1/2 cup butter
1 small onion (chopped)
1 teaspoon minced garlic
3 (15-ounce) cans black eyed peas (rinsed & drained)
2 (10-ounce) cans mild Rotel (drained (any brand diced tomatoes and green chiles))
1 (4-ounce) can chopped green chiles (drained)
16 ounces Velveeta cheese*

Steps:

  • Melt butter in a medium to large skillet over medium heat. Add onion and sauté until soft and translucent. Add garlic and continue to sauté for about 1 minute more. Stir in all other ingredients. Continue to cook and stir until cheese melts and mixture becomes smooth, about 5 minutes.
  • Transfer dip to a serving dish or small crockpot to keep the dip warm. Garnish with fresh cilantro, diced tomato and green onion, if you'd like. Serve with tortilla chips and enjoy!

Black-eyed peas are easy to overcook, so go slow and steady when simmering, and don't forget to taste often to check their doneness. They should be creamy but retain their shape.

2 tablespoons extra-virgin olive oil, plus more for drizzling
4 ounces slab bacon, cut into 1/2" pieces (optional)
1 medium onion, finely chopped
5 sprigs thyme, plus leaves for serving
4 garlic cloves, smashed
2 cups black-eyed peas, soaked overnight, drained
Kosher salt, freshly ground pepper

Steps:

  • Heat 2 Tbsp. oil in a large saucepan over medium. Add bacon, if using, and cook, stirring occasionally, until some of the fat begins to collect in the pan and bacon starts to look shiny, about 5 minutes. Add onion and cook, stirring occasionally, until golden and tender, about 5 minutes. Add thyme sprigs, garlic, black-eyed peas, and 8 cups cold water and bring to a simmer over medium-high. Reduce heat to medium-low and simmer gently, skimming any foam from surface, until beans are tender, 35-45 minutes. Discard thyme; season with salt.
  • To serve, drizzle beans with oil and top with thyme leaves and some pepper.
  • Do Ahead
  • Beans can be cooked 3 days ahead. Let cool; cover and chill.

4 cups canned black-eyed peas, drained
1/2 onion, chopped
1 garlic clove, chopped
1 (4 ounce) can green chilies (Hatch, or other brand)
1 large pickled jalapeno pepper (or a fresh jalapeno if you are brave)
8 ounces flavorful strong english cheddar cheese (shredded or cut in small pieces)
8 ounces butter (not margarine)

Steps:

  • Put 3.5 cups of the peas in a blender or food processor with onion, garlic, chilies and jalapeño, and blend.
  • Heat butter and cheddar pieces over slow heat until both are melted. (If they don't blend together well after melting, that's okay).
  • Add the butter/cheddar mixture to the pea mixture, and stir or process until blended.
  • Add the remaining whole peas, and chill.
  • Serve slightly warm with your favorite chips.

salt and pepper to taste
1 pinch garlic powder
2 onions, diced
1 (14.5 ounce) can whole tomatoes

Steps:

  • Place black-eyed peas in 8 quart pot. Add enough water to fill pot 3/4 full. Stir in ham and diced onions, and season with salt, pepper, and garlic powder. Place tomatoes in a blender or food processor, and blend until the tomatoes are liquefied. Add tomatoes to pot. Bring all ingredients to boil. Cover the pot, and simmer on low heat for 2 1/2 to 3 hours, or until the peas are tender.

Black-eyed peas symbolize coins and kale symbolizes folded money, which means wealth for the New Year. Also, pork symbolizes progress because pigs root forward and tomatoes symbolize health. Wealth, progress and health in a dip? Yes, please! NOTE: You can easily substitute dried black-eyed peas with canned black-eyed peas to save time.

8 ounces dried black-eyed peas
2 tablespoons butter
1/4 cup onion, minced
1 garlic clove, minced
3/4 lb ground sausage
1 1/2 cups kale, chopped
2 tomatoes, chopped
1/8 teaspoon cayenne pepper (to taste)
salt, to taste
pepper, to taste
6 ounces sharp cheddar cheese, shredded

Steps:

  • ***Skip this step if using canned black-eyed peas. Soak the black-eyed peas in a large pot of water overnight, or for at least 8 hours. Rinse thoroughly. Boil the black-eyed peas in a pot of salted water until they are tender, about 30 minutes. Drain and set aside.
  • Preheat oven to 325 degrees.
  • Melt the butter in a large skillet over medium heat. Add the onions and cook for 3 minutes. Stir in the sausage and garlic and cook for 5 minutes. Add the kale, season with salt and pepper, and cook for 3 minutes. Stir in the cooked black-eyed peas and tomatoes, and cook for 1 minute longer. Add the cayenne pepper. Season with salt and pepper, to taste.
  • Pour 1/3 of the black-eyed pea mixture in the bottom of an 8 x 8 baking dish and top with 2 ounces of cheese. Repeat two more times, ending with the cheese.
  • Bake in a preheated oven uncovered for 10 minutes. Allow it to sit for 5 minutes before serving.
  • Serve warm and enjoy!
