FRENCH POTATO SALAD

1 pound small white boiling potatoes
1 pound small red boiling potatoes
2 tablespoons good dry white wine
2 tablespoons chicken stock
3 tablespoons Champagne vinegar
1/2 teaspoon Dijon mustard
2 teaspoons kosher salt
3/4 teaspoon freshly ground black pepper
10 tablespoons good olive oil
1/4 cup minced scallions (white and green parts)
2 tablespoons minced fresh dill
2 tablespoons minced flat-leaf parsley
2 tablespoons julienned fresh basil leaves

Steps:

  • Drop the white and red potatoes into a large pot of boiling salted water and cook for 20 to 30 minutes, until they are just cooked through. Drain in a colander and place a towel over the potatoes to allow them to steam for 10 more minutes. As soon as you can handle them, cut in 1/2 (quarters if the potatoes are larger) and place in a medium bowl. Toss gently with the wine and chicken stock. Allow the liquids to soak into the warm potatoes before proceeding.
  • Combine the vinegar, mustard, 1/2 teaspoon salt, and 1/4 teaspoon pepper and slowly whisk in the olive oil to make an emulsion. Add the vinaigrette to the potatoes. Add the scallions, dill, parsley, basil, 1 1/2 teaspoons salt, and 1/2 teaspoon pepper and toss. Serve warm or at room temperature.

Kosher salt
1/2 cup fresh parsley, chopped
1/2 small red onion, finely diced
1/4 cup pickled cherry peppers, roughly chopped
1 tablespoon chopped fresh chives
Freshly cracked pepper
1/4 cup red wine vinegar
2 tablespoons sweet pickle relish
2 tablespoons capers, chopped
1 teaspoon whole-grain mustard
1/2 cup extra-virgin olive oil
Kosher salt and freshly cracked pepper

Steps:

  • Make the potato salad: Put the potatoes in a large pot and cover with cold water by 2 inches; season liberally with salt. Bring to a simmer over medium-low heat and cook until fork-tender, 15 to 20 minutes. Drain the potatoes in a colander, then cover with foil to keep warm until tossed with the vinaigrette.
  • Make the vinaigrette: In a large bowl, whisk the vinegar, relish, capers and mustard. Slowly whisk in the olive oil until emulsified. Season with salt and pepper.
  • Add the potatoes, parsley, red onion, cherry peppers and chives to the bowl with the vinaigrette. Toss to coat and season with salt and pepper to taste.

  • Place the potatoes in a large stockpot, and cover with water. Bring to a boil, and cook until the potatoes are tender, about 20 minutes. Drain and allow to cool. When cool, cut the potatoes in half.
  • Combine the vinegar and mustard in a large bowl. Slowly whisk in the olive oil.
  • Add the potatoes to the vinaigrette, and mix gently but thoroughly. Toss in the scallions, parsley and dill. Salt and pepper to taste.

1 large Spanish onion, finely sliced
1 large shallot, finely sliced
2 cloves garlic, finely chopped
1/2 cup sherry vinegar
2 pounds new potatoes, boiled and quartered
1/4 cup finely chopped parsley leaves
Salt and freshly ground black pepper

Steps:

  • Heat the olive oil in a medium skillet over medium high heat. Add the onions and saute until lightly golden brown. Add the shallot and garlic and cook an additional 1 minute. Remove from the heat and add the vinegar. Pour the mixture over the warm potatoes, add the parsley and stir to combine. Season with salt and pepper.

1 lemon, zested and juiced
¼ cup chopped fresh dill
1 Tbsp grainy mustard
2 tsp caraway seeds, toasted
Salt and pepper

Steps:

  • Cook potatoes in a large pot of boiling salted water. Drain and set aside.
  • In a small bowl, whisk together oil, lemon zest and about a ¼ cup lemon juice, dill, mustard, caraway seeds, and salt and pepper to taste. Toss potatoes with enough vinaigrette to coat. Adjust seasoning if necessary.

I bought this potato salad in the deli section at New Pioneer Co-op and loved it! This is my attempt at recreating it using the listed ingredients. It's good hot or cold but it is very vinegary - if you don't like vinegar as much as I do, then definitely cut back! I think it's best to make it while potatoes are hot, and then refrigerate everything together to let the flavors blend.

1 lb yukon gold potato
3 -4 green onions
1/2 cup white wine vinegar
1/8 cup extra virgin olive oil
1/8 cup canola oil
2 tablespoons sugar
1 bunch basil
1 bunch parsley
kosher salt
black pepper

Steps:

  • Wash and cut potatoes into bite-sized pieces (don't peel unless you want to). Add to salted boiling water and cook until soft (I put in the crockpot on high with water for the afternoon). Drain water and set aside.
  • Chop green onion, using white and green parts. Chop basil and parsley leaves. Set aside.
  • To make dressing, whisk vinegar, oils, and sugar together. Add onion, herbs, and salt and pepper to taste.
  • Drizzle dressing over potatoes, stir well. Serve or refrigerate.

2 lbs tiny new potatoes, washed
1/4 cup red wine vinegar, high quality
1/4 cup extra virgin olive oil
1 tablespoon Dijon mustard
3 tablespoons fresh chives, snipped
1 tablespoon flat leaf parsley, chopped
1 teaspoon salt

Steps:

  • 1. Place potatoes in a large saucepan; fill with cold water to cover by 2 or 3 inches. Bring to boil over moderately high heat. Reduce heat to low, cover pan, and simmer for 15 to 20 minutes until fork-tender.
  • 2. Drain potatoes and set aside until cool enough to handle.
  • 3. Combine the remaining ingredients in a jar. Cover and shake well. Taste and correct the seasonings.
  • 4. If desired, peel potatoes. (I don't) Quarter each potato and place in bowl. Shake vinaigrette again and pour over the warm potatoes. Gently fold together until potatoes are covered with vinaigrette. Serve warm or cover and chill, tossing occasionally.

4 green onions, thinly sliced

1 large cucumber, peeled, halved lengthwise, seeded, thinly sliced

Steps:

  • Cook potatoes in large pot of boiling salted water until tender when pierced with fork, about 15 minutes. Drain. Cool potatoes until lukewarm. Cut potatoes in half. Place in large bowl. Sprinkle wine over potatoes.
  • Heat 2 teaspoons oil in large nonstick skillet over medium heat. Add onions and sauté until tender, about 5 minutes. Add vinegar, mustard and sugar to skillet and stir to blend. Pour over potatoes and toss to coat. Add radishes, green onions, parsley and remaining 1 teaspoon olive oil and toss to blend. Season salad to taste with salt and pepper.
  • Mound salad on platter. Surround with cucumber slices and serve.

Kosher salt and freshly ground pepper
2 tablespoons red-wine vinegar

1/2 cup finely chopped sweet onion
1/2 cup roughly chopped fresh parsley leaves
1/2 cup roughly chopped celery leaves
1 tablespoon chopped fresh oregano

Steps:

  • In a large pot, cover potatoes with 2 inches water and season generously with salt. Bring to a boil, then reduce heat to medium-high and continue boiling until potatoes are fork-tender, about 9 minutes. Drain, transfer to a bowl, and lightly smash. Toss with vinegar, lemon juice and zest, and oil; season with salt and pepper. Let cool completely, about 30 minutes.

You may worry about the amount of dressing in this luscious salad, but you'll find that it is largely absorbed by the potatoes. The salad resembles a classic creamy potato salad with lots of crunchy celery, but there's only a smidgen of mayonnaise here. The technique of softening the onions with boiling water comes from the cookbook author Deborah Madison.

1 medium red onion, diced
1/3 cup vinegar (red or white wine, sherry or apple cider)
1 to 2 garlic cloves, to taste, minced or puréed
Salt to taste
2 teaspoons Dijon mustard
1/4 cup extra virgin olive oil
1/2 cup plain low-fat yogurt
1 tablespoon Hellmann's or Best Foods Mayonnaise (optional)
Freshly ground pepper
2 pounds red potatoes, scrubbed and quartered if small, cut in large dice if large
4 stalks celery, diced or sliced
3 tablespoons chopped fresh parsley
Optional: 2 or 3 hard-cooked eggs, diced

Steps:

  • In a large bowl, whisk together the vinegar, garlic, salt, mustard, olive oil, yogurt and mayonnaise (if using). Place the onion in a bowl, and pour on boiling water to cover. Drain immediately, rinse with cold water and transfer to the bowl with the dressing.
  • Steam the potatoes above one inch of boiling water for 10 to 15 minutes until tender. Remove from the heat, and toss gently with the onion. Season to taste with salt and pepper. Add the remaining ingredients and toss together. Refrigerate for at least one hour before serving.
