Number Of Ingredients 8

Stale Bread Crumbs
Chopped onion
Sugar
Butter
Baking powder
Flour
Savoury or Summer Savoury
Water or Broth

Steps:

  • - Mix all ingredients together with enough warm water to form a ball that holds everything together. Put in a pudding bag or pudding tin with lid and boil for 30 minutes with the jigg's dinner or on its own. If you are going to boil/steam your pudding on its own fill the boiler up 1/4 of the way with water, then put a foil bowl or rack in the bottom of boiler to place your pudding bag or pudding tin on. If you are using the liquor/ broth from the jiggs dinner for gravy it must be taken out before the bread pudding goes in, as it will give a sweet taste to the gravy. Put it in the boiler the same time as your potatoes as they cook about the same. If you use the pudding bag remove from the boiler and from the bag so it don't become to soggy. Cut in slices and serve with meal. This Newfoundland Bread Pudding is like stuffing but the shape of a pudding, smells and tastes amazing and can be served with Jiggs Dinner, with or without gravy.

A traditional Newfoundland meal, comparable to Corned beef and cabbage. Newfoundland is Canada's easternmost province, and is an island in the Atlantic. Make sure that the split peas are securely tied into a cloth bag (pudding bag), a dish towel or cheesecloth, if they escape you will not have a dinner, you will have pea soup!!

1 (3 pound) boneless corned beef brisket
1 ½ cups yellow split peas
1 large head cabbage, quartered
1 medium turnip, peeled and cubed
6 carrots, peeled and cut in chunks
6 large potatoes, peeled and quartered
2 tablespoons butter
½ teaspoon black pepper
1 ½ cups all-purpose flour
2 teaspoons white sugar
2 teaspoons baking powder
¾ cup water

Steps:

  • Cover the corned beef with cold water and soak overnight in the refrigerator.
  • Drain the beef and place in a large Dutch oven. Cover with fresh water. Place the yellow peas in a triple layer of cheesecloth and tie securely. Place the bag inside the Dutch oven with the beef. Bring to a boil, then reduce to a simmer and cook for 2 hours.
  • After 2 hours, add the chopped cabbage, turnip, and carrots to the pot. Simmer for 25 minutes.
  • Add the chopped potatoes and simmer an additional 20 to 25 minutes, or until all of the vegetables are fork tender.
  • While the vegetables are cooking, prepare the dumpling dough as follows: Combine the flour, sugar, and baking powder in a bowl, then add the water a little bit at a time to make a pasty dough. You may not need to add all of the water. Divide the dough into 6 balls. Be careful not to over-handle the dough.
  • During the last 5 to 10 minutes of simmering the vegetables, place the dough balls on top of the vegetables and cover with a lid. Allow the dumplings to steam in the pot for 7 minutes.
  • When the dumplings are cooked through, remove all ingredients from the pot and arrange on a warm serving platter. Remove the cooked peas from the cheesecloth bag and mash with the butter and black pepper. Serve alongside the beef and vegetables.

This recipe was in a Newfoundland magazine called "Downhomer", I have not made it but I do like traditional recipes. Sounds delicious. In the instructions it says " pour into a pudding bag and cook with Jigg's dinner for one hour" It also gives an alternate method which I have put into the recipe since I don't know Jigg's or what he is having for dinner :-)

3 cups fresh breadcrumbs
1 cup raisins
1/2 cup brown sugar
1 teaspoon ground ginger
1 teaspoon allspice
1 teaspoon cinnamon
1/2 cup molasses
1/4 cup melted butter
1 teaspoon baking soda
1 tablespoon hot water
1/2 cup flour

Steps:

  • Soak the bread crumbs in water for a few minutes. Squeeze out the water.
  • Combine the crumbs, raisins, sugar & spices, mix with a fork.
  • Pour hot water over the soda.
  • To the crumb mixture add molasses, melted butter & soda.
  • Add flour & mix well.
  • Pour into a cleaned, greased tomato can, cover with foil and secure with an elastic band, place can into a large pot of boiling water that comes 3/4 way up the can. Steam for 1 1/2 hours until the pudding looks firm.

You pour it into a deep saucepan and heat the milk gently, stirring constantly. Don't let it come to a boil and don't let it burn! When you see tiny bubbles beginning to form around the edge of the pan, take the pan off the fire and stir the milk until the bubbling stops. Some food scientists say that because of pasteurization it's no longer necessary (it was done originally to kill whatever bacteria might be in the milk). . .other scientists, however, say it should still be done when doing baked goods. I always scald the milk that goes into my bread pudding. I m not sure how many people this serves, Sorry I just estimated. Serve with Franks Rum Walnut Sauce "Recipe #388590"

1 tablespoon butter
1 loaf stale new orleans French bread
6 eggs, beaten well
1 1/4 cups granulated sugar
2 tablespoons pure vanilla extract
2 tablespoons ground cinnamon
1/4 teaspoon nutmeg
5 cups whole milk, scalded
1 cup whipping cream
1/2 cup butter, melted
2 cups rum-soaked raisins
1 large rome apple, peeled and diced (or Fiji apple)

Steps:

  • First, grease an 11 x 14 Pyrex baking pan with the tablespoon of butter. The cut the stale French bread into 2"x2" squares and place them in the pan.
  • Next, take a large mixing bowl and a piano wire whisk and make an egg custard by creaming together the eggs and the sugar until smooth.
  • Then whip in the vanilla, cinnamon, and nutmeg until everything is thoroughly incorporated into the custard.
  • Now stir in the scalded whole milk, the whipping cream, and the butter and work that well into the mixture.
  • At this point pour the custard mixture over the bread chunks and, using your fingers, work it into the bread until the pieces soften (ideally, you want to allow the bread to truly "soak" into the custard).
  • Then when the bread becomes "heavenly moist" and fluffy, evenly sprinkle on the raisins and the diced apple (again with your fingers, gently push them into the softened bread).
  • Finally, sprinkle a little more cinnamon over the top of the pudding and bake in a preheated 325-degree oven for about an hour (or until the pudding turns a rich honey brown and a toothpick inserted into the center comes out clean).
