Steps:
- Cut the peaches in half and remove the pit. Slice each half in half and toss them in a bowl with the vanilla extract, almond extract, and brown sugar. Set aside for 15 minutes while you preheat a grill with a medium-high heat. Grill skin side down until skin is slightly charred, about 3 minutes. Turn and grill on the other 2 sides until you get nice grill marks, about 1 minute on each side.
- Divide the peaches among 4 bowls and serve with the frozen yogurt and toasted almonds, if desired.
GRILLED PEACHES WITH CRèME FRAîCHE
These grilled peaches drizzled with dessert wine and dolloped with crème fraîche are as simple as they are delicious. All you need are peaches, a grill, a bit of booze, a squeeze of lime, a crack of pepper, and a few dollops of crème fraîche.

- Cut peaches in half and use a spoon to remove the pits. Rub the peach halves together to release their juices, then place cut side down over direct heat, 6 inches from the coals, or over medium-high heat on a gas grill or indoor grill pan. Grill until peaches are lightly charred, soft, and warmed all the way through, 3-4½ minutes.
- To serve, place the peaches on individual serving plates or one large platter. Drizzle with wine, then add freshly ground black pepper. Spoon dollops of crème fraîche over the peaches, then finish with freshly squeezed lime juice. Serve immediately.
GRILLED PEACHES WITH WINE SYRUP TWO WAYS

- For the wine syrup: Combine the wine, peach nectar, brandy, 1/4 cup sugar, 2 tablespoons honey, cinnamon sticks and vanilla bean in a large high-sided saute pan and bring to a boil over high heat. Reduce to a simmer and cook, stirring occasionally, until thickened to a syrup, about 10 minutes. Strain.
- For the peaches: Preheat a gas grill to medium-high.
- Melt the butter in a small saucepan over medium heat. Brush the cut sides of the peaches with butter and sprinkle with remaining 2 tablespoons sugar and some cinnamon. Grill cut-side down and cook until slightly caramelized, 2 to 3 minutes
- For the peach chutney: Coarsely chop the peaches and toss with another pinch cinnamon, a few tablespoons of the wine syrup, some torn mint leaves, a splash of canola oil and salt and pepper. Goes great with pork.
- For the grilled peach dessert: Place the peaches cut-side up on a platter. Spoon some creme fraiche in the center of each, drizzle over some wine syrup, a bit of honey and garnish with mint leaves. Serve warm or at room temperature.
GRILLED PEACHES WITH CINNAMON SUGAR BUTTER
Steps:
- In a small bowl add the butter and stir until smooth. Add the cinnamon sugar, granulated sugar and salt and mix until combined.
- Heat grill to high. Brush peaches with oil and grill until golden brown and just cooked through. Top each with a few teaspoons of the butter and garnish with mint leaves.

POACHED PEACHES IN SPARKLING WINE WITH BASIL & VANILLA

- Put the vanilla pods, seeds and sugar in a saucepan with 200ml water and bring to the boil over a medium heat. Once boiling, drop in the basil and peaches. Poach for 2-3 mins until just tender, then put a lid on the pan and leave the peaches to cool in the syrup.
- Once cool, pour in the sparkling wine and leave for 10 mins. While the poached fruit is soaking up the wine, beat the vanilla, mascarpone and cream together to soft peaks. Serve the peaches in a bowl with plenty of the liquid. Finish with a spoonful of the cream and a few basil leaves.

PEACHES IN RED WINE
One of my husband's family recipes, a French staple in the summer in peach season. Minimum of 6 hours refrigeration. No cooking at all!!

Steps:
- Peel the peaches--to do it easily, boil them for about 10 seconds, then peel off the skin.
- Slice them.
- Put the peeled, sliced peaches in a bowl, add about half a bottle of red wine to cover.
- The type of wine isn't so important, but it has to be decent and drinkable.
- I used a 3 dollar bottle of Cotes du Rhone yesterday.
- Pour in the sugar and stir.
- Must sit for 6 hours in the fridge, minimum.
- Serve in pretty glasses or dishes.
- If you feel you need something else to go with it, try some kind of crunchy cookie or macaroon.
SWEETENED GRILLED PEACHES AND PEARS IN WHITE WINE
Great summer desert. Grilled sweet peaches and pears marinated in a lightly sweetened white wine served with fresh mint and a creamy mascarpone topping.

Steps:
- Cut the peaches and pears in thick slices, don't peel, just nice thick slices. You will be grilling these so you don't want them too thin.
- Mix the wine, mint, allspice and brown sugar in a pie pan or small bowl and add the peaches and pears and let marinade 1-2 hours.
- Mix the mascarpone, honey and orange juice and chill in a small bowl.
- Toast the pistachios. I rough chop and then lightly toast in a dry saute pan for 2-3 minutes just to lightly toast and intensify the flavors. Remove and let cool.
- Grill on medium heat on a grill pan or they can be done on a outdoor grill as well. Grill until until nice grill marks on each side but not overdone.
- Just serve the fresh grilled fruit with a dollop of the mascarpone cheese topping and toasted pistachios.
