3 pounds bone-in, skin-on chicken breast halves
Coarse salt and ground pepper
5 garlic cloves, unpeeled
2 jars (16 ounces each) medium green salsa
3/4 cup heavy cream
12 corn tortillas (6-inch)
12 ounces Monterey Jack cheese, coarsely shredded (3 cups)
1/2 cup fresh cilantro, chopped (optional)

Steps:

  • Preheat oven to 450 degrees. Season chicken with salt and pepper; place with garlic on a rimmed baking sheet. Bake until an instant-read thermometer inserted in thickest part of breast (avoiding bone) registers 165 degrees, 25 to 30 minutes. Meanwhile, in a large bowl, combine salsa and cream.
  • Reduce oven temperature to 350 degrees. Once chicken is cool enough to handle, shred meat, discarding skin and bones. Peel and chop garlic. In a large bowl, combine chicken, garlic, and 1/2 cup salsa mixture.
  • Stack tortillas flat, and wrap in damp paper towels; microwave on high for 1 minute to soften. Working with one tortilla at a time, dip in salsa mixture, lay flat, and fill with 1/3 cup chicken mixture. Roll up and arrange, seam side down, 8 enchiladas lengthwise and 4 crosswise in a 9-by-13-inch baking dish. Top with remaining salsa mixture, then cheese.
  • Bake until cheese is browned and salsa is bubbling, 40 to 45 minutes; let rest 10 minutes. Serve, sprinkled with cilantro, if desired.

½ cup chopped onion
1 jalapeno pepper, coarsely chopped
1 teaspoon minced garlic
3 green tomatoes, coarsely chopped
4 tomatillos, husked and chopped
3 avocados, chopped
1 tablespoon water, or as needed
1 ½ cups sour cream, at room temperature
¼ bunch fresh cilantro, chopped
1 teaspoon salt

Steps:

  • Heat oil in a large saucepan over medium heat; cook and stir onion, jalapeno pepper, and garlic until onion is softened, 5 to 10 minutes. Add tomatoes, tomatillos, avocado, and water to onion mixture; bring to a boil. Reduce heat and simmer until tomatoes are softened and liquid has evaporated, about 15 minutes. Remove saucepan from heat and cool slightly.
  • Blend tomato mixture, sour cream, cilantro, and salt together in a food processor or blender, working in batches if necessary, until sauce is smooth.

1 large avocado (pitted and skin removed)
1/2 cup parsley (leaves and stems, packed)
1/2 cup cilantro (leaves and stems, packed)
1 jalapeno (seeds and ribs removed (keep if you want spicy))
2 garlic cloves
1 tablespoon lime juice
1/2 cup water
1/2 cup olive oil
1 teaspoon kosher salt
2/3 cup roasted pistachios (See notes)

Steps:

  • Add all of the ingredients to a food processor bowl. Pulse until smooth.
  • Use this sauce on chicken, pasta, zucchini noodles, chip dip (it's a bit guacamole-esk), with falafel, or whatever you'd like.

Low-fat milk, flavored with aromatics, and chicken broth thickened with a bit of flour make a creamy but light sauce that satisfies.

3 shallots, thinly sliced
1 tablespoon olive oil
Kosher salt and freshly ground black pepper
2 tablespoons dry bread crumbs
3 cups low-fat (1 percent) milk
4 sprigs fresh thyme
3 dried bay leaves
1 1/2 teaspoons whole black peppercorns
1 1/2 pounds green beans, trimmed and halved
6 ounces white mushrooms, quartered, 2 cups
1 1/2 cup low-sodium chicken broth
1/4 cup flour
Pinch freshly grated nutmeg

Steps:

  • Preheat the oven to 375 degrees F. Lightly mist a 2-quart baking dish with cooking spray. Toss the shallots with the oil and salt and pepper on a baking sheet, spread in a single layer, and bake until golden and crispy, stirring 3 to 4 times, about 20 minutes. Remove from the oven and immediately sprinkle the breadcrumbs over the shallots and toss well. Set aside to cool.
  • Meanwhile, in a small pot combine the milk, thyme, bay leaves and peppercorns and bring to a simmer. Turn the heat off and let steep for 20 minutes. Bring a large pot of salted water to a boil. Add the beans and cook until bright green and crisp tender, about 6 to 8 minutes. Drain well and run briefly under cold water. Drain again and set aside.
  • Strain the milk into a large skillet, add the mushrooms and season with salt and pepper. Bring to a simmer over medium heat and cook until the mushrooms have softened, 10 to 15 minutes. Stir the broth and flour together and pour into the skillet; cook, stirring, until the sauce thickens, 6 to 8 minutes. Remove from the heat and add the beans and nutmeg. Toss until the beans are well coated in the sauce and transfer to the baking dish. Scatter with the shallots and bake until the sauce is bubbly and the shallots are crisp, about 20 minutes. Let stand 10 minutes before serving.
