Number Of Ingredients 17

1 lb macaroni
freshly ground black pepper, to taste
salt, to taste
2 ½ teaspoons paprika, or chili powder
1 ½ teaspoons garlic powder
1 teaspoon mustard powder, (optional but highly recommended)
¼ teaspoon nutmeg, (optional, but use for added flavor)
1 pinch dried basil, optional
½ teaspoon oregano
½ cup panko breadcrumbs
½ cup flour
4 cups milk
2 garlics, minced
4 tablespoons milk, use for later
¼ cup butter
4 cups cheese, (recommended: 2 cups cheddar, 1 cup monterey-jack, 1 cup mozzarella)
½ cup heavy cream, (optional but for extra creaminess, use it)

Steps:

  • Take a medium-sized pot or a deep saucepan and to it, add the flour and cook for 2 minutes on medium heat (to toast the flour). Reduce heat to low and add butter and minced garlic. Cook until butter has melted and garlic has caramelized.
  • Increase heat to medium and add 4 cups (960 ml) milk slowly, whisking constantly to prevent lumps from forming. Continue to cook until sauce thickens- sauce should be thicker than bechamel.
  • Turn off the heat and add garlic powder, salt, black pepper, paprika or chili powder, mustard powder and nutmeg. After mixing, add 1 ½ cups (150 G) of the cheese to the sauce and combine - do not turn on the heat.
  • In a separate pot, boil the pasta in water and cook until al dente. Drain and reserve ¼ cup (60 ml) pasta water.
  • Then, put the macaroni in a large pot and add the sauce without heating it. Add the heavy cream, 4 tbsp of milk, pasta water, basil and oregano. Add salt and pepper if needed.
  • In a separate pan, toast the breadcrumbs with 1 tbsp of butter and cook for 5 minutes to create a breadcrumb topping.
  • Preheat the oven to 410°F. Add half of the mac 'n' cheese to a lightly-buttered baking dish. Before adding another layer, add 1 cup (100 G) of shredded cheese. Then, top with the final layer of pasta and cover with the remaining cheese.
  • Add the breadcrumbs on top and bake for 20 - 25 minutes or until the top gets nice and golden-brown.

3 tablespoons unsalted butter, plus more for greasing the baking dish
4 cups Murray's® Shredded Cheddar Cheese

Steps:

  • Preheat the oven to 350°F (180°C).
  • Cut the Murray's® Mild Yellow Cheddar Cheese and Sharp White Cheddar Cheese into ½" cubes.
  • Add the eggs, evaporated milk, salt, sugar, and pepper to a medium bowl and whisk to combine.
  • Bring a large pot of water to a boil over high heat. Add the macaroni and cook for 5-8 minutes. Turn the heat off and let the macaroni sit in the hot water for 3 minutes, until tender. Drain the macaroni and return to the pot.
  • Turn the heat to low and add the butter and Murray's® Shredded Cheddar Cheese. Stir until the butter and cheese are completely melted.
  • Pour the macaroni into a 9"x13" baking dish greased with butter and spread evenly. Add the egg and milk mixture and the cubed cheese, and carefully fold into the macaroni until well combined.
  • Bake for 25-30 minutes, or until the cheese is bubbling and the top of the macaroni is golden brown.

This mac 'n' cheese recipe may be a little different from what you are used to eating. In New Orleans, we make our mac 'n' cheese with spaghetti. Yes, you read that right. We also call it baked spaghetti. Regardless of what you call it, this is a great comforting dish.

2 teaspoons kosher salt, plus more for boiling
1 lb dried spathetti
4 tablespoons unsalted butter
4 tablespoons unbleached all-purpose flour
2 teaspoons black pepper
1 teaspoon garlic powder
½ teaspoon cayenne
1 qt half & half
½ cup heavy cream
4 cups shredded sharp cheddar cheese, divided
2 cups shredded pepper jack cheese, divided
2 cups shredded mozzarella cheese, divided

Steps:

  • Preheat the oven to 400°F (200°C).
  • Bring a large pot of generously salted water to a boil. Cook the spaghetti according to the package instructions until al dente, about 6 minutes. Drain the spaghetti and set aside.
  • Melt the butter in a medium saucepan over medium heat. Add the flour and whisk until incorporated and smooth. Cook until golden brown, about 30 seconds. Add the salt, black pepper, garlic powder, and cayenne and whisk to combine.
  • Gradually add the half-and-half, whisking for 30-60 seconds between each addition until starting to thicken before adding more. Whisk in the heavy cream until the sauce is smooth and no lumps remain. Bring to a simmer, stirring constantly to prevent scorching on the bottom of the pot.
  • Reduce the heat to medium and whisk in 2 cups (200 g) cheddar, 1 cup (100 g) pepper Jack, and 1 cup (100 g) mozzarella until the cheese is melted. Remove the pot from the heat.
  • Add the spaghetti to a 9 x 13-inch (13 x 22 cm) baking dish and pour the cheese sauce on top. Stir well to coat the noodles with the sauce.
  • In a medium bowl, toss together the remaining 2 cups (200 g) cheddar, 1 cup (100 g) pepper Jack, and 1 cup (100 g) mozzarella cheese, then sprinkle evenly over the top of the spaghetti.
  • Bake for 30 minutes, or until the cheese is golden brown. Let cool slightly before serving.

4 cups fresh spinach, packed
½ cup fresh parsley
2 ½ cups milk, divided
5 qt water
1 tablespoon salt
1 lb elbow macaroni
¼ cup butter
¼ cup flour
2 teaspoons garlic powder
2 teaspoons onion powder
1 teaspoon paprika
1 teaspoon pepper
1 teaspoon salt
1 lb white cheddar cheese
½ cup mozzarella cheese

Steps:

  • In a food processor, combine the spinach, parsley, and ½ cup (120 ml) milk, and process until evenly mixed.
  • In a large pot, bring water and 1 tbsp salt to a boil over high heat. Add the elbows and cook until al dente, roughly 6-7 minutes. Rinse with cold water and drain.
  • In a large pot, combine the butter and flour on medium-high heat, and stir until the mixture has become golden brown.
  • Add 2 cups (470 ml) milk, garlic powder, onion powder, paprika, pepper, and salt to the pot and stir until well incorporated.
  • Add in the cheddar cheese and mix until well incorporated.
  • Add in the spinach mixture and stir until fully incorporated and the green color is consistent.
  • Mix in the pasta and pour into a casserole dish.
  • Top the macaroni with mozzarella and broil for 5 minutes.
  • Enjoy!

My momma makes the best (and easiest!) deep-dish macaroni and cheese. It's like a baked mac 'n' cheese pie with a combination of smoked Gouda, pepper Jack, mozzarella, cottage cheese, and more. It's one of our family's favorite dishes and a holiday must-have.

3 tablespoons unsalted butter, plus more for greasing
1 teaspoon kosher salt, plus more for boiling
16 oz large elbow macaroni
1 cup sour cream
1 cup cottage cheese
2 cups shredded sharp cheddar cheese, divided
1 cup shredded smoked gouda cheese, divided
1 cup shredded pepper jack cheese, divided
1 cup shredded whole-milk mozzarella cheese, divided
1 can cheese sauce, or cream of mushroom soup
½ cup evaporated milk
½ teaspoon black pepper
¼ teaspoon garlic powder
¼ teaspoon onion powder
¼ teaspoon cayenne
2 large eggs, beaten

Steps:

  • Preheat the oven to 325°F (160°C). Grease a 7 x 11-inch (17 x 27 cm) baking dish with butter.
  • Bring a large pot of salted water to a boil. Cook the macaroni according to the package instructions until al dente, then drain and return to the warm pot.
  • Add butter to the macaroni and stir until melted and the noodles are well coated.
  • In a large bowl, stir together the sour cream, cottage cheese, 1 cup cheddar, ½ cup Gouda, ½ cup pepper Jack, ½ cup mozzarella, the cheese sauce, evaporated milk, salt, black pepper, garlic powder, onion powder, and cayenne until well combined.
  • Add the sauce to the pot with noodles and mix until fully coated. Season with more salt and black pepper to taste. Stir the eggs until well incorporated.
  • Pour the macaroni into the prepared baking dish and smooth in an even layer.
  • In a medium bowl, toss together the remaining 1 cup cheddar, ½ cup Gouda, ½ cup pepper Jack, and ½ cup mozzarella cheese. Sprinkle the cheese mixture evenly over the noodles.

¾ cup butter, softened - divided
