SWORDFISH WITH BLOOD-ORANGE STUFFING

Steps:
- In a small skillet over medium heat, combine 1 tablespoon olive oil and the onions, and sauté until tender. Scrape the onions into a large bowl, and add the bread crumbs, pine nuts, raisins and cheese. Finely grate the zest from the oranges and add to the bread crumbs. Squeeze in the juice of 1 orange (reserve remaining oranges for other use). Mix until it just starts to bind together. Season with salt and pepper.
- Form a portion of the stuffing into a log about the width and length of a thumb, and then roll into a piece of swordfish. Repeat to make 12 rolls.
- To serve, heat a large sauté pan over medium-high heat. Add just enough olive oil to coat the bottom of the pan. Season the swordfish rolls with a touch of salt and pepper, then add to the pan in batches, turning once or twice so all sides of the rolls are lightly browned. If desired, serve with mâche salad dressed with a vinaigrette of shallots, zinfandel vinegar and blood-orange-infused olive oil.

- Combine ingredients in a large heavy saucepan. Place over medium heat and cook without stirring until mixture boils, 15 to 20 minutes. Briefly remove from heat.
- Reduce heat to low and cook, stirring frequently with a wooden spoon, 45 minutes to one hour. When mixture becomes a caramel color and is thick enough that you can see the bottom of the pan as you stir, remove it from heat. Use at room temperature or cover and refrigerate.

- Put the sugar in a large saucepan. Turn the heat to a medium temperature and carefully melt the sugar. Gently tilt the pan as the sugar melts, rather than stirring, as it will adhere to a spoon or spatula.
- When the sugar is melted, add the butter and stir into the sugar. It will bubble, so take care. Next, add the milk a little at a time, stirring continuously.
- Finally, add the can of condensed milk and stir well until it is fully incorporated. Keep stirring as the dulce de leche bubbles and thickens over a medium heat. It will need a further 5-10 mins of cooking. It will turn a darker shade of brown and take on a slight orange-red hue as it darkens. It should be thick enough to leave a clear channel in the pan when a spoon is run through and then add a pinch of salt. It will firm up as it cools. The dulce de leche can be stored in a jar in the fridge and will keep for up to a month. If not storing in a jar ensure it's covered so a skin doesn't form.

- In a large, sterilized container, combine the sugar mixture, grappa and orange. Cover and allow to sit in a cool, dark place for 1 month. Strain into sterilized bottles and seal with sterilized corks or caps.

BURNT ORANGES WITH ROSEMARY

- Place oranges cut-side up on a plate and sprinkle rosemary on top, pressing it into oranges so it adheres. Sprinkle with 1/4 cup sugar.
- On a grill or stovetop, put a 12-inch cast iron skillet over medium heat until a drop of water sizzles on surface. Spread remaining 1/4 cup sugar in skillet and when it starts to caramelize place oranges, cut-side down, on sugar. Let cook for 3 to 4 minutes, not moving oranges, so cut side burns nicely and oranges soften.
- To serve, place 2 orange halves in bowl with 1/4 cup Greek yogurt, and drizzle with burnt sugar juices from skillet.

- Pour the gelatin into a bowl. In a saucepan, heat 1/4 cup of the cream until steaming and add to the gelatin. Mix and let stand for 5 minutes.
- Place the dulce de leche in a large bowl and whisk for 1 minute. Strain the gelatin mixture into the dulce de leche and whisk to incorporate.
- In a medium bowl, beat the remaining cup of cold cream with an electric hand mixer until it holds soft peaks. Fold a third of the beaten cream into the dulce de leche to incorporate and fold in the remaining cream. Pour into 6 -cup ramekins or muffin cups and freeze until solid.
- To release, dip the bottoms of the molds in hot water. Place each semi-frío on a plate and garnish with almonds. Serve immediately or leave out for 15 minutes for a softer texture.

- Use a food processor to finely grind the gingersnaps with the sugar. Pour in the melted butter and pulse to combine. Line a loaf pan with plastic wrap so that it overhangs by about 2 inches. Press the cookies on the bottom of the pan and set in the freezer while you prepare the filling.
- Fill a saucepan with water to about 2 inches high and bring to a simmer. Find a large heat-proof bowl that will fit on the saucepan without touching the water. Place the eggs, sugar, water, vanilla and salt in the bowl and place it over the saucepan. With electric hand-held beaters, beat the eggs on high over the simmering water for 5 minutes. If you don’t have electric beaters you can use a whisk while on the heat, then transfer the mixture to a stand mixer (i.e. Kitchen-Aid mixer) to finish beating. You want the mixture to be light, white and fluffy.
- Remove from the heat and beat for another minute or two, then let cool for 10 minutes. Gently fold in the yogurt.
- Spoon about a third of the mixture on top of the cookies in the loaf pan. Next, take spoonfuls of the dulce de leche, and using about half of it, dollop it down the center, dragging it to the sides a little bit. It is okay if its not perfectly even. It is better that way in fact. Cover with more semifreddo, do another layer of dulce de leche, and finally cover with any remaining semifreddo. Wrap the plastic wrap over top and freeze at least 6 hours. It will keep in the freezer for up to a week, but I promise you it won’t last that long!
