2 pounds red bliss potatoes
8 chicken thighs
8 ears corn
4 (2-pound) lobsters
2 pounds linguica sausage or chorizo
3 pounds soft shell clams or steamers

Steps:

  • Put the potatoes and the chicken thighs in a large pot. Cover with salted water and boil, skimming and discarding any scum that rises, for about 25 minutes or until the potatoes are soft and the chicken thighs are cooked through. Drain and set aside.
  • In the meantime, light the fire using hardwood charcoal. Place the corn in a large bowl of water and soak thoroughly, about 20 to 30 minutes.
  • When the coals are red in the center with ash around them, the fire is ready. Put the lobsters and corn on the rotisserie grill. Arrange the potatoes, chicken, and sausage on top of the grill and top with the clams. Cook for 45 minutes. Serve with melted butter.

1 1/2 pounds kielbasa
3 cups chopped yellow onions (2 large onions)
2 cups chopped leeks, well cleaned (2 leeks, white parts only)
1/4 cup good olive oil
1 1/2 pounds small potatoes (red or white)
1 tablespoon kosher salt
1/2 tablespoon freshly ground black pepper
2 dozen littleneck clams, scrubbed
2 dozen steamer clams, scrubbed
2 pounds mussels, cleaned and debearded
1 1/2 pounds large shrimp, in the shell
3 (1 1/2 pound) lobsters
2 cups good dry white wine

Steps:

  • Slice the kielbasa diagonally into 1-inch thick slices. Set aside. Saute the onions and leeks in the olive oil in a heavy-bottomed 16 to 20 quart stockpot over medium heat for 15 minutes, until the onions start to brown.
  • Layer the ingredients on top of the onions in the stockpot in this order: first the potatoes, salt, and pepper; then the kielbasa, little neck clams, steamer clams, mussels, shrimp, and lobsters. Pour in the white wine. Cover the pot tightly and cook over medium-high heat until steam just begins to escape from the lid, about 15 minutes. Lower the heat to medium and cook another 15 minutes. The clambake should be done. Test to be sure the potatoes are tender, the lobsters are cooked, and the clams and mussels are open. Remove the lobsters to a wooden board, cut them up, and crack the claws. With large slotted spoons, remove the seafood, potatoes, and sausages to a large bowl and top with the lobsters. Season the broth in the pot to taste, and ladle over the seafood, being very careful to avoid any sand in the bottom.

1 cup filtered water
2 cups dry white wine
4 tablespoons Old Bay Seasoning
1 stalk celery, cut in quarters crosswise
1 sprig parsley
1 sprig thyme
1 bay leaf
1/2 teaspoon whole black peppercorns
6 tablespoons organic unsalted butter, divided
2 bulbs garlic, cut in half crosswise
1 red onion, peeled and quartered
2 small potatoes, halved
1 lb precooked sausage (Andouille, linguica, or kielbasa), cut into 2" pieces
1 package dried Wakame seaweed
2 ears corn, husked and cut into thirds
2 lbs hardshell clams, scrubbed
1 Meyer lemon, halved
crusty sourdough bread

Steps:

  • Place the water, wine, Old Bay, celery, parsley, thyme, peppercorns, and 2 tablespoons butter in the Instant Pot.
  • Insert the steamer basket.
  • Press "Sauté" and "More" on the Instant Pot and bring to a boil.
  • Add the garlic, onions, potatoes, and sausage to the steamer basket, cover with the glass lid, and cook for 15 minutes.
  • Layer some dried seaweed on top of the vegetables and add the corn.
  • Place the clams on top. Cover and continue to cook until clams open.
  • Carefully remove the steamer basket from the pot.
  • Pour the contents of the steamer basket onto a large platter and add broth from the pot, discarding any unopened clams. Sprinkle Old Bay over.
  • Serve right away with crusty sourdough or garlic bread, melted butter, and lemon halves.

A hearty appetite is a must for this delicious, hearty chowder. The silky smooth stock boasts a rich clam flavor, tender chunks of potato, chewy clams, savory onions and herbs. Serve with oyster crackers and a freshly tossed green salad.

3 tablespoons butter
1 cup yellow onion, chopped
1/2 cup celery, chopped
2 cups red potatoes, bite-size chunks
2 (8 ounce) bottles clam juice
2 cups heavy cream
1 1/2 cups frozen corn, thawed
2 teaspoons fresh thyme, minced
1 bay leaf
2 (6 1/2 ounce) cans clams, minced and drained
1/2 lb hot Italian sausage, cooked and drained
6 slices bacon, crisp and crumbled
coarse salt, to taste
fresh ground black pepper, to taste
2 tablespoons all-purpose flour
2 tespoons sherry wine vinegar

Steps:

  • In a large stockpot, saute' the onion, celery, and potatoes in butter. Cook for about 10 - 12 minutes, or until the onions and celery are soft; stirring occasionally.
  • Add the next 8 ingredients to the pot, give a good stir. Season with salt and pepper.
  • In measuring cup, mix flour with a little bit of warm water to dissolve it and make it paste-like. Add flour mixture to pot and bring just to boiling. (If you want a thicker base, add a little bit more flour.).
  • Cover and simmer on low heat for 30 minutes. Stir in the sherry wine vinegar, simmer another minute or two.
  • Remove the bay leaves. Ladle into warmed soup bowls and serve hot with oyster crackers or crusty Italian bread.
  • SERVING TIP: Cut a lid out of a small round loaf of sourdough bread, just as you would a pumpkin. Hollow out most of the bread (save for breadcrumbs or toasted croutons). Toast the sourdouch round lightly in the oven; serve warm chowder inside the bread bowl.

When I was a child, I remember many of these at Jack's Island with my Dad's family. There are many variations to a bake. Add what you like and increase or decrease the amounts to suit the number of guests. Make sure you have lots of butter for melting, shellfish crackers to crack lobsters, and wetnaps! It is alot of work, but a big payoff in the end. Make a day of it and enjoy the "best of New England"! What a great family/friends memory!

20 (1 lb) lobsters
20 lbs fresh soft-shell clams or 20 lbs mussels
10 lbs fresh hard-shell littleneck clams
10 lbs fresh haddock or 10 lbs cod
20 medium white potatoes
20 medium sweet potatoes
20 ears corn
5 lbs sausage (Hot dogs,Bratwurst,Kielbsa,)
linguica sausage or Portuguese chourico
3 lbs whole onions, peeled
1 bushel fresh seaweed (wash with clean water)
cheesecloth

Steps:

  • Dig a whole in the ground approximately 2 feet wide, 4 feet long and 18-inches deep.
  • Line whole with stones and heat for 2-3 hours using wood and/or charcoal.
  • After 2-3 hours, remove coals and embers from stones and place 1/2 bushel fresh seaweed on top of the hot stones.
  • **REMEMBER: the stones must be extremely hot to achieve adequate steam to cook.
  • Now, work quickly to layer food on top of seaweed. Spread food evenly over each other in layers.
  • First, place soft shells clams on seaweed;.
  • Next, little necks;.
  • Next, sausage and fish; To make it easier for removal, place these ingredients in a cheesecloth bag.:.
  • Next, whole peeled onions, sweet and white potatoes;.
  • Finally, place Lobsters on top of all.
  • Cover food with clean white wet cloth and place remaining seaweed on top of cloth.
  • Now, cover entire back with a wet tarpaulin, sealing steam in created by hot stones and seaweed.
  • Only allow a samll amount of steam to escape to relieve pressure.
  • Allow bake to cook 1 or more hours until potatoes are soft.

This is a great way to enjoy a clambake without all the work of digging the whole, heating the rocks and packing the food in seaweed. The amounts of the foods can be altered to your liking (listed amounts are a per person approximation). It can be done outdoors in a big kettle placed on a propane burner. 1/2 white potatoes or 1/2 a whole red potatoes, scrubbed

  • The above ingredients are the average you should add for each person.
  • Put fish, potato, onion, and pork sausage on a square of cheesecloth, fold up to make a pouch and tie with kitchen string.
  • Put 1 to 1 1/2 inches of water into a large pot. Add steamers, littlenecks and/or mussels, hot dog and chourico. Leave husks on corn. Place corn on top of steamers. Place pouches of potatoes and fish on top of corn. Top with lobster. Cover.
  • Place on high heat until steaming, then lower heat and cook until the lobster is red. Time varies with the amount of ingredients. A bake for six takes about an hour.
  • TIP: Usually a potato placed on top of the whole boil helps to determine when the boil is done. If the potato is tender to fork touch, the rest of the food is cooked.
