1 pound haricot verts or green beans, trimmed
4 ounces shiitake mushrooms, stems removed, julienned
1 1/2 tablespoons olive oil
1 tablespoon capers
Kosher salt
1 tablespoon butter
1 tablespoon all-purpose flour
1 cup whole milk, warmed
1/2 teaspoon garlic powder
1/2 teaspoon freshly ground black pepper
4 ounces goat cheese, crumbled
Kosher salt
1/2 cup crispy fried onions

Steps:

  • Preheat the oven or a toaster oven to 400 degrees F.
  • For the green beans: Place the green beans on a sheet pan. Add the mushrooms, olive oil and capers, sprinkle with 1/4 teaspoon salt and toss to coat. Roast the green beans until tender and the skins blister, 8 to 10 minutes depending on the thickness of the green beans.
  • For the goat cheese sauce: Meanwhile, add the butter to a small saute pan over medium heat and cook until it starts to bubble and brown. Add the flour and stir to cook the flour, 1 to 3 minutes. Slowly whisk in the milk. Continue to cook until the mixture simmers and thickens, about 10 minutes. Add the garlic powder and pepper. Remove from the heat and add 3 ounces of the goat cheese. Taste and season with salt.
  • For the garnish: When the green beans are tender, pour the goat cheese sauce on the bottom of a platter. Top with the roasted green beans and sprinkle with the remaining goat cheese and crispy fried onions. Serve immediately.

2 medium onions, thinly sliced
1/4 cup all-purpose flour
2 tablespoons panko bread crumbs
1 teaspoon kosher salt
Nonstick cooking spray
2 tablespoons plus 1 teaspoon kosher salt, divided
1 pound fresh green beans, rinsed, trimmed and halved
2 tablespoons unsalted butter
12 ounces mushrooms, trimmed and cut into 1/2-inch pieces
1/2 teaspoon freshly ground black pepper
2 cloves garlic, minced
1/4 teaspoon freshly ground nutmeg
2 tablespoons all-purpose flour
1 cup chicken broth
1 cup half-and-half

Steps:

  • Preheat the oven to 475 degrees F.
  • Combine the onions, flour, panko and salt in a large mixing bowl and toss to combine. Coat a sheet pan with nonstick cooking spray and evenly spread the onions on the pan. Place the pan on the middle rack of the oven and bake until golden brown, approximately 30 minutes. Toss the onions 2 to 3 times during cooking. Once done, remove from the oven and set aside until ready to use. Turn the oven down to 400 degrees F.
  • While the onions are cooking, prepare the beans. Bring a gallon of water and 2 tablespoons of salt to a boil in an 8-quart saucepan. Add the beans and blanch for 5 minutes. Drain in a colander and immediately plunge the beans into a large bowl of ice water to stop the cooking. Drain and set aside.
  • Melt the butter in a 12-inch cast iron skillet set over medium-high heat. Add the mushrooms, 1 teaspoon salt and pepper and cook, stirring occasionally, until the mushrooms begin to give up some of their liquid, approximately 4 to 5 minutes. Add the garlic and nutmeg and continue to cook for another 1 to 2 minutes. Sprinkle the flour over the mixture and stir to combine. Cook for 1 minute. Add the broth and simmer for 1 minute. Decrease the heat to medium-low and add the half-and-half. Cook until the mixture thickens, stirring occasionally, approximately 6 to 8 minutes.
  • Remove from the heat and stir in 1/4 of the onions and all of the green beans. Top with the remaining onions. Place into the oven and bake until bubbly, approximately 15 minutes. Remove and serve immediately.

4 cups sliced onions
2 tablespoons balsamic vinegar, or more if needed
3 cloves garlic, chopped
2 teaspoons white sugar
1 teaspoon dried basil
1 teaspoon dried oregano
¼ cup shredded Parmesan cheese, or to taste
halved grape tomatoes

Steps:

  • Bring a large pot of lightly salted water to a boil; cook green beans at a boil until tender yet firm to the bite, 5 to 10 minutes; drain and transfer to a 9x13-inch dish.
  • Cook and stir onions, vinegar, garlic, sugar, basil, and oregano in a skillet over medium heat until onions are softened and translucent, about 5 minutes. Reduce heat to medium-low, and continue cooking and stirring until onions are very tender and dark brown, 15 to 20 minutes more.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Spread onion mixture over green beans and top with Parmesan cheese. Arrange tomatoes, cut sides down, atop Parmesan cheese layer.
  • Bake in the preheated oven until cheese is melted and bubbling, about 35 minutes.

1 ½ cups frozen corn
2 cups sour cream
1 (10.75 ounce) can condensed cream of mushroom soup
4 ounces buttery round crackers
½ cup butter, melted
1 ½ cups shredded Colby-Jack cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place the green beans and corn into a 2 quart casserole dish, and spread evenly. In a medium bowl, stir together the sour cream and cream of mushroom soup. Spread on top of the corn and beans. If you think you don't like green bean casserole, withhold judgment until you've tried this entirely from-scratch version. It has all the classic elements of the Thanksgiving favorite, but its base is a mushroom gravy amped up with red-wine vinegar, red-pepper flakes and fresh thyme rather than a can of soup. If you don't want to fry the onions yourself (we understand), you can always substitute 1 1/2 cups store-bought fried onions or even crispier fried shallots.

2 medium yellow onions (about 14 to 16 ounces), halved and thinly sliced with a sharp knife or mandoline
1/4 cup all-purpose flour
2 tablespoons bread crumbs (panko or regular)
1 teaspoon kosher salt
High-heat oil, like canola, safflower or vegetable, for frying
3 tablespoons unsalted butter, plus more for greasing the dish
1 teaspoon kosher salt, plus more for the blanching water
1 1/2 pounds green beans, trimmed and halved
1/2 teaspoon red-pepper flakes
1 tablespoon fresh thyme leaves
12 ounces mixed mushrooms (like a mix of cremini and shiitake), trimmed and sliced into 1/2-inch pieces
2 garlic cloves, thinly sliced
3 tablespoons all-purpose flour
1 1/2 cups chicken stock or vegetable broth
1 1/2 cups milk
1 pinch ground nutmeg
1/4 teaspoon black pepper
1 teaspoon red-wine vinegar or sherry vinegar
1 teaspoon Worcestershire or soy sauce (optional)

Steps:

  • Make the onions: In a medium bowl, combine the onions with the flour, bread crumbs and salt, and toss to coat the onion pieces.
  • In a heavy skillet with high sides, pour enough oil to reach 1/2-inch up the side. Heat over medium-high until the oil is hot - a drop of water should sizzle and sputter when flicked into the oil.
  • Add the onions in batches, taking care not to overcrowd them. Fry until golden-brown (they don't have to be deep brown, as they'll continue cooking in the oven), about 5 to 6 minutes, then use a slotted spoon or a pair of tongs to transfer to paper towels. Sprinkle lightly with salt. Repeat until you've fried all of the onions.
  • Butter a shallow 4-quart baking dish and heat the oven to 400 degrees.
  • Blanch the green beans: Bring a large pot of water to a boil with an ice bath nearby. When boiling, salt the water generously, add the green beans, and cook for 4 to 5 minutes, until slightly tender and bright green. Immediately transfer beans to the ice bath. When beans are chilled, drain and set aside.
  • Pour water out of the pot, wipe dry and return to the stovetop. Over medium-high heat, melt 3 tablespoons butter. When melted, add the red-pepper flakes and thyme, and stir until fragrant, about 1 minute. Add the sliced mushrooms and cook, stirring occasionally, until they start to brown significantly, 8 to 10 minutes. Add 1 teaspoon salt and sliced garlic and stir until fragrant, another 1 to 2 minutes.
  • Sprinkle the flour all over and stir to coat the mushrooms. Gradually add the stock and milk, and bring to a simmer, stirring all the while. Turn the heat down to medium and continue to stir until the sauce is thick and creamy and coats the back of a spoon, 6 to 8 minutes. Remove from heat. Add nutmeg, black pepper, vinegar and Worcestershire, if using. Taste for salt, pepper and acidity.
  • Add the green beans and half of the onions, stir to combine, and transfer to prepared baking dish. Top with remaining onions and bake for 15 to 20 minutes, until bubbling. Serve immediately.

1/3 cup milk
1 (2 7/8 ounce) can French fried onion rings, divided
1 (2 ounce) jar hormel real bacon bits, divided
1/8 teaspoon pepper

Steps:

  • Heat oven to 350 degrees. In a bowl, combine beans, soup, milk, 1/2 can of onion rings, 1/2 jar of bacon bits and pepper; pour into 1 1/2 quart casserole dish. Bake 30 minutes. Top with remaining onions and bacon bits. Bake 5 minutes longer.
