1 bunch cilantro, chopped
1 bunch green onions, cut into 3 inch lengths
1 jalapeno pepper, seeded and minced
2 limes, juiced
¾ cup white sugar
1 pinch salt

Steps:

  • Combine cranberries, cilantro, green onions, jalapeno pepper, lime juice, sugar, and salt in the bowl of a food processor fitted with a medium blade. Chop to medium consistency. Refrigerate if not using immediately. Serve at room temperature.

1/4 cup diced pineapple
1/4 cup finely chopped cilantro
2 1/2 tablespoons finely chopped red onion
2 tablespoons honey
1 tablespoon minced jalapeño (see note about adjusting spiciness)
2 teaspoons fresh lime juice
1/16 teaspoon kosher salt

Steps:

  • In a mini food processor, pulse cranberries 2-3 times. Scrape sides and add pineapple, pulsing 2-4 times more until desired consistency is reached.
  • Scoop cranberry mixture into a bowl and add all other ingredients, stirring to combine.
  • Serve immediately or refrigerate, covered, for up to 3 days.

My friend Val shared this recipe with me last year. It is a new favorite, and one that I plan on taking many places over the holiday season, as it is different. Best served with Wheat Thins, this salsa is yummy and a must try! The original recipe called for a 1 pound package of cranberries; I've found that fresh cranberries are now packaged in 12 oz. portions, and this size works. Don't forget to allow time for chilling, to allow flavors to develop...This will make enough for 2 blocks of cream cheese, so you have 1 to serve, and 1 to share!

1 bunch cilantro
1 bunch green onion
2 jalapenos (may use canned)
1 cup sugar
1/4 cup fresh lemon juice
2 (8 ounce) blocks cream cheese

Steps:

  • Add first 4 ingredients above together in food processor.
  • Pulse well to combine.
  • Add sugar and lemon juice, and pulse until combined.
  • Pour over cream cheese and serve!

From an old chef who used to work at Brennan's and who has been a family friend for years. This is excellent on turkey or chicken but I have served it with fish. Super easy and super good. The four hours is chill time.

1 quart fresh cranberries
1 lemon, juice of
1 large white onion, chopped
5 -10 jalapenos or 5 -10 serrano chilies, to taste
3 -5 garlic cloves, minced, to taste
salt & freshly ground black pepper

Steps:

  • Combine the first five ingredients, and cook until cranberries are tender and falling apart.
  • Place in a food processor, and pulse with short bursts until the mixture is coarsely, NOT smoothly, puréed.
  • Season to taste with salt and pepper.
  • Let cool and refrigerate for at least four hours before serving.

6 tablespoons white sugar
2 tablespoons brandy-based orange liqueur (such as Grand Marnier®)
½ cucumber - peeled, seeded, and diced
2 stalks celery, chopped
4 slices pickled jalapeno pepper, finely chopped

Steps:

  • Place the cranberries into a food processor, and pulse until finely chopped. They should still have some texture. Transfer to a serving bowl, and stir in the sugar, orange liqueur, cucumber, celery and jalapeno. Let sit at room temperature for 15 minutes before serving to blend the flavors.
