Pressure cooking artichokes has never been easier! Using a Ninja Foodi or pressure cooker equivalent, this method of cooking artichokes will leave you with tender soft artichoke leaves perfect to dip into garlic butter or mayo curry. Enjoy this low carb, keto friendly and deliciously vegetable any time. A perfect vegetable side dish, to serve with steak, or simply eat alone. Once you understand the ease of making foolproof artichokes, never buy a canned artichoke again! Serve pressure cooked artichoke leaves with garlic butter or an aioli for a seriously surprisingly amazing dish.

2 whole garlic cloves
1 tablespoon white vinegar
1 cup of water
lemon pepper seasoning (optional)
2 whole artichokes (stems trimmed)

Steps:

  • Ninja Foodi Artichokes
  • First add 1 cup of water and 1 tablespoon vinegar to your Ninja Foodi inner ceramic pot.
  • Now place your black Cook & Crisp pot inside the ceramic pot.
  • Place both artichokes into black Cook & Crisp basket.
  • Sprinkle artichokes with lemon pepper seasoning (or garlic salt) on the top of the leaves.
  • Place 2 whole garlic cloves next to the artichokes inside the Cook & Crisp basket.
  • Close lid and seal.
  • Set pressure cooker on PRESSURE, HIGH, 10 Minutes.
  • Once time is up, natural release pressure cooker for 8 minutes more before quick releasing and opening up.
  • Remove artichokes carefully with tongs.
  • Once cooled enough to eat, you can peel the artichoke leaves off, dip into garlic butter or mayo curry and enjoy!

2-4 Artichokes
1 ¾ sticks Butter (1/4 pound sticks)
2 tbsp Garlic (Minced)
1 cup Water

Steps:

  • Trim artichoke leaves and stem. Using kitchen scissors, trim the top 1/4 of each artichoke leaf removing the pointy end. Trim artichoke stem using kitchen knife until it is 1 inch long.
  • Make compound butter by mixing 1 stick of softened butter and 2 tablespoons of minced garlic.
  • Fill and top artichokes with compound butter by smearing the butter on the top of the artichoke and pulling butter into leaves with spatula.
  • Place trivet into Ninja Foodi.
  • Add 1 cup of water.
  • Place artichokes on trivet, stem side down.
  • Cover and seal Ninja Foodi Turn vent to sealing position.
  • Pressure cook on high for 13 minutes.. Timing will vary based on the size of artichokes. If you like your artichokes very soft, add an additional 2 minutes to the cook times below.Extra Large-15 minutesLarge-12 MinutesMedium- 10 minutesSmall- 5 minutes
  • When timer goes off, carefully turn vent to release position. Quick release until steam no longer comes from the Ninja Foodi.
  • Open Ninja Foodi.
  • Remove artichokes and serve with 3 tablespoons of melted butter.

8 ounces cream cheese, reduced-fat
4 ounces parmesan cheese
2 garlic cloves, peeled
1/2 teaspoon salt
1/2 teaspoon black pepper, ground
1 cup artichoke heart, canned, drained
10 ounces spinach, frozen, thawed

Steps:

  • Place all ingreedients in the Mini Master Prep Bowl, artichokes and spinach on top. Secure the top and pulse 5-7 times until combined, but chunky.
  • Carefully remove blades from Mini Master Prep Bowl and microwave dip for 2 minutes, stirring halfway through.
  • Serve as hot dip for tortilla chips, granished with a whole artichoke heart and grated or shredded Parmesan cheese.
  • BOB'S TIPS:Make your own flour tortilla chips for dipping by frying fresh tortillas in a lightly buttered pan until golden brown. While traditionally served hot, this dop works just fine cold as well -- simply skip the microwave.
