NINJA FOODI RECIPE: CRISPY PORK CARNITAS
These Crispy Pork Carnitas are made in the Ninja Foodi in less than 1 hour. Pressure cook them to tender and crisp them up all in one device.

- Place pork, salt, oregano, and cumin in Ninja Foodi pressure cook insert. Combine making sure the seasonings are covering the pork.
- Take the orange and squeeze the juices over the pork. Put the squeezed orange in the insert, along with the onion, garlic cloves, and ½ cup chicken broth.
- Cover the Ninja Foodi with the pressure cooker cover, ensuring the valve is set to seal. Set the Ninja Foodi to High Pressure and cook for 20 minutes.
- Once the 20 minute timer is complete, do a quick release by switching the valve to vent. Once all the pressure is released, open the lid and remove the orange, onion, and garlic cloves.
- Set the Ninja Foodi to satué and select md:hi. The liquid will begin to simmer. Allow the liquid to cook until it reduces, about 10-15 minutes.
- Once the majority of the liquid has reduced, press stop on the Ninja Foodi and then close the Ninja Foodi Air Crisp lid.
- Select Broil and adjust the time to 8 minutes.
- Once complete, use the crispy delicious meat in tacos, bowls, sandwiches, wraps, etc. Top with cilantro or any of your favorite toppings.

- Peel and dice your carrots, Clean, and dice your celery. Load them into the Ninja cooking pot along with your seasonings and stir.
- Pour in apple cider and then place the pork tenderloin over. Pressure cook for 5 minutes, followed by another 5 minutes of natural pressure release.
- After manually releasing the pressure remove the liquid and put to one side. Place the air fryer basket in and add your pork tenderloin, along with sliced and peeled apple.
- Air fry for 10 minutes at 200c/400f before serving.

NINFA'S FRIED PORK
I found this recipe in my mom's newspaper clipping collection, and know that from having seen various other Ninfa's recipes online that it would be greatly appreciated if posted. :) So, here it is - I hope you enjoy it!

Steps:
- Trim pork butt of most of the fat and then cut into 1-inch cubes- they can be a bit smaller, if you like, but no larger.
- In a bowl, mix together the flour, salt, pepper, and paprika; pour mixture into a shallow pan.
- Dredge the pork cubes in the flour mixture (putting all the flour mixture into a Ziplock and then the meat and shaking it thoroughly can work really well, too), patting it well into the meat; try to get all of the flour mixture onto the meat.
- Using a heavy skillet over high heat, heat the lard until it is smoking hot.
- With tongs, carefully place the pork cubes into the hot lard piece by piece (take care that it doesn't splatter);; cook, turning frequently, until browned evenly, about 4 to 5 minutes.
- Place paper towels or napkins on a plate, remove the cubed meat from the lard and put on the towels, then cover with another towel and pat so that the extra oil is absorbed.
- Transfer the drained pork to a serving dish covered decoratively with lettuce leaves.
- Serve with bowls of sour cream and Ninfa's Green Sauce (check the RecipeZaar database, there's at least one version posted), so that dinner guests can dip the pork cubes in either or both; make sure to have plenty of warmed, buttered tortillas nearby, too!
