BLACK-EYED PEA DIP
Black-Eyed Pea Dip will be the star of your next party and is the ultimate New Year's Eve appetizer. This EASY Black-Eyed Pea Dip recipe is loaded with black-eyed peas (for good luck!), Rotel, green chiles and cheesy deliciousness! Serve with tortilla chips for a crowd pleasing appetizer!

Steps:
- Melt butter in a medium to large skillet over medium heat. Add onion and sauté until soft and translucent. Add garlic and continue to sauté for about 1 minute more. Stir in all other ingredients. Continue to cook and stir until cheese melts and mixture becomes smooth, about 5 minutes.
- Transfer dip to a serving dish or small crockpot to keep the dip warm. Garnish with fresh cilantro, diced tomato and green onion, if you'd like. Serve with tortilla chips and enjoy!

Steps:
- Heat 2 Tbsp. oil in a large saucepan over medium. Add bacon, if using, and cook, stirring occasionally, until some of the fat begins to collect in the pan and bacon starts to look shiny, about 5 minutes. Add onion and cook, stirring occasionally, until golden and tender, about 5 minutes. Add thyme sprigs, garlic, black-eyed peas, and 8 cups cold water and bring to a simmer over medium-high. Reduce heat to medium-low and simmer gently, skimming any foam from surface, until beans are tender, 35-45 minutes. Discard thyme; season with salt.
- To serve, drizzle beans with oil and top with thyme leaves and some pepper.
- Do Ahead
- Beans can be cooked 3 days ahead. Let cool; cover and chill.

- Put 3.5 cups of the peas in a blender or food processor with onion, garlic, chilies and jalapeño, and blend.
- Heat butter and cheddar pieces over slow heat until both are melted. (If they don't blend together well after melting, that's okay).
- Add the butter/cheddar mixture to the pea mixture, and stir or process until blended.
- Add the remaining whole peas, and chill.
- Serve slightly warm with your favorite chips.

While I was watching the Florida-Cincinatti 2010 Bowl game annd eating Blackeyed peas and stewed Tomatoes. I was hit with this idea for a dip. I made it in less than 20 minutes and it was great. I hope you try it and add your own touches. This is really a orginal but man its good. Try it !

Although I am not a superstitious person, I call this a New Year's dip because of the "lucky" ingredients. Black-eyed peas symbolize coins and kale symbolizes folded money, which means wealth for the New Year. Also, pork symbolizes progress because pigs root forward and tomatoes symbolize health. Wealth, progress and health in a dip? Yes, please! NOTE: You can easily substitute dried black-eyed peas with canned black-eyed peas to save time.

- ***Skip this step if using canned black-eyed peas. Soak the black-eyed peas in a large pot of water overnight, or for at least 8 hours. Rinse thoroughly. Boil the black-eyed peas in a pot of salted water until they are tender, about 30 minutes. Drain and set aside.
- Preheat oven to 325 degrees.
- Melt the butter in a large skillet over medium heat. Add the onions and cook for 3 minutes. Stir in the sausage and garlic and cook for 5 minutes. Add the kale, season with salt and pepper, and cook for 3 minutes. Stir in the cooked black-eyed peas and tomatoes, and cook for 1 minute longer. Add the cayenne pepper. Season with salt and pepper, to taste.
- Pour 1/3 of the black-eyed pea mixture in the bottom of an 8 x 8 baking dish and top with 2 ounces of cheese. Repeat two more times, ending with the cheese.
- Bake in a preheated oven uncovered for 10 minutes. Allow it to sit for 5 minutes before serving.
- Serve warm and enjoy!
