Steps:
- Mix all ingredients on a large baking sheet with sides.
- Toss to coat potatoes evenly with oil and herbs.
- Turn potatoes so that cut side is down.
- Sprinkle with salt and freshly ground black pepper.
- Roast in a 375 degree oven for 30 minutes or until done.
- Serve with any oil/butter/herb mixture left in pan.

- Cook potatoes in boiling water until tender, adding corn for final 5 mins, then drain and allow to cool a little.
- For the dressing, mix the vinegar, oil, shallot, capers, basil and some seasoning.
- Heat grill to high. Rub a little dressing on the salmon and cook, skinned-side down, for 7-8 mins. Slice tomatoes and place on a serving plate. Slice the potatoes, cut the corn from the cobs and arrange over the tomatoes. Top with the salmon, then drizzle over the remaining dressing.

- Melt the butter in a dutch oven and sauté the potatoes, adding salt and pepper, until they begin to brown.
- Add the garlic and cook for a few seconds, until fragrant. Then move the dutch oven into your oven, preheated to about 350 degrees.

- Heat oven to 200C/180C fan/gas 6. Rinse and dry the unpeeled new potatoes. Put 2-3 tbsp duck fat or olive oil in a roasting tin and put in oven for 10 mins to melt. Strip leaves from rosemary, oregano and sage and stir into tin with seasoning.
- Add potatoes and toss well. Roast for 40-50 mins, shaking tin a couple of times, until potatoes are crisp and tender. Sprinkle with sea salt and serve.
