DUMP-AND-BAKE SWISS STEAK
A simple one pot meal, this Dump-and-Bake Swiss Steak is an easy dinner recipe that can be prepared in the oven or in the Crock Pot.

- Preheat oven to 325 degrees F. Place flour in a shallow dish or tray. Dip steak in flour to coat on both sides. Place in the bottom of a Dutch oven or other large covered baking dish that has been sprayed with cooking spray.
- Add remaining ingredients (except cornstarch).
- Cover and bake for 2 hours.
- Combine cornstarch and cold water to make a slurry. Stir cornstarch mixture into the pot. Cover and bake for 45 - 60 more minutes. Remove herb stems. Slice or shred steak and serve with vegetables over mashed potatoes, noodles or rice. Garnish with fresh herbs, if desired.

SWISS STEAK
For dinner tonight, try Alton Brown's Swiss Steak cutlets from Good Eats on Food Network, cooked in bacon drippings and smothered in an oniony beef gravy.

- Preheat the oven to 325 degrees F.
- Cut the meat with the grain into 1/2-inch thick slices and season on both sides with the salt and pepper. Place the flour into a pie pan. Dredge the pieces of meat on both sides in the flour mixture. Tenderize the meat using a needling device, until each slice is 1/4-inch thick. Dredge the slices on both sides once more and set aside.
- Add enough of the bacon drippings or vegetable oil to just cover the bottom of a 4 to 5-quart Dutch oven set over medium-high heat. Once the oil begins to shimmer, add the steaks to the pan, being careful not to overcrowd. Cook until golden brown on both sides, approximately 2 minutes per side. Remove the steaks to a plate and repeat until all of the steaks have been browned.
- Remove the last steaks from the pot and add the onions, garlic, and celery. Saute for 1 to 2 minutes. Add the tomato paste and stir to combine. Next add the tomatoes, paprika, oregano, Worcestershire sauce and beef broth and stir to combine. Return the meat to the pot, submerging it in the liquid. Cover the pot and place it in the oven on the middle rack. Cook for 1 1/2 to 2 hours or until the meat is tender and falling apart.
DUMP SWISS STEAK (OAMC)
We adapted this to make it super easy for OAMC and freezing. The portions are for 2-3 servings each because it fits really well in a gallon ziploc bag. You could double it and it would probably still fit. Freezes very well. Plan to make two sets and you'll use up your packages of ingredients. Updated to add: Works well in crockpot - cook on low 6-8 hours. I'm sure it would work great from frozen as well. Also, I've used plain onion soup mix and the taste is still great.

- Cut steaks into portion sized pieces. Combine all ingredients together in a gallon ziploc bag. (You can brown meat first if desired, but not necessary.).
- Freeze at this stage, if desired. (Note: If frozen, thaw before baking).
- Transfer to baking dish, Bake covered at 350 for 1 ½ hours.
- Serve over mashed potatoes.
SWISS STEAK QUICK AND EASY
My mother has been making this Swiss steak for years. It is wonderful, and can be made either on the stove top or -- when you don't have a lot of time but want a hearty meal ready when you come home -- in the crock pot. Serve over a bed of egg noodles or rice with a hunk of thick crusty bread.

- Heat oil in a Dutch oven over medium heat. Dredge steak strips in flour. Working in batches, place strips in hot oil. Fry until browned on both sides. Remove to a warm platter. When all meat is browned, return meat to Dutch oven, and stir in onions, mushrooms, salt, pepper, gravy mix, and stewed tomatoes. Bring to a boil, then simmer about 30 to 45 minutes.
- About 20 minutes before steak is finished, fill a large pot with water and bring to a boil. Add pasta, and cook until al dente, about 8 to 10 minutes; drain.
- Serve Swiss steak over noodles.

MY MOM'S SWISS STEAK
This is so easy and all done in one pot! It is delicious and everyone including kids will love it! This recipe is tried and true, impossible to fail! It can also be doubled or tripled without problems, but lower the heat on the second and third batch when browning, as not to burn.

- Heat oil in a large Dutch oven over medium-high heat. Place steaks into the pot one at a time, quickly browning on each side. Remove steaks, and set aside. Add the onion to the pot, and cook over medium-low heat until wilted, about 3 minutes. Return the steaks to the pot, and add the tomatoes, mushrooms, celery and green pepper. Season with oregano and add the bay leaf.
- Cover the pot, and cook over medium-low heat for about 1 1/2 hours, or until meat is fork tender. If you wish to thicken the gravy, remove the meat to a plate. Stir together the cornstarch and water; stir into the pan juices. Let simmer for about 2 minutes to thicken. Return the beef to the pot.

- In a large plastic bag, combine 1/2 cup flour, 1 teaspoon salt, 1/2 teaspoon pepper and garlic salt. Add beef, a few pieces at a time, and shake to coat. Remove meat from bag and pound with a mallet to tenderize. , In a Dutch oven, brown meat in oil until no longer pink. Add the green pepper, celery and onions; cook and stir for 10 minutes. - Cut beef into 6 serving pieces. In small bowl, mix flour, mustard and salt. Sprinkle half of the flour mixture over 1 side of beef; pound in with meat mallet. Turn beef; pound in remaining flour mixture.
- In 10-inch skillet, heat oil over medium heat. Cook beef in oil about 15 minutes, turning once, until brown.

EASIEST SWISS STEAK
My husband is always happy when I make this dish. It may not be 'official' Swiss Steak, but that's what we call it. It's so tasty and EASY. You can cook it either by crock pot or oven. I like to serve it on top of mashed potatoes, but you could also serve it over noodles. Adjust quantities of ingredients to suite your taste; it's pretty much dump-cooking.

- Coat the meat in flour.
- Brown both sides of the meat in a greased pan; don't cook all the way through, just get it browned.
- Mix all the soups and broth together.
- Transfer meat into crockpot or pan for the oven.
- Pour soups/broth mixture on top.
- Cook until done and meat is really tender. This takes about 8-10 hrs in crock pot on low or 3-4 hours in oven at 300.
- Serve over mashed potatoes or noodles.
