All you need are four easy-to-find ingredients and a decent sweet tooth - we know you've got it all. It's never not the time to throw together this quick and easy dessert that's perfect for entertaining or even just for yourself!

½ cup melted butter, melted
1 ½ cups peanut butter
2 ½ cups powdered sugar
1 cup chocolate chips, enough for dipping

Steps:

  • Mix butter, peanut butter, and powdered sugar until well blended. More or less powdered sugar can be used to make mixture more or less dry.
  • Make 1 inch balls and freeze for about 20 minutes or until firm.
  • Microwave chocolate chips for 60 seconds, stopping every 15 seconds to check and stir. Adding some vegetable shortening can make the chocolate thinner and easier work with.
  • Remove balls from freezer and dip most of the way into the chocolate, coating all but a small circle on top. Using a toothpick for this works well but simply dipping it in and pulling it out with a fork also works. Place completed buckeyes on wax paper and allow to harden. Refrigerate if needed.
  • Enjoy!

2 cups creamy peanut butter
3 cups powdered sugar
3 cups crispy rice cereal, more for garnish
2 cups chocolate chunk, preferably dark, for coating

Steps:

  • In a large microwave-safe bowl, add the butter and peanut butter. Microwave for 1 minute.
  • Using a fork, stir together the melted butter and peanut butter until smooth. Microwave additional 20 seconds, as needed.
  • Add the powdered sugar and rice cereal to the bowl. Gently mix together until fully incorporated.
  • Using your hands, roll the mixture into approximately 30-40 1-inch balls (2 ½ cm). Place them on a wax paper-lined baking sheet and freeze for 15 minutes.
  • In a small microwave-safe bowl, add the chocolate chunks. Microwave for 60-75 seconds, stopping to check and stir every 30 seconds.
  • Drop the frozen balls in the melted chocolate one at a time, use a fork to roll around to ensure an even coating. Place back on a wax paper-lined baking sheet.
  • Garnish with additional rice cereal while the chocolate is still warm. Chill until the chocolate has set.

2 cups sugar
1/2 cup butter or margarine, cubed
1/2 cup 2% milk
3 tablespoons baking cocoa
Dash salt
1/2 cup creamy peanut butter
1 teaspoon vanilla extract
3 cups old-fashioned oats

Steps:

  • In a large saucepan, combine the first 5 ingredients. Bring to a boil, stirring constantly. Cook and stir 3 minutes., Remove from heat; stir in peanut butter and vanilla until blended. 1 cup almond flour
⅓ cup honey
1 teaspoon vanilla extract
¾ cup dark chocolate chip

Steps:

  • NOTE: For this recipe, be sure to use a no-stir, all-natural peanut butter. Using a natural peanut butter that separates may cause the ball mixture to be too loose.
  • In a medium bowl, add together the peanut butter, almond flour, honey, and vanilla extract.
  • Mix until the mixture thickens and sticks together.
  • Roll the mixture into balls half an inch (1 ¼ cm) in diameter.
  • In a small bowl, melt the dark chocolate chips in the microwave no more than 15 seconds at a time.

These are one of my family favorites.

Number Of Ingredients 6

(1) 18oz jar(s) of smooth or chunky peanut buter - i prefer smooth
(1) 16oz bag(s) of confectioners sugar
1/4 c butter, melted
chocolate almond bark or
chocolate candy melts or
12 oz semi-sweet chocolate chips

Steps:

  • 1. In a large bowl, stir together the peanut butter, confectioners sugar and melted butter until the mixture is crumbly. For the next step, the best way that I've found to make a smooth filling is to use your hands to mix everything together.
  • 2. Line a baking sheet with foil. Roll the peanut butter filling into 1 inch balls and line the baking sheet with rows of the balls. Set the baking sheet in the freezer for 5-7 minutes to chill the peanut butter balls for easier dipping.
  • 3. While the peanut butter balls are chilling, melt the chocolate in the microwave in a microwave safe bowl that is deep enough for dipping. I melted 6 blocks of chocolate almond bark at a time, stirring at 45 second intervals until smooth.
  • 4. Remove the baking sheet from the freezer. Insert a toothpick or wooden skewer into a peanut butter ball and then dip it into the chocolate, turning quickly to cover the entire candy.
  • 5. Place onto a second baking tray that has also been lined with foil. Swirl the chocolate on the top of each candy for a pretty design. Refrigerate until the chocolate had completely dried. Store the candies in a sealed container in the refrigerator.

1 cup powdered sugar
1 cup peanut butter, plus an additional 2 Tbsp.
1 cup semi-sweet chocolate chips

Steps:

  • In a bowl, combine the graham cracker, sugar, and butter. Stir. Add in 1 cup (240g) of peanut butter and mix until combined.
  • Line a 9x9 (22x22 cm) or 8x8 (20x20 cm) pan with foil.
  • Spread on the peanut butter mixture.
  • Melt the chocolate chips with the 2 Tbsp. of peanut butter, and spread on top of the graham cracker mixture.
  • Refrigerate for 3 hours.
  • Remove from pan, cut, and serve.
  • Enjoy!

1 cup dry roasted salted peanut
1 1/2 cups creamy peanut butter
1/2 cup butter, softened
1 teaspoon vanilla extract
1 (1 lb) box confectioners' sugar
2 cups chocolate chips
2 cups peanut butter chips
2 tablespoons butter

Steps:

  • Place peanuts into bowl of food processor fitted with metal blade attachment.
  • Pulse peanuts until finely chopped.
  • Remove and place into small bowl.
  • Place peanut butter and butter into large bowl.
  • With hand-held electric mixer, beat until completely smooth.
  • Add vanilla and beat, scraping down sides of bowl with rubber spatula as necessary.
  • Slowly add confectioners' sugar and beat until combined.
  • The mixture should be thick.
  • Line baking sheet with waxed paper.
  • Roll peanut butter mixture into 1-inch balls.
  • When they are rolled, cover sheet pan with plastic wrap and place into refrigerator for at least 1 hour.
  • Meanwhile, place chocolate-peanut butter chips and unsalted butter into bowl and melt according to directions.
  • Poke toothpick into center of each ball and dip into melted chocolate using spoon to drizzle over top of peanut butter ball, if necessary.
  • Coat entire ball.
  • Place on baking sheet and immediately sprinkle chopped peanuts over top.
  • Place in refrigerator to harden.
  • Remove toothpicks before serving.
