New Year Pork Roast Food
NEW YEAR PORK ROAST
This roast has become a tradition in our family for New Years Day dinner. We love it whether it's made in the oven or, the crock pot.

Steps:
- 1. preheat oven to 375 -or- crock pot to high wash rinse and drain kraut on paper towel Season roast with salt, pepper, sage, garlic powder. Set aside
- 2. In large saute pan, heat oil, saute apples & onions til golden. Add kraut and whiskey-about 1/4 cup.
- 3. Layer kraut mixture in bottom of roasting pan or crock pot Add roast Cook 4 hours in Crock -or- 45min-1hour in oven. (if kraut looks dry in oven-add chicken stock or beer to moisten)

- Preheat oven to 350°. In a small bowl, mix celery, green pepper, green onions and garlic., Place roast in a roasting pan, fat side up. With a sharp knife, make deep slits into top of roast, cutting between ribs. Fill slits with vegetable mixture. Sprinkle roast with salt and cayenne., Roast until meat reaches desired doneness (for medium-rare, a thermometer should read 145°; medium, 160°), 1-1/4 to 1-1/2 hours. Remove roast from oven; tent with foil. Let stand 15 minutes before carving.
