PASTA SALAD WITH TUNA MAYO
This is quick to throw together and perfect as a lunchbox feast whether you're on a picnic or at your desk.

Steps:
- Boil the pasta for 10 mins until al dente, then drain and rinse under cold running water. Drain again. Meanwhile, mix the yogurt, mustard, olive oil, vinegar, onion and basil together in a large bowl, then stir in the tuna, red peppers and sweetcorn.
- Stir through the pasta and serve in bowls or pack into containers for work or a picnic. Will keep, covered, in the fridge to eat the next day.

TUNA PASTA SALAD
This is one of those salads where I say, "The longer it sits, the better it gets." You'll often find this cool and creamy pasta salad at my family's get-togethers.

Steps:
- Cook the pasta in boiling salted water according to the package directions. Drain and run under cold water to cool, then drain again. Transfer to a serving bowl.
- While the pasta cooks, pulse the celery, bell pepper and red onion in a food processor until finely minced. Add to the serving bowl along with the tuna and eggs.
- Stir together the mayonnaise, mustard, vinegar, House Seasoning and relish in a small bowl. Pour over the pasta salad and toss gently to combine. Season with salt and pepper. Garnish with chopped fresh parsley before serving, if desired.
- Stir together the garlic powder, onion powder, paprika, salt and pepper in a small bowl. Store in an airtight container.

- Fill a small pot of lukewarm water and place 3 large eggs inside. Make sure the eggs are completely submerged. Let it the water come to a boil. Then turn the heat off, cover with a lid, and set your timer for 8 minutes.
- Carefully transfer the hard-boiled eggs to an ice bath and peel the eggs once they're cooled.
- Then chop the eggs into fine pieces.
- Now cook 12 oz of elbow macaroni in Pot of water al dente. Make sure to Salt the water really well.
- Drain 2 (5 oz) cans of albacore tuna and place the fish into a large bowl along with 1/4 cup chopped onion, 3/4 cup mayonnaise, 1/4 tsp black pepper, a Pinch of salt, 1 chopped stalk celery, 2 tbsp chopped dill. 
- Mix everything together until it's all well combined. Serve chilled

NICOLE'S TUNA PASTA SALAD
Steps:
- Finely chop carrots, celery, onion or scallions. If you have a food processor or small mixer, you can put it all in that. Chop cheese into small pieces.
- Then drain tuna well and add everything to pasta. Then add salt, pepper, some onion powder, mayo, and mix it all around. I usually eyeball the mayo, but you want to put a nice amount in since the tuna absorbs it.
- Then put it back in the fridge for a few hours before serving. I usually add more mayo right before I serve it because it might be a little dry.

- In a large bowl combine Miracle Whip dressing and packet of Italian dressing mix. If mixture is too thick, thin with some milk until desired consistency.
- Add minced onion, tuna, and peas. Mix well.

- Preheat oven to 450 degrees. Line a rimmed baking sheet with parchment paper. Place potatoes on sheet. Drizzle with oil, season with salt and pepper, and toss to coat. Roast for 15 minutes. Add tomatoes to potatoes on baking sheet; toss. Cook until potatoes are tender and tomatoes are lightly browned and soft, about 10 minutes.
- In a medium bowl, toss arugula with 2 tablespoons vinaigrette. Arrange roasted vegetables, arugula, tuna, and olives on platter; drizzle with remaining vinaigrette. Serve.
