EASY BANANA BROWNIES



Easy Banana Brownies image

A small banana is added to a basic made-from-scratch brownie for a hint of banana flavor. This is a fudgy brownie and it does not rise much. Add 1/2 cup chopped nuts or mini chocolate chips for more flavor. No mixer required!

½ cup butter
⅔ cup semisweet chocolate chips
1 large egg
⅔ cup packed light brown sugar
1 small ripe banana, mashed
½ teaspoon vanilla extract
¼ teaspoon salt
¾ cup all-purpose flour

Steps:

  • Preheat an oven to 325 degrees F (165 degrees C). Grease an 8 inch square pan.
  • Melt butter in sauce pan over medium-low heat. Remove from heat, add chips, and stir until melted. Set aside to cool for 5 minutes.
  • Lightly beat the egg in a medium bowl. Stir in the brown sugar, banana, vanilla, and salt. Pour the melted chocolate mixture into the banana mixture, and stir until well combined. Add the flour, stirring just until incorporated. Spread the batter into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted near the center comes out with moist crumbs, about 30 minutes. Don't over bake. Remove, and cool pan on wire rack before cutting.

Found this recipe in a cookbook of mine and I made it and boy I knew I found a winner after the first bite!

1 package(s) fudge brownie mix (13x9 inch pan size)
1 cup(s) semisweet chocolate mini chips, divided
3/4 cup(s) dry-roasted peanuts, chopped and divded
3 medium firm banana's
1 2/3 cup(s) cold milk
2 package(s) small instant vanilla pudding mix
1 - carton 8oz. frozen whipped topping, thawed

Steps:

  • Prepare brownie mix according to package directions for fudge-like brownies. Stir in 1/2 cup chocolate chips and 1/4 cup peanuts. Spread into a greased 13x9 inch baking pan. Bake at 350 for 28-30 minutes or until a toothpick inserted near center comes out clean. Cool on wire rack.
  • Slice bananas; arrange in a single layer over brownies. Sprinkle 1/4 cup chocolate chips and 1/4 cup peanuts over bananas.
  • In a mixing bowl, beat the milk and pudding mixes on low speed for 2 minutes. Fold in whipped topping. Spread over the top. Sprinkle with remaining chips and peanuts. Refridgerate leftovers. 12-15 servings

1 box (18.3 oz) Betty Crocker™ fudge brownie mix
Water, vegetable oil and eggs called for on brownie mix box for cakelike brownies
1/3 cup coarsely chopped walnuts
2 boxes (4-serving size each) Jell-O™ banana cream instant pudding and pie filling mix
2 1/2 cups cold milk
1 container (8 oz) Cool Whip frozen whipped topping, thawed
4 medium bananas, peeled and sliced (about 3 1/2 cups)
1 cup chopped fresh strawberries
1/2 cup pineapple tidbits in juice, drained, patted dry (from 8-oz can)
2 tablespoons chocolate fudge sauce
18 maraschino cherries with stems, patted dry

Steps:

  • Heat oven to 350°F. Grease bottom of 13x9-inch pan with shortening or cooking spray. Make brownie batter as directed on box for cakelike brownies. Stir in walnuts. Spread in pan. Bake 22 to 25 minutes or until toothpick inserted 2 inches from side of pan comes out almost clean. Cool completely on cooling rack, about 1 hour.
  • In large bowl, beat dry pudding mixes and milk with whisk about 2 minutes or until thick. Stir in 1 cup of the whipped topping. Spread over brownie. Spread remaining whipped topping over pudding layer. Cover and refrigerate 4 hours.
  • When ready to serve, top with bananas, strawberries and pineapple. In small microwavable bowl, microwave chocolate fudge sauce uncovered on High 10 to 20 seconds or until thin enough to drizzle. Drizzle warmed sauce over brownie with fork. Cut into 6 rows by 3 rows. Top each bar with a cherry. Cover and refrigerate any remaining bars.

Thick, moist and chewy Banana Bread Brownies are a delicious mash up between banana bread and a blondie-style brownie. Absolutely delicious and so easy!

1 cup raw walnut halves*
6 tablespoons unsalted butter
1 cup mashed ripe banana (about 3 medium)
2/3 cup honey
1/3 cup light or dark brown sugar
1 large egg
2 teaspoons pure vanilla extract
¾ cup all-purpose flour
¾ cup white whole wheat flour (or swap additional all-purpose flour)
½ teaspoon ground cinnamon
1 teaspoon baking powder
¼ teaspoon baking soda
1/4 teaspoon kosher salt
6 tablespoons unsalted butter
1 1/2 cups powdered sugar
1 teaspoon pure vanilla extract (divided)
1 to 2 tablespoons heavy cream (if you have it or half-and-half or milk of choice)

Steps:

  • Heat your oven to 350 degrees F. Line an 8×8-inch baking pan with parchment paper, so that two opposite sides overhang like handles, then coat the paper with nonstick spray. Set aside. Spread the walnuts on an ungreased, rimmed baking sheet. Toast in the oven until fragrant and crisp, about 8 to 10 minutes, tossing once halfway through. Transfer to a cutting board and roughly chop.
  • In a large mixing bowl, mash your banana (double check to make sure you have 1 cup).
  • Brown the butter: Heat the butter in a small/medium light-colored saucepan over medium-low. This will take several minutes. Continue to heat until butter melts completely, foams and crackles, turns clear golden (the crackling will stop), then turns toasty brown, swirling the pan periodically. This entire process will take 3 to 5 minutes, depending upon your pan. Once the butter begins to smell lightly nutty, whisk it frequently, scraping up any browned bits from bottom. Watch the pan carefully in the last few minutes to ensure that the butter does not burn. As soon as the bits of butter in the bottom of the pan turn the color of a pecan, remove the butter from the heat and pour it immediately into the bowl with the banana to prevent the butter from burning, along with any toasted bits that are at the bottom. If you'll be making the brown butter frosting, keep the pan handy.
  • To the banana mixture, add the honey and brown sugar and whisk until smooth. At this point, the mixture should be cooled to lukewarm, but if it's not, let it rest for a few minutes (or pop it into the fridge to cool it more quickly). Whisk in the egg and vanilla.
  • In a small mixing bowl, stir together the all-purpose flour, white whole wheat flour, cinnamon, baking powder, baking soda, and salt. Add to the banana mixture. With a rubber spatula, gently and slowly fold just until the flour disappears. The batter will look lumpy. Fold in the walnuts.
  • Scrape the batter into prepared pan and smooth the top with spatula. Bake for 22 to 25 minutes, until lightly browned at the edges and a toothpick inserted in the center comes out clean. Place the pan on a wire rack. Let cool in the pan completely if you will be frosting them. If not, wait at least 10 minutes before you lift the brownies from the pan using the parchment and cut them into squares. If they're cool, the squares will be tidy; if they're still warm, they'll be messy. No one will mind.
  • To make the frosting: brown the butter in the same sauce pan you used previously (unless it is super tiny, in which case, switch to a larger one), following the directions in step 3 above (if there are any burned bits of butter on the pan, wash them out first. If your pan is relatively clean, no need to wash in between). As soon as the butter is browned, remove the pan from the heat. Immediately, begin to stir in the powdered sugar with a rubber spatula or whisk, 1/4 cup at a time. If at any point it becomes too thick to whisk (likely by the fourth or fifth addition of powdered sugar), switch to a rubber spatula and add 1 tablespoon of the cream, then continue adding the powdered sugar, until the frosting is thick but spreadable. Stir in the vanilla extract. If needed, continue adding cream, 1 to 2 teaspoons at a time, until the frosting reaches your desired consistency (the butter might look like it's separating but just keep stirring. As long as you combine everything well, it will all cool together beautifully as the bars sit). Frost the cooled bars. Slice and enjoy!

1/4 cup water
3 medium bananas
1 1/4 cups milk (cold)
3 ounces vanilla instant pudding mix
8 ounces Cool Whip, thawed
9 strawberries
1 ounce semisweet chocolate

Steps:

  • Preheat oven to 350°. Prepare brownie mix according to package directions; stir in 1/2 cup of peanuts. Pour into 9" square baking pan. Bake according to package directions. Cool completely.
  • Slice 2 of the bananas; place in single layer over brownie.
  • Whisk pudding mix into milk just until it begins to thicken. Gently fold in 2 1/2 cups of the Cool Whip. Quickly spread mixture over the bananas. Refrigerate 30 minutes.
  • Sprinkle remaining peanuts over pudding mixture. Top with remaining Cool Whip. Grate chocolate evenly over dessert.
  • Slice remaining banana and strawberries. Slice into 9 squares. Garnish each square with banana and strawberry slices.

3 ripe bananas
2 Tbsp cold butter, cut into small pieces
3 Tbsp brown sugar or splenda brown sugar
8 oz softened cream cheese
1/4 c sugar
1 box brownie mix (9×13 size, i used pilsbury)
8 oz white chocolate chips
3/4 c peanut butter

Steps:

  • 1. Preheat oven to 350 degrees F. Slice bananas into ½ inch slices and place into a medium baking dish. Top with butter and sprinkle with brown sugar. Bake for 30 minutes, they will be bubbly and golden brown. Remove from oven and let sit until it cools. Mix bananas with the softened cream cheese and sugar until combined well.
  • 2. Prepare brownie mix according to the directions on the box. Line a 10x10 inch baking dish (makes for a thicker brownie with this size of dish), with tin foil that's been sprayed with cooking spray.
  • 3. Pour brownie batter into prepared dish. Drop banana cream mixture by the spoonfuls evenly over brownie batter. Gently run a knife through the banana and brownie mix, and swirl but do not scrap the bottom of the pan or you will tear the foil.
  • 4. Bake for 40-45 minutes in a 350 degree oven or until toothpick comes out clean from middle of brownies. Let cool completely, then pull out of pan with foil edges and refrigerate.
  • 5. When completely cooled melt white chocolate chips and peanut butter in the microwave and pour over the top of the brownie let cool completely and cut.
