for at least four hours to give the filling time to firm up. Before serving, unhinge the clasp on the springform pan and carefully lift off the sides.

1/4 cup pecan halves, chopped
3 cups fresh cranberries
1/2 cup granulated sugar
1/4 cup water
1 tub (24.3 oz.) PHILADELPHIA No Bake Cheesecake Filling Original
1 ready-to-use graham cracker crumb crust (6 oz.)

Steps:

  • Combine flour and brown sugar in medium microwaveable bowl. Cut in butter with pastry blender or 2 knives until mixture resembles coarse crumbs. Microwave on HIGH 3 min., stirring after each minute. Microwave additional 1 to 2 min. or until crumb mixture is crisp and golden brown, stirring every 30 sec. Add nuts; mix well. Spread onto large plate; cool.
  • Meanwhile, microwave cranberries, granulated sugar and water in large microwaveable bowl 3 min.; stir. Microwave additional 2 min. or until sugar is completely dissolved, stirring after each minute. Continue to microwave 3 min. or until thickened; stir. Spoon into serving bowl. Cool slightly.
  • Spoon cheesecake filling into crust.
  • Serve topped with warm cranberry sauce and crumb mixture.

1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1/3 cup sugar
1 tub (8 oz.) COOL WHIP Whipped Topping
1/4 cup cooked cranberries (see tip)

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the mini phyllo shells on a baking sheet and bake for 3 minutes. Remove and set aside to cool.
  • In a large mixing bowl beat cream cheese and sugar with whisk or mixer until blended. Stir in whipped topping.
  • Spoon cream cheese mixture into a piping bag or large zip top plastic bag. If using plastic bag, cut the tip off. Fill each mini phyllo shell with the cheesecake mixture and top with one cooked cranberry.
  • Refrigerate them for 3 hours.

2 tablespoons margarine, melted
2 cups unblemished cranberries, rinsed and drained
2/3 cup water
2/3 cup sugar
1 tablespoon unflavored gelatin, dissolved in
1/4 cup cold water
8 ounces light cream cheese, softened
3/4 cup light ricotta cheese
1 teaspoon vanilla

Steps:

  • To make crust, mix crumbs and margarine together thoroughly and press into an 8 or 9 inch pie pan. Set aside.
  • To make filling, put cranberries, water and sugar into a saucepan, heat to boiling, then cook at a boil for 10 minutes, stirring occasionally.
  • Remove from heat and add gelatin mixture, stirring until dissolved.
  • Add cream cheese, ricotta and vanilla, mixing well until blended. Some of the cranberries will break up.
  • Pour filling into crust and refrigerate until firm, approximately 3-4 hours.
  • Garnish, if you wish, with cranberries.
