Steps:
- Peel shrimp and place into a mixing bowl; set shrimp shells aside in a saucepan.
- Drizzle vegetable oil over shrimp and season with black pepper, smoked paprika, cayenne pepper, and seafood seasoning. Mix shrimp to coat with spices and cover bowl with plastic wrap; refrigerate shrimp to absorb flavors, at least 1 hour.
- Place reserved shrimp shells in saucepan over medium-high heat with 1 tablespoon butter; cook and stir until shells are pink and fragrant, 1 to 2 minutes. Pour in chicken stock, bring to a boil, and reduce heat to low; simmer until shrimp shells have given off their flavor, 20 to 30 minutes.
- Strain shrimp stock through a fine mesh strainer into a bowl and add lemon juice, Worcestershire sauce, and hot sauce. Stir to combine.
- Place a large skillet over high heat until pan is very hot; sear shrimp in the very hot, dry pan until shrimp are browned, about 1 minute per side.
- Stir 3 tablespoons cold butter, garlic, and minced rosemary into shrimp; cook and stir until shrimp are opaque in the middle and garlic is fragrant, 1 minute. Pour in shrimp stock.
- Transfer shrimp from skillet to a bowl, using a slotted spoon; reserve sauce in skillet. Bring sauce to a boil and cook until reduced slightly, about 5 minutes. Adjust seasoning to taste. Return shrimp to pan, reduce heat to low, and warm through, about 1 minute. Serve shrimp drizzled with pan sauce; garnish with a rosemary sprig.

NEW ORLEANS SHRIMP
Great New Orleans style spicy shrimp. I like it hot, and add fresh, hot red peppers. Serve over rice. Crusty bread and ice cold beer are good accompaniments. This is one of my favorite dishes.

Steps:
- Pour oil into a large, heavy skillet; place over medium high heat. Heat oil until hot, but not smoking. Reduce heat to low, and add onion, celery, and green pepper. If using diced hot peppers, stir in now. Saute until the onion is soft; be careful not to burn onion. Remove vegetables from skillet, and wipe out excess liquid with paper towel.
- Return pan to heat. Melt butter in pan: let bubble, but do not allow butter to burn. Sprinkle flour over butter, and stir with wire whisk. Whisk in salt and black pepper. Whisking constantly, brown flour mixture until dry; this should take about 3 to 5 minutes. Do not allow roux to burn.
- Slowly whisk in hot fish stock . Increase heat slightly. Gradually whisk in beer; keep whisking until gravy thickens. Stir in vegetables. If gravy is too thick, gradually stir in warm water to dilute.
- Stir shrimp into gravy. Cook until pink, about 2 to 3 minutes. Remove from heat, and serve.

EMERIL'S NEW ORLEANS-STYLE RED BEANS AND RICE
"Oh yeah, this is it!" - are the words my husband declared when he tried this recipe for red beans and rice. He was craving New Orleans-style red beans and rice and I had never made it before- so this is the recipe I searched for and tried and it was delicious!! The kids thought it was great too. I only made a few small changes to Emeril's, like adding more sausage than the recipe called for and letting a smoked ham hock cook with the beans for the first two hours..other than that everything is the same. This is not a quick meal, but great for a lazy day at home.

- Start by preparing the roux. Heat oil and butter in a dutch oven or heavy bottomed pot and add flour. Cook the flour while stirring fairly regularly on a medium flame for 20 minutes till it gradually deepens in color to the color of peanut butter. It's important to keep stirring so that the flour doesn't stick to the bottom or burn (watch the video above to see how the flour changes color as it cooks).
- Once the roux has reached the desired color, add the bayleaf, onions, celery and capsicum and stir for two to three minutes till the onions are tender. Add garlic and slowly start adding shrimp stock while stirring continuously till the mixture thickens a little and comes to a boil.
- Stir in crushed tomatoes or tomato puree, cajun seasoning and salt (if using) along with sausages and okra. Mix this well and bring this to a boil. Once the stew starts boiling, reduce the flame and cover and let it simmer for 15 minutes or till the okra is cooked and not slimy anymore.
- Add shrimp to the pot, simmer for 8-10 minutes and turn off the flame. (if using smaller or larger sized shrimp, cooking time will vary slightly). Top with chopped parsley and serve hot. This gumbo keeps for days and leftovers taste even better!

- Chargrilled Oysters. Drago's Restaurant invented the chargrilled oyster in 1993 when Tommy Cvitanovich brushed oysters on the half shell with a mix of butter, garlic, and herbs.
- Po'Boys. Shrimp, crawfish, oysters, roast beef, or crab—there are so many varieties of po'boys to choose from, it would be hard to eat all the city has to offer on one visit.
- Red Beans and Rice. Red beans and rice is such a simple dish, but the home cooks of New Orleans have raised it to the next level. Lush and rich with fresh herbs, the beans are a creamy addition to rice, served with or without meat.
- Baked Alaska. The Antoine's menu is full of dishes that are iconic to the New Orleans food scene, but the favorite dessert of the restaurant's patrons is Baked Alaska.
- King Cake. A tradition handed down to the descendants of French settlers in New Orleans, King Cake is served to celebrate the Epiphany, the Christian celebration of the time when Jesus revealed himself to the three wise men.
- Gumbo. The official state cuisine of Louisiana, this stew is thickened with a roux, and it's full of vegetables and the cook's choice of protein (seafood, sausage, or chicken), then flavored with filé powder or other seasonings.
- Grits and Debris. "Debris" here is the leftover bits and pieces of roasted meat leftover in the pan after cooking. Enhanced with the savory meat juices that are made into gravy, this mixture is served over hot grits.
- Beignets and Cafe Au Lait. Cafe Du Monde has operated as a French coffee stand in New Orleans since 1862 in the New Orleans French Market. Their name became synonymous with beignets, small squares of fried dough dusted with powdered sugar.
- Barbecue shrimp. Pascal's Manale is the home of barbecue shrimp, but you can also get a great version at Brennan's. There's no barbecue sauce involved here, though—just buttery, spicy seasonings coating each piece of seafood.
- Turtle soup. Yes, there is real meat found in the recipe for turtle soup. Snapping turtles are described as having seven types of meat, reminiscent of the typical proteins we have in our American diet.
