NIF'S NO FAIL PORK RIBS
This recipe is for my neighbour. She used to spend so much time making the perfect ribs. Not too dry, not burning on the BBQ, cooked just right. I mentioned my rib recipe to her, she tried it and has never gone back! The nutritional value listed here is not right for this recipe because the cooking method removes so much fat. I suggested the BBQ sauce that I like, but I find sauces vary so much, I thought that it was best to pick your favourite. I also included the longest option for the cooking time. Steps:
- Place ribs in a large stock pot. Fill pot with cold water until at least 2 inches above ribs. Add bay leaves, peppercorns and sea salt; bring to a boil. Once boiling, skim scum off the top of the water. Simmer ribs, while skimming occasionally, for 1 to 2 hours.
- Set oven to 250°F.
- Remove ribs from water and place in large baking dish. Pour your favourite BBQ sauce over ribs and cover tightlly with foil. Cook for about 4 hours, turning the ribs over every hour or so.
- Remove foil and let cool for 10 minutes, until you can handle them. Cut into 2 to 4 ribs per section and place on a platter. Enjoy your tender, fall off the bone ribs!
NIF'S LAST MINUTE RIBS OR PORK RIBLETS
I went to a surprise party tonight. I decided at the last minute to make ribs and they went over really well with everyone! These were very tender and had lots of flavour. The best part? They are incredibly easy to make and are the quickest ribs I have ever made. You can also use regular sized ribs - these were good for an appetizer at the party. Enjoy!

Steps:
- In a large pot, bring enough water to cover the ribs to a gentle boil. Add salt, pepper, whole garlic cloves and bay leaves to the water. Meanwhile remove the silver skin from the back of the racks and cut rib racks in half. Add ribs to water. Boil for 30 minutes and strain.
- Preheat oven to 350°F.
- Cut rib racks into individual ribs and place in a baking pan lined with tin foil, for easier clean up. Sprinkle ribs with seasoning and toss. ***If you are using a salty seasoning, be careful not to use too much and don't use salt at the end. Cover with foil. Bake for 30 minutes.
- Meanwhile, place a wire rack on a cookie sheet. I lined the sheet with tin foil as well. Place ribs on the rack.
- Broil ribs until they are medium brown. In my oven, they are done after 4 minutes under a high broil setting. If you have time, you can turn them over and broil the other side. Sprinkle with freshly ground sea salt and pepper to taste. Do not add the salt if your seasoning is salty.
- Make sure you taste them! I added more of my dry rub seasoning at this point because they needed a bit more flavour.
NIF'S PORK CUTLETS
A pretty basic recipe that the kids still love. You can dress it up with some sauce, more herbs or maybe some sauteed onions? Serve with potatoes, rice, pasta and some veggies. Enjoy!

- Pound pork chops with a mallet, until about 1/4 inch thick. I put them in a resealable bag so it doesn't make a mess. Heat oil over medium heat in a large nonstick frying pan.
- Mix the flour with the garlic powder, salt and pepper; put in a flat dish. Pour egg whites in another flat dish. Mix breadcrumbs with the seasoning salt in another flat dish. Dip both sides of a pork chop in the flour, then the egg whites and lastly in the breadcrumbs. Turn to coat evenly. Repeat with other 3 chops.
- Cook chops in frying pan for approximately 3 to 4 minutes on each side, until nicely browned and cooked through.

NO FAIL BBQ BABY BACK RIBS (GRILL)
Pushing 52 years old, I have tried every BBQ rib recipe out there. Slow smoked, different rubs, etc.. Sure, lot of them good, some of them just OK. Problem is, never could seem to repeat a good recipe, so came up with this. Super easy, super simple, and one that has been requested at least 20 times by friends and family. If you like Sweet Baby Ray's Original BBQ sauce, you'll probably like this.

- Remove silver skin from bone side of ribs. Never used to do this, but now understand why the pros do. Using the tine of a dinner fork helps get things started, then it just peels off.
- Put a large sheet of foil on the counter and place the ribs meat side down. You want enough foil to VERY lightly wrap (or tent) the ribs for grilling.
- All the spice measurements above are estimates. We like things a bit on the zippy side, but not burning hot -- just a little bite. With that said, we season the bone side of the ribs heavy with garlic powder, medium heavy with cayenne, medium heavy with pepper, and light with salt. Really hard to over do it, as after 4+ hours on the grill, the spices seem to mellow.
- Flip the ribs and repeat the seasoning. Again, may look heavy, but the flavors kinda vanish during cooking. Why you need to try it once and adjust to taste the 2nd time. I never taste the garlic no matter how much I put on, but the cayenne does adjust the spiciness. Even when we go pretty heavy with the cayenne, it is not over-powering.
- Lightly wrap the ribs. You want to create a tent on top so the foil does not touch the meat. Pull up the ends lightly and seal. You do want to seal things so moisture does not escape. You can put these in the fridge all day, or put on the grill immediately.
- I have a Weber Genesis gas grill that has a front, center and rear burner. Don't have to pre-heat, but I only turn on the front burner to low-medium -- grill will heat to about 250 degrees. Place the ribs towards the rear of the grill (away from the burner). Leave them there for 2 hours. Nothing you need to do except make sure the temp stays around 250. 200 is fine, 300 is fine -- but lower seems to produce better results.
- After 2 hours, open the foil and coat with BBQ sauce. Should be a lot of juice in the foil at this point. If not, add some water, beer, or something. Re-seal the foil and let them go another 2 hours.
- Now the tricky part. Pull the ribs towards the front the grill. Get a couple wide spatulas, open the foil, and carefully lift the rack of ribs from the foil and place directly on the center of the grill. At this point, the ribs will be pretty much done. Remove the foil from the grill. Turn on all the burners and coat the ribs with sauce. Close the lid. Things should start smoking from the sauce dripping and burning. If things are not smoking, turn up the heat. Keep an eye on things at this point. You do want a nice char, but you don't want to overdo it. Maybe 10-20 minutes for this step.
- Get the 2 spatulas and remove to a cookie sheet or platter. Enjoy.
- If you like Sweet Baby Ray's Original, you will like these. Fall off the bone every single time, and they require very little effort or attention. You can adjust the base seasoning to your liking. I have made these with the same general recipe and process from anywhere between 3 hours and 6 hours with very little loss in outcome. Hence the reason I call it "no fail".
