SPINACH GARLIC BREAD
My husband and I use to order this all the time at our local restaurant. After a examining the bread I realized how easy it would be for me to make it at home. With a few tries I have finally prefected it.

Steps:
- Cut the french bread in half or in forths (which ever you prefer).
- Cut the bread in half lenght wise so now you can open the bread.
- Spread butter or your favorite spread over the bread then sprinkle with garlic powder. This will all depend on your taste do as much as you like.
- Now place the spinach on one side of the bread and top with mozzeralla cheese. I use the sliced it much easier. But you can also use shredded.
- Wrap in aluminum foil if you like or you and just bake it on baking sheets.
- Bake in a preheated 350º oven for 10 to 15 minutes until cheese is melted.
- Enjoy!

- Preheat oven to 350.

Steps:
- Cook spinach according to package.
- Drain and pat dry, removing as much liquid as possible.
- Melt cream cheese and garlic cheese over a low fire or in microwave.
- Stir and blend into spinach, adding seasoning.
- Cut French bread loaf in half, length-wise.
- Place open-faced on a cookie sheet.
- Spread with spinach/cheese mixture.
- Cover with mozzarella and bake for 10 minutes, or until cheese is melted and bubbly, in a preheated 325 oven.

NEW ORLEANS CRAWFISH BREAD
You will love this bread! It was on our local news from a local chef and in our opinion, he can do no wrong! After broiling you serve this sliced and eat with a fork. We N'Awlinians eat this as a meal, but you can serve this as a side with your favorite seafood meal.

Steps:
- In a large heavy skillet, melt the butter and heat it until it bubbles.
- Then lower the heat and add the chopped onions, bell pepper, and celery.
- Sauté the mixture until the veggies turn limp, but do not let them brown (figure that it should take about three minutes).
- Next add the wine to the seasoning base and bring it to a boil.
- Then, after about a minute, pour in the clam juice and add to it the prepared roux, thyme, bay leaves, and garlic.
- At this point, return the mixture to a boil once again but immediately lower the heat and simmer everything together for about five minutes more or until thickened.
- Now add the crawfish tails, diced tomatoes, cream of shrimp soup, parsley, green onions, seafood seasoning, and salt (if needed).
- When everything is thoroughly combined, simmer the skillet for about 8 to 10 minutes or until you can pick up the sauce with a fork.
- All that's left to do is to slice the loaves of bread lengthwise and sprinkle each half with a thin but complete layer of cheese.
- Then place the bread onto a sheet pan and slide it under a hot broiler or toaster oven until the cheese fully melts.
- Finally, take the bread halves out of the oven, generously spoon the crawfish sauce down the center of each loaf, then top them liberally with a sprinkling of Parmesan cheese.
- Return the Crawfish Bread to the oven one more time, but only until the sauce begins to bubble.
- Then slice the"breads" into appropriate individual portions and serve the pieces piping hot.
GOOEY PROVOLONE GARLIC BREAD

Steps:
- Cut bread lengthwise in half; place cut side up on baking sheet.
- Combine oil, garlic, oregano and, if desired, pepper flakes in small bowl; mix well. Brush on cut sides of bread. Place under preheated broiler 5 inches from heat; broil 2 minutes or until bread is lightly toasted. Arrange cheese slices over bread, cutting to fit if neccessary.
- Return to broiler; broil 1 minute or just until cheese is melted. Cut bread crosswise into 8 pieces.

BRENNAN'S GARLIC BREAD
A copycat recipe from southernfoods.about.com from the famous New Orleans restaurant, Brennan's. My family loves this bread. The secret is to rub the outside of the bread with fresh garlic.

- The secret to this wonderful tasting bread, is rubbing the outside of a loaf of bread with a piece of garlic that has been cut open lengthwise.
- Split loaf, and spread the melted butter over the cut sides. Sprinkle on the remaining ingredients. Finely chop the garlic cloves, and sprinkle those on top of the bread.
- Bake at 350ºF for about 8 to 10 minutes, or until nice and golden brown.
