1 tablespoon vegetable oil
3 pounds pork butt or pork shoulder , well-trimmed of fat and cut into 1-inch pieces
2 onions , chopped
6 cloves garlic , chopped
1 teaspoon fine sea salt
1 tablespoon flour, or masa harina
1/2 teaspoon freshly ground pepper
1 cup/8 ounces ground dried New Mexican red chile powder
5 to 6 cups water, divided

Steps:

  • Preheat oven to 350 F.
  • Cook the pork, undisturbed, until each piece is browned well on one side, about 3 minutes.

2 onions, minced
1/4 cup chili powder
2 tablespoons vegetable oil
6 garlic cloves, minced
2 tablespoons tomato paste
1 tablespoon minced fresh oregano (or 1 t. dried)
2 cups low sodium chicken broth
1/2 cup brewed coffee
1/4 cup minute tapioca
1 tablespoon minced canned chipotle chile in adobo
1 tablespoon brown sugar
2 bay leaves
1 (4 lb) boneless pork butt, trimmed and cut into 1 1/2-inch chunks

pepper
1/2 cup raisins
1/4 cup minced fresh cilantro
1 teaspoon grated lime zest
1 tablespoon fresh lime juice

Steps:

  • Microwave onions, chili powder, oil, garlic, tomato paste, and oregano in a bowl, stirring occasionally, until onions are softened, about 5 minutes; transfer to slow cooker.
  • Stir broth, coffee, tapioca, chipotles, sugar, and bay leaves into slow cooker.
  • Season pork with salt and pepper and nestle into slow cooker.
  • Cover and cook until pork is tender, 9-11 hours on LOW or 5-7 hours on HIGH.
  • Let chili settle for 5 minutes, then remove fat from surface using large spoon.
  • Discard bay leaves.
  • Stir in raisins and let sit until heated through, about 10 minutes.
  • Stir in cilantro, lime zest, and lime juice.
  • Season with salt, pepper, additional brown sugar, lime juice to taste and serve.

  • In a small bowl, combine the tomato paste, chili powder, vegetable oil and garlic. Microwave until fragrant, 30 seconds to 1 minute. Transfer the mixture to the bottom of the slow cooker. Pour the chicken broth, tapioca and brown sugar over the top.
  • Sprinkle the ribs with salt and pepper. Nestle the ribs into the slow cooker in a single layer, if possible. Cover and cook on low for 5 to 6 hours or high for 3 to 4 hours, until the pork is tender.
  • Use a large spoon or ladle to skim the surface of the chili and remove any excess fat. Use tongs to break up the ribs into 1-inch pieces. If needed, add hot chicken stock to adjust the consistency of the sauce. Stir in the cilantro, lime zest and lime juice.
