4 oz bacon, 4 slices, chopped
2 cups onion, diced
1 cup celery, diced
1 cup carrot, diced
⅓ cup all-purpose flour
1 teaspoon black pepper
1 teaspoon dried thyme
4 cans minced clam, with juice
1 ½ cups chicken stock
2 potatoes, peeled and cubed
2 cups heavy cream
1 bay leaf
oyster cracker, for garnish

Steps:

  • Place a fine mesh strainer over a medium bowl and strain the 4 cans of minced clams, separating the meat from the juices.
  • Using a 6-quart dutch oven or pot of similar size, fry bacon over medium-high heat until fat renders and the edges begin to crisp.
  • Add onion and sauté until softened and translucent, about 3 to 5 minutes.
  • Reduce heat to low and add carrots, celery and flour, stirring constantly for 3-5 minutes to avoid lumps.
  • Add black pepper, thyme, reserved clam juices, chicken stock, diced potatoes, and bay leaf. Stir to incorporate, then cover and bring to a boil.
  • Reduce heat to a simmer and let cook until potatoes are tender, about 15 to 20 minutes.
  • Remove bay leaf and add cream. Allow chowder to simmer for an additional 10-20 minutes until soup has thickened to an appropriate consistency.
  • Add in reserved clam meat and cook for an additional 2-4 minutes.
  • Remove from heat and serve with oyster crackers
  • Enjoy!

Number Of Ingredients 12

4 dozen little neck or cherry stone clams, scrubbed
4 thick slices bacon, cut into lardons
1 large onions, cut into 1/4 inch dice
Kosher salt
11/2 pounds Yukon gold potatoes, cut into 1/2 inch dice
3 tablespoons flour
1 1/2 cups heavy cream
1 1/2 cups whole milk
1 bundle of thyme
2 bay leaves
1 to 2 shakes hot sauce, optional (recommended: Tabasco)
Extra-virgin olive oil

Steps:

  • Place the clams and 1 cup of water in a large pot. Cover and place over a high heat and cook the clams for 6 to 7 minutes. Uncover and remove the open clams.Cover the pot again and continue cooking the clams that haven't opened yet. Cook the clams for another 2 to 3 minutes. Turn off the heat and discard any clams that have not opened. Strain the liquid from the pot through a mesh strainer lined with a coffee filter and reserve.
  • Coarsely chop the clams and reserve.
  • Drizzle a few drops of olive oil into the bottom of the clam pot and toss in the bacon. Bring the pan to a medium heat. When the bacon has let off a lot of fat and become brown and crispy, toss in the onions and season lightly with salt. Cook the onions until they are very soft and aromatic but have no color, 7 to 8 minutes. Add the potatoes and cook for another 5 minutes.
  • Sprinkle the flour over the onions and potato mixture and stir to combine. Gradually whisk in the reserved clam juice. When the clam juice has been whisked in and there are no lumps, whisk in the milk and heavy cream and toss in the bay leaves and thyme. Taste for seasoning and adjust if needed. Bring to a boil and reduce to a simmer and simmer until the potatoes are cooked through, 10 to 15 minutes.
  • Toss in the reserved clams. Taste and re-season if needed and add hot sauce if using.

1 medium onion, chopped
2 (5 ounce) cans baby clams, with juice reserved
6 -7 potatoes, cubed
2 (10 1/2 ounce) cans cream of celery soup
1 cup heavy cream
1 cup milk
1 tablespoon butter
1 teaspoon dried dill weed

Steps:

  • Add bacon to sauce pan and cook on medium low heat until crispy.
  • Add onion and cook until translucent.
  • Add clam juice from both cans.
  • Add potatoes.
  • Cook and cover until potatoes are fork tender, about 15-20 minutes.
  • Stir occasionally so potatoes won't stick.
  • Add clams, soup, cream, milk, and dill weed.
  • Stir together.
  • Add butter and let melt into the chowder.
  • Cook for about 30-45 minutes or until thickened.
  • Stir occasionally.

2 cups water

2 ounces chopped celery
1 pinch dried thyme
4 bay leaves divided
2 whole black peppercorns
6 ounces apple-wood smoked bacon, cut into small pieces
2 large Spanish onions, medium diced
1 tablespoon dried thyme
1 teaspoon crushed red pepper flakes
4 ounces unsalted butter
3 Yukon gold potatoes, washed and medium diced
2 cups heavy cream
Salt and freshly ground black pepper
2 tablespoons freshly chopped parsley leaves
Oyster crackers, for garnish

Steps:

  • Wash the clams several times in cold water. Make sure all of the clams are closed. Discard any clams that remain open after you tap on the shell. In a large pot over high heat, add 2 cups of water, the onion, celery, thyme, 1 bay leaf, and the peppercorns. Add the clams, cover and steam until all of the clams open.
  • Remove the clams from the liquid and remove them from the shells. Chop the clams into small pieces and set aside. Strain the juice through a fine strainer and reserve.
  • Cook the bacon in a heavy bottom pot over medium heat, until rendered and crispy. Add the onions, remaining 3 bay leaves, the thyme, crushed red pepper and butter. Cook until the onions are translucent. Add the potatoes and the reserved clam juice. Cook until potatoes are tender.
  • Add the heavy cream and chopped clams and simmer for approximately 5 minutes. Lightly season with salt and pepper, to taste, and stir in the chopped parsley.
  • Serve in bowls with oyster crackers.

Steps:

  • Heat the oil in a medium saucepan and saute the onions, celery, bay leaves and black pepper until translucent. Add the clams and mix to combine.
  • Add the potatoes, wine, parsley, clam base and a quart of water to the pan and cook until the potatoes are tender.
  • Add the cream and milk and bring to a boil, about 10 minutes.
  • Meanwhile, make the roux: Melt the butter in a heavy-bottomed medium saucepan. Add the flour and cook, whisking continuously to prevent burning, until the mixture is pale golden with a nutty aroma, about 7 minutes.
  • Whisk the roux into the soup and bring to a boil. Add salt to taste.
  • Serve the clam chowder with oyster crackers.

4 quarts littleneck clams, well-scrubbed
1 cup water
1 clove garlic, minced
2 ounces salt pork, finely chopped
2 cups onions, chopped
3 tablespoons all-purpose flour
4 1/2 cups clam broth
3 cups fish stock
1 1/2 lbs potatoes, peeled and diced
2 cups light cream
oyster crackers (optional)

Steps:

  • Bring water to boil in large covered saucepot.
  • Add the clams and garlic Cook 6-10 min over med-high heat, or until the clams have just opened.
  • Drain clams, reserving the broth.
  • Strain the broth through coffee filters/cheesecloth to remove grit.
  • Remove the clams from their shells, chop finely.
  • In a large heavy saucepot, cook the salt pork over low heat until the fat is rendered and becomes liquid.
  • Using a slotted spoon, remove the"cracklings" and reserve them.
  • Add the onions to the fat; cook over med-high heat for 5-7 minutes, til softened but not browned.
  • Add in flour; cook for 3 minutes, stirring constantly.
  • Add the reserved clam broth, the 4-1/2 c.
  • of clam broth and the fish stock; whisk to remove lumps.
  • Bring the liquid to a boil; add potatoes, Reduce heat, simmer for about 15 minutes or until the potatoes are cooked through.
  • Stir in the clams, salt pork and the light cream.
  • Heat chowder to desired temperature.
  • Serve with oyster crackers.

6 strips bacon, cut into 1-inch pieces
2 celery stalks, peeled to remove strings and cut into 1/4 dice
1 cup small pearl onion, peeled
3 tablespoons all-purpose flour
2 cups unsalted clam juice
4 small Yukon Gold potatoes, (about 1 pound), peeled and cut into 1/2-inch dice
2 bay leaves
1/4 teaspoon freshly ground black pepper
5 large sprigs fresh thyme
8 pounds quahog clams, shucked, liquid reserved, and chopped into 1/2-inch pieces (2 pounds shucked clams)
2 fresh ears yellow corn, kernels removed
2 1/2 cups milk
2 tablespoons unsalted butter
1 teaspoon salt
1 tablespoons dry sherry, (optional)

Steps:

  • In a stockpot, cook bacon until crisp. Drain bacon on a paper towel, and set aside; discard all but 2 tablespoons bacon fat. Add celery and onions; saute, stirring occasionally with a wooden spoon, until translucent, about 7 minutes.
  • Sprinkle flour over onion mixture; cook, stirring with a wooden spoon, 2 to 3 minutes. Add clam juice, 1/2 cup water, potatoes, bay leaves, and 1/8 teaspoon of the pepper; cover; bring to a boil. Pick thyme leaves from stems; add both leaves and stems to pot. Reduce heat to medium low; simmer until potatoes are almost fork tender, about 12 minutes.
  • Add clams and reserved liquid, cover, and cook 4 minutes over medium heat. Add corn kernels, cover, and cook 4 to 6 minutes. Add milk and butter; cook until butter melts, about 5 minutes. Remove bay leaves and thyme stems; add remaining 1/8 teaspoon pepper and salt.
  • Drizzle with sherry, and garnish with bacon pieces. Serve immediately.

2 ounces butter
1 large onion, diced

1/2 cup instant mashed potatoes
4 chef potatoes, peeled and chopped
1 quart clam juice
3 cups chopped clams
1 1/2 cups half-and-half
1/4 cup fresh parsley, chopped
1 drop Tabasco sauce
1/2 teaspoon celery salt
1/2 teaspoon thyme
1 bay leaf
2 tablespoons chopped parsley (garnish)

Steps:

  • Melt butter and bacon fat in large pot.
  • Sautee onion, celery garlic (and 1/2 cup shredded carrots, if using) until tender.
  • Add seasonings (parsley, Tabasco, celery salt, thyme & bay).
  • Add flour and instant mash potatoes.
  • Turn off flame and stir until flour is no longer visible.
  • Add the clam juice and stir.
  • Turn flame back on to high and continue stirring (constantly) to avoid sticking.
  • Bring to a boil.
  • Add potatoes and stir.
  • Cook for 15 minutes or until potatoes are tender.
  • Add clams.
  • Stir.
  • Add cream.
  • Stir.
  • Simmer for 1/2 hour.
  • Add salt and pepper, to taste.
  • Serve garnished with fresh parsley and enjoy!
