This is a great year-round salad that travels well. It is totally vegan, but no meat eater will complain! It's good served by itself or over lettuce.

1 (15.5 ounce) can Great Northern beans, drained
1 (15.5 ounce) can garbanzo beans, drained
1 (15.5 ounce) can black-eyed peas, drained
1 (13.75 ounce) can marinated artichoke hearts, drained and chopped
4 green onions, chopped
2 large tomatoes, diced
3 cloves garlic, minced
3 tablespoons olive oil
3 tablespoons balsamic vinegar
¼ cup chopped fresh parsley
2 teaspoons crushed dried oregano
1 teaspoon ground black pepper

Steps:

  • Mix the Great Northern beans, garbanzo beans, black-eyed peas, artichokes, green onions, tomatoes, and garlic together in a bowl. Toss with the olive oil, balsamic vinegar, parsley, oregano, and black pepper until well mixed. Refrigerate for 1 hour before serving.

NEW YEAR'S BLACK-EYED PEA SALAD



New Year's Black-Eyed Pea Salad image

A southerner would scoff at this dish, which contains no ham hocks or salt pork. The vibrant salad, which I like to serve warm, makes it very clear that those ingredients are not essential for great black-eyed peas.

Yield 6 to 8 servings

Number Of Ingredients 16

1 tablespoon extra virgin olive oil
1 medium onion, chopped
3 or 4 garlic cloves, minced
1 pound black-eyed peas, washed and picked over
6 cups water
1 bay leaf
Salt to taste
1/4 cup red wine vinegar or sherry vinegar
1 garlic clove, minced
Salt and freshly ground pepper to taste
1 to 2 teaspoons lightly toasted cumin, ground (to taste)
1 teaspoon Dijon mustard
1/2 cup broth from the beans
1/3 cup extra virgin olive oil
1 large red bell pepper, diced
1/2 cup chopped cilantro

Steps:

  • Heat 1 tablespoon olive oil in a large, heavy soup pot over medium heat and add the onion. Cook, stirring, until tender, about 5 minutes. Add half the garlic and cook, stirring, until the garlic is fragrant, 30 seconds to a minute. Add the black-eyed peas and the water and bring to a simmer. Skim off any foam from the surface of the water. Add the bay leaf and salt to taste (1 to 2 teaspoons). Reduce the heat, cover and simmer 30 minutes. Taste and add more salt if desired. Add the remaining garlic, cover and simmer until the beans are tender but intact. Taste and adjust salt. Remove from the heat and carefully drain through a colander or strainer set over a bowl. Transfer the beans to a large salad bowl.
  • In a pyrex measuring cup or a small bowl, whisk together the vinegar, garlic, salt, pepper, cumin, and mustard. Whisk in 1/2 cup of the bean broth, then the olive oil. Taste and adjust seasonings. Add a little more vinegar if you wish. Stir the dressing into the warm beans. Stir in the red pepper and cilantro, and serve, or allow to cool and serve at room temperature.

1 pint cherry tomatoes
1 red pepper
1 small red onion
1 -15 1/2 ounce light red kidney beans
1 -15 1/2 ounce dark red kidney beans
1 -15 1/2 ounce pinto beans
1 -15 1/2 ounce green beans
1 -15 1/2 ounce yellow beans
1 -15 1/2 ounce lima beans
1 -15 1/2 ounce great northern bean
1 -15 1/2 ounce black beans
1 -15 1/2 ounce garbanzo beans
2 tablespoons fresh oregano
2 tablespoons fresh rosemary
2 tablespoons fresh thyme
2 tablespoons Dijon mustard
3 tablespoons sugar or 3 honey
3 fresh garlic cloves
3 tablespoons fresh parsley
1/3 cup balsamic vinegar
red cider vinegar
1 cup extra virgin olive oil
2 tablespoons fresh basil
1 tablespoon cayenne pepper

Steps:

  • Empty all the Beans. Add all the beans into a large bowl. Dice up the red onion chop. Then cut 3 stalks of celery into small pieces. Next, cut the red pepper into small pieces.
  • Add all the above ingredients into the large bowl with beans. Add the cherry tomatoes to the beans. When finished mixing, add 9 Bean Salad Dressing Mix to the Bean Mix. (recipe for salad dressing is giving below) Double dressing mix if needed. Pour the bean salad into an air sealed container and refrigerate for at least 4 hours or over night. The longer it rest the better it will taste; yummy! It will last up to 1 week in the refrigerator.
  • Salad Dressing Mix:.
  • Finely chop Oregano, Rosemary, and Thyme. Take garlic cloves and chop until minced. In a large bowl combine all ingredients. Whisk in the olive oil. Mix all ingredients well. After all the dressing is well mixed, pour all of it over the Bean Salad. (Double dressing mix if needed.).

1 (8 ounce) can black-eyed peas, drained (reserve liquid)
1 red onion, chopped
1 green bell pepper, seeded and chopped
1 cup celery, chopped
1 (4 ounce) jar pimientos, drained and diced
1/4 cup vinegar
1 cup granulated sugar
1 pinch salt

Steps:

  • Mix vegetables together in Corningware container.
  • Add the dressing ingredients to the reserved black-eyed pea liquid; mix well making sure the sugar dissolves.
  • Pour the dressing over the vegetables and stir.
  • Cover and refrigerate at least 12 hours before serving.

3-Bean Good Luck Salad With Cumin Vinaigrette image

This is a colorful variation of the black-eyed peas salad I always serve at my New Year's Day open house. You can cook the black beans and red beans together or separately. The black-eyed peas cook more quickly so should be cooked separately.

3/4 cup dried black beans, washed, picked over and soaked for 6 hours or overnight in 3 cups water
3/4 cup dried red beans or kidney beans, washed, picked over and soaked for 6 hours or overnight in 3 cups water
2 onions, halved
4 garlic cloves, minced
Salt to taste
3/4 cup black-eyed peas, washed and picked over
1 bay leaf
1/4 cup red wine vinegar or sherry vinegar
1 garlic clove, minced
Salt and freshly ground pepper to taste
2 teaspoons lightly toasted cumin, ground
1 teaspoon Dijon mustard
1/2 cup broth from the beans
1/3 cup extra virgin olive oil
1 red bell pepper, diced
1/2 cup chopped cilantro

Steps:

  • Place a strainer over a bowl and drain the black beans. Add enough water to the soaking water to measure 6 cups. Drain the red beans and discard the soaking water. Combine the black and red beans, water, all but 1/2 onion, and 3 of the garlic cloves in a large, heavy pot and bring to a gentle boil. Reduce the heat, cover and simmer 1 hour. Add salt to taste (beans take a lot of salt) and continue to simmer for another 30 minutes, or until the beans are tender but intact. Remove and discard the onions. Set a strainer over a bowl and drain. Measure out 1/4 cup of the broth.
  • Meanwhile in a separate pot combine the black-eyed peas, remaining 1/2 onion and garlic clove, the bay leaf and 3 cups water. Bring to a boil, add salt to taste, cover, reduce the heat and simmer 45 minutes, or until the beans are tender but intact. Remove and discard the bay leaf and onion. Set a strainer over a bowl and drain. Measure out 1/4 cup of the broth and add to the black and red bean broth.
  • In a bowl or measuring cup, whisk together the dressing ingredients. Combine all of the beans in a large bowl and toss with the dressing. Taste and adjust salt. At this point the mixture can be refrigerated, or the salad can be served warm or at room temperature.
  • Stir the peppers and cilantro into the beans and serve.

1 lb yukon gold potato
2 tablespoons cider vinegar
2 cups cooked black-eyed peas, drained
1/2 cup chopped green bell pepper
1/2 cup chopped red bell pepper
3/4 cup chopped celery
3/4 cup chopped red onion
3/4 lb turkey kielbasa, diced and lightly sauteed
1/4 cup chopped fresh cilantro
salt
pepper
1/2 cup sliced radish
1/2 cup canola oil
1/3 cup sugar
4 tablespoons sherry wine vinegar
3/4 teaspoon salt
3/4 teaspoon pepper
1 teaspoon Tabasco sauce

Steps:

  • In a saucepan (big enough to accomodate the potatoes without crowding), add potatoes, water to cover, and 1 teaspoon salt per quart of water.
  • Cover partially and bring to a boil; cook about 20-25 minutes or until the potatoes are tender when pierced.
  • Drain the potatoes in a collander; return potatoes to the warm saucepan and toss them over low heat to dry them.
  • When cool enough to handle, peel and cut into 1/4-inch cubes.
  • Put potatoe cubes in a large bowl and sprinkle with the cider vinegar while still warm.
  • To make the dressing: in a bowl, whisk the canola oil, sugar, vinegar, salt, pepper, and Tabasco until well blended.
  • To the potatoes add the black-eyed peas, bell peppers, celery, onion, sausage, and cilantro.
  • Pour the dressing over all and mix gently to coat thoroughly.
  • Season with salt and pepper.
  • Cover and refrigerate.
  • May serve chilled or at room temperature.
  • Right before serving, garnish with radish slices.
