Great summer pie and delicious with vanilla ice cream.

2 ½ cups all-purpose flour
1 teaspoon salt
½ cup vegetable shortening, chilled
½ cup unsalted butter, chilled
¼ cup ice water, or as needed
2 ½ cups chopped fresh strawberries
2 ½ cups chopped fresh rhubarb
1 ¼ cups white sugar
2 tablespoons quick-cooking tapioca
2 tablespoons all-purpose flour
1 teaspoon vanilla extract
½ teaspoon orange juice
¼ teaspoon grated orange zest
½ teaspoon ground cinnamon
2 tablespoons butter, chilled and cut into small pieces
1 egg white, beaten

Steps:

  • Whisk 2 1/2 cups of flour and salt together in a large bowl. With a pastry cutter, chop the vegetable shortening and unsalted butter into the flour until the mixture resembles coarse crumbs with a few pea-sized pieces of fat; stir in ice water, 1 tablespoon at a time, just until the mixture holds together when squeezed. Divide dough in half, and form each half into a ball; wrap the balls in plastic wrap, and refrigerate at least 1 hour or up to overnight.
  • Preheat oven to 375 degrees F (190 degrees C). Roll out a dough ball on a floured surface into an 11-inch circle; fit the crust into a 9-inch pie dish. Refrigerate while making filling.
  • Mix strawberries, rhubarb, 1 1/4 cup of sugar, tapioca, 2 tablespoons of flour, vanilla extract, orange juice, orange zest, and cinnamon together in a bowl. Pour the filling into the crust-lined pie dish. Sprinkle 2 tablespoons of butter pieces over the filling. Roll the second dough ball out into a 10-inch circle on a floured surface, and gently place the top crust onto the filling. Crimp the edges together with a fork to seal. Brush the pie with beaten egg white, and cut several slits into the top crust with a sharp knife..
  • Bake in the preheated oven until the crust is golden brown and the filling is bubbling, 55 minutes to 1 hour. Cover the pie edges with strips of aluminum foil if they start to brown too quickly. Cool completely before serving.

1 (9 inch) pastry for double-crust pie
1 1/4 cups sugar
1/3 cup all-purpose flour
1 teaspoon orange zest
4 cups fresh rhubarb, cut into 1 inch pieces
2 cups strawberries (halved)
2 tablespoons butter

Steps:

  • Prepare crust and refrigerate. In a large bowl combine the sugar, flour, salt, and orange zest. Add rhubarb and strawberries. Toss lightly to combine.
  • Spoon filling into chilled prepared pie crust. Dot with butter. Do top crust in lattice. Brush lattice with milk and sprinkle with sugar. Bake on the lower third of the oven for 15 minutes at 450 degrees. Reduce heat to 350 degrees and bake for 50 minutes.

1 pastry for double-crust pie, sufficient for top and bottom 9 inch crust (see Classic Pie Crust, Idiot Proof Step-By-Step Photo Tutorial)
1 lb rhubarb, stalks unpeeled and cut into 1 inch lengths (2 1/2 cups)
2 1/2 cups strawberries, hulled and halved lengthwise
1 cup sugar
1/4 cup quick-cooking tapioca or 1/4 cup cornstarch
1/4 teaspoon salt
2 tablespoons unsalted butter, cut into small pieces
milk or cream
2 teaspoons sugar

Steps:

  • Roll half of the dough and fit into a 9-inch pie pan leaving a 3/4 inch overhang all around and refrigerate.
  • roll the other half of dough into a 12-inch round and refrigerate.
  • Preheat oven to 425 degrees.
  • Put rhubarb and strawberries into a large bowl.
  • In another bowl, whisk together sugar, tapioca or cornstarch and salt.
  • Combine dry ingredients with rhubarb and let sit for 15 minutes, stirring occasionally.
  • Pour rhubarb and strawberries into bottom crust, dot with butter.
  • Brush overhang with water, cover with top crust, seal edge and crimp or flute edges.
  • Cut steam vents into top crust.
  • Lightly brush top of pie with milk or cream and sprinkle with sugar.
  • Bake for 30 minutes, reduce temperature to 350 degrees and bake 25-35 minutes longer, until crust is browned and juices bubble through the vents.

An excellent pie to make when strawberries and rhubarb are at their peak. This delicious fruit-filled pie is a recipe from Canadian Living magazine, May 1993. You can substitute a plain top crust instead of the lattice top if you like; brush with the egg glaze and cut steam vents. Tip: Keep a clear plastic quilt ruler with your baking and cooking supplies to measure pastry strips for lattice pies, to measure squares or strips of dough, pastry, or pasta, or as a guide for cutting squares evenly.

4 cups rhubarb, chopped
2 cups strawberries, sliced
1 1/3 cups granulated sugar
1/4 cup cornstarch
1 tablespoon lemon juice
1/4 teaspoon cinnamon
pastry for a double-crust 9-inch pie
1 egg, beaten for glaze
sugar (optional)

Steps:

  • In a bowl, combine rhubarb, strawberries, sugar, cornstarch, lemon juice and cinnamon.
  • On lightly floured surface, roll out half of the pastry and line a nine-inch pie plate.
  • Spoon in filling.
  • Roll out pastry for top crust; using pastry wheel or knife, cut into 1-inch wide strips.
  • Brush pastry rim with some of the beaten egg.
  • Gently weave strips over the pie to form lattice; trim and flute the edge.
  • Brush lattice with beaten egg. Sprinkle top with sugar if using.
  • Bake on a baking sheet with sides in a 425 degree Fahrenheit oven for 15 minutes. Tip: If you do not have a cookie sheet handy, make a drip catcher out of foil paper, larger than the bottom of the pie plate, and place it under the pie plate and up the sides loosely.
  • Reduce heat to 375 degrees Fahrenheit and bake for 50 to 60 minutes longer or until rhubarb is tender, filling thickened, and the crust is golden.
  • Let stand for 15 to 20 minutes before cutting.
