1 pint fresh strawberries, sliced
3 bananas, sliced
1 ½ cups white sugar
1 teaspoon lemon juice
1 tablespoon ground cinnamon
2 teaspoons ground nutmeg
½ cup all-purpose flour
½ cup vital wheat gluten
1 double crust ready-to-use pie crust

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Place the blueberries, strawberries, and sliced bananas into a mixing bowl. Sprinkle with the sugar, lemon juice, cinnamon, nutmeg, flour, and gluten; mix gently. Pour the fruit mixture into the pie shell, cover with the top crust, and pinch the seams shut. Cut slits in the top crust with a knife to create slots for the steam. Place the pie onto a baking sheet to catch drips.
  • Bake in the preheated oven until golden brown, about 35 minutes.

You can use three jammy berry fillings - strawberry, raspberry and blackberry - to create a beautiful, naturally colored ombré effect in a pie. Pre-cooking the fillings helps ensure that they're thick enough to easily slice once they're baked. You need to keep a close eye on the fruit here, so don't be tempted to make more than one filling at a time. Berries can vary in juiciness, so it's very important to make sure you have the right amount of each filling before assembling the pie (see the Note at the bottom of the recipe for how to adjust your filling if it's too thin or too thick). The pie is best the day it's baked, but the fillings can be made up to 2 days ahead; stir well before using.

Egg wash (1 large egg mixed with 1 tablespoon water)
14 ounces/400 grams blackberries (about 3 cups)
5 tablespoons/65 grams granulated sugar
3 tablespoons cornstarch
1 teaspoon vanilla extract
3 tablespoons heavy cream
14 ounces/400 grams raspberries (about 3 cups)
5 tablespoons/65 grams granulated sugar
3 tablespoons cornstarch
1 teaspoon vanilla extract
3 tablespoons heavy cream
14 ounces/400 grams stemmed and quartered strawberries (about 3 cups)
5 tablespoons/65 grams granulated sugar
2 1/2 tablespoons cornstarch
1 teaspoon vanilla extract
4 tablespoons heavy cream

Steps:

  • On a lightly floured surface and using a lightly floured rolling pin, roll out a disk of dough into a circle about ¼-inch thick. Starting at one end, gently roll up the dough onto the rolling pin. Unfurl the dough over a 9-inch pie plate, preferably ceramic, and press it in lightly, making sure it's lining the plate.
  • Trim so that there's about ½ inch of excess dough hanging over the edge of the pie plate. (If the dough feels warm, refrigerate it for 15 minutes.) Tuck the excess dough under itself so it is flush with the edge of the pie plate; leave the pie like this for a straight-edge finish, or crimp as desired. Dock the base and sides all over with a fork and refrigerate at least 30 minutes, and up to 2 hours.
  • Place a rack on the bottom shelf of the oven, and place a baking stone, if you have one, on the rack. Heat the oven to 425 degrees. Use a small brush to evenly paint egg wash on the edge of the crust. Cut a square of parchment paper and use it to line the crust. Fill with pie weights (or dried beans) up to the top edge. Place the plate on a baking sheet lined with parchment or foil.
  • Transfer the baking sheet to the oven, placing it directly on the baking stone if using. Bake crust until the outer edge is just starting to turn golden brown, 12 to 15 minutes. Remove the parchment and pie weights, and continue to bake until the base appears set, 2 to 4 minutes more. If the dough puffs up anywhere, you can puncture it with a fork. Cool the crust completely. Reduce the oven temperature to 400 degrees.
  • Make the blackberry filling: Mix the blackberries and 2 tablespoons sugar in a medium pot over medium heat. Cook, stirring occasionally, until the berries begin to break down, 8 to 10 minutes. Mash with a potato masher or large fork until the mixture resembles a coarse purée. You should have 1 ¾ cup (if you have more or less, see Note below). In a small bowl, whisk the remaining sugar and cornstarch to combine. Add to the pot and cook, stirring constantly, until the mixture thickens, 1 to 2 minutes. (The filling should be thick, like jam from a jar at room temperature; it will thicken slightly more when cooled, as will the two other berry fillings below.) Cool completely, then whisk in vanilla and cream. Set filling aside and rinse out the pot.
  • Make the raspberry filling: Mix the raspberries and 2 tablespoons sugar in a medium pot over medium heat. Cook, stirring occasionally, until the berries begin to soften and break down, about 3 to 5 minutes. Mash until the mixture resembles a coarse purée. You should have 2 cups of purée (if you have more or less, see Note). In a small bowl, whisk the remaining sugar and cornstarch to combine. Add to the pot and cook, stirring constantly, until the mixture thickens, 1 to 2 minutes. Cool completely, then whisk in vanilla and cream. Set filling aside and rinse out the pot.
  • Make the strawberry filling: Mix the berries and 2 tablespoons sugar in a medium pot over medium heat. Cook, stirring occasionally, until the berries begin to soften and break down, 4 to 5 minutes. Mash until the mixture resembles a very coarse purée. You should have 1 ¾ cups of purée (if you have more or less, see Note). In a small bowl, whisk the remaining sugar and cornstarch to combine. Add to the pot and cook, stirring constantly, until the mixture thickens, 1 to 2 minutes. Cool completely, then whisk in vanilla and cream.
  • Working with one filling at a time, spoon each filling into the crust in thick stripes: Put the blackberry and strawberry fillings (the two sides) in first, using a little more than half of each. Then spoon the full amount of the raspberry filling into the center. After the raspberry is in, spoon the remaining blackberry and strawberry fillings on top on their respective sides. Take care to fill just to the inner edge of the crust (you may have leftover filling). The fillings should be thick enough that they stay where you put them, but a small amount of spreading is normal. Use the tip of a knife to swirl the fillings wherever they meet, then use a small offset spatula or a silicone spatula to spread them evenly flat.
  • Place the pie plate on a parchment- or foil-lined baking sheet and transfer it to the 400-degree oven, placing directly on top of the baking stone if using. Bake until the crust is golden brown and the filling appears evenly set on the surface, 35 to 40 minutes; start checking the pie after 30 minutes of baking to be sure it doesn't bubble over. When ready, the surface will form a skin and look set, but it will move slightly when the pie is wiggled. If the crust or the surface of the berries begin to look too dark, tent the pie with foil in the last 5 to 10 minutes of baking.
  • Let pie cool completely on a rack, at least 5 hours, before serving. The pie is best the day it is baked; store leftovers at room temperature, wrapped tightly in plastic wrap.

Filling
3 cups fresh strawberries
3 cups fresh blackberries
3 cups fresh raspberries
2 tablespoons Grand Marnier
1/2 cup firmly packed brown sugar
1/4 cup cornstarch
1 1/2 teaspoons cinnamon
Crumb Topping
2/3 cup flour
2/3 cup whole oats
2/3 cup firmly packed brown sugar
2/3 cup walnuts
1/2 cup (1 stick) cold butter

Steps:

  • On a lightly floured board, roll out the dough (it may need to soften for 5 or 10 minutes first) into a 12-inch circle. Fit into a 9-inch pie pan, trim any ends hanging over the side, and flute the edge with your thumb. Chill until ready to use.
  • Preheat the oven to 350°F.
  • For the filling, wash and hull the strawberries. Cut them in half and place in a large bowl. Add the blackberries and raspberries and toss with the Grand Marnier. In a separate bowl, combine the brown sugar, cornstarch, and cinnamon. Add to the berries and gently toss.
  • For the topping, combine the flour, oats, brown sugar, walnuts, and butter in the bowl of a food processor. Pulse until the mixture resembles small peas. To make by hand, cut the butter into the flour and sugar, using a pastry cutter. Finely chop the walnuts and add in along with the oats.
  • Fill the chilled pie shell with the filling and cover thoroughly with the topping. Bake for 1 hour, until bubbling and golden brown on top.

2 cups all-purpose flour
½ teaspoon salt
⅔ cup shortening, chilled
6 tablespoons cold water
1 cup fresh strawberries, halved
2 cups fresh raspberries
1 ½ cups fresh blueberries
½ cup white sugar
3 tablespoons cornstarch

Steps:

  • Combine the flour and salt. Using a pastry blender, cut in the shortening until the pieces are the size of small peas. Sprinkle 1 tablespoon of the water over part of the mixture, then gently toss with a fork. Push moistened portion to the side of the bowl. Repeat, using 1 tablespoon of water at a time, until all is moistened. Divide the dough in half. Form each half into a ball and flatten slightly. Wrap in plastic and refrigerate for at least 30 minutes.
  • Transfer one piece of dough to a lightly floured surface. Roll the dough from the center to the edges to form a 12-inch circle. Wrap the crust around the rolling pin. Unroll it onto a 9-inch pie plate. Ease the crust into the pie plate, being careful not to stretch it. Trim the bottom crust evenly with the rim of the pie plate, and return the pastry-lined pie plate to the refrigerator.
  • In a large mixing bowl, stir together the sugar and cornstarch. Add the strawberries, raspberries, and blueberries; gently toss until berries are coated. Allow fruit mixture to stand for about 15 minutes.
  • Preheat the oven to 375 degrees F (190 degrees C). Place a baking sheet in the oven to preheat.
  • Roll out the remaining pastry for the top crust. Stir the berry mixture and pour the filling into the pastry-lined pie plate. Place the top crust over the pie and trim the edges, leaving a 1/2-inch overhang. Fold the top crust under the bottom crust, pressing lightly to seal. Crimp the edges of the crust and cut vents in the top to allow steam to escape. To prevent over-browning, cover the edge of the pie with foil.
  • Bake in the preheated oven on the baking tray for 25 minutes. Remove the foil.
  • Bake for an additional 20 to 30 minutes, or until the filling is bubbling and the crust is golden. Cool on a wire rack.

You just can't beat this easy and delicious homemade Triple Berry Pie! It holds together perfectly every single time, and you can use fresh or frozen blueberries, raspberries and blackberries.

homemade pie crust (for a 9'' deep dish pan. This recipe makes 2 crusts: one for the bottom and one for the to)
7 cups fresh or frozen raspberries, blueberries and blackberries (about 2 1/3 cups of each type of berry*)
1 cup granulated sugar ((plus a little extra to sprinkle on top of the pie))
1 Tablespoon lemon juice
4 Tablespoons cornstarch
2 Tablespoons butter
1 large egg white (beaten with a fork)

Steps:

  • Cook berries: Add berries, sugar and lemon juice to a large saucepan over medium heat.
  • Simmer, until warm and juicy, about 5-10 minutes, gently stirring occasionally. (You can taste it at this point and see if it's sweet enough for your liking. I don't like to make mine too sweet, but if you want it sweeter you can add 1/4 cup more sugar.)
  • Thicken filling: Spoon out about 1/2 cup of the juice from the pan into a bowl. Stir cornstarch into the juice until smooth.
  • Bring pot of berries back to a simmer and slowly pour in the cornstarch. Gently stir mixture (being careful not to mash the berries), until thickened, about 2-5 minutes.
  • Cool and add to pie shell. Remove from heat and stir in the butter. Allow to cool for 15 minutes. Pour mixture into unbaked pie shell (in a 9 in deep dish pan).
  • Add lattice top or a whole top with holes pricked on top for steam to escape. (See directions for lattice crust below).
  • Pinch the edges of the top and bottom pie crusts together and crimp the edge, if you like. Brush a thin layer of beaten egg white over the top of the pie and sprinkle lightly with sugar.
  • Bake at 400 degrees F for 40-45 minutes. Check it after about 25 minutes and place a piece of tinfoil over it if the top crust is getting too brown.
  • Remove to a wire cooling rack and allow to cool for several hours. Once cooled completely, you can cut into it or cover it and refrigerate it overnight to serve the next day.

Steps:

  • Make the crust: Pulse the flour, granulated sugar and salt in a food processor to combine. Add the shortening and pulse a few times until coarse crumbs form. Pulse in the butter until just combined with some pea-size pieces remaining. Pulse in the vinegar and 2 tablespoons ice water until the dough starts to come together but is still crumbly, adding up to 2 more tablespoons ice water if needed. Turn out the dough onto a piece of plastic wrap and pat into a disk. Wrap and refrigerate until firm, at least 1 hour or overnight.
  • Meanwhile, make the topping: Combine the oats, flour, brown sugar, salt, cinnamon and allspice in a medium bowl. Work in the butter with your fingers until clumps form. Refrigerate until ready to assemble the pie.

1 pint blueberries
3 peaches
1/4-cup plus 1 Tbs. sugar
2 8-inch commercial piecrusts, refrigerated or defrosted frozen
2 Tbs. unsalted butter
1 egg yolk
1 Tbs. water

Steps:

  • Preheat oven to 400F. Line a baking sheet with parchment paper. On a lightly floured work surface, press crusts together and roll out to a diameter of 14 inches. Transfer to parchment-lined baking sheet.
  • Cut each peach into eight slices (24 slices total). In a bowl gently fold cut peaches and berries together with 1/4-cup sugar to coat, being careful not to crush berries. Gently spoon fruit mixture in to the center of the pie dough round and spread out from the center to about 10-inches. Fold the edges of the piecrust dough up over the fruit, pleating the edges as you go around.
  • Whisk together egg yolk and water. Brush pleated edges of pie with egg mixture and sprinkle the remaining tablespoon of sugar over crust. Break butter into small pieces and place all around the pie. Bake for 30-35 minutes or until the edges are golden brown.

Steps:

  • Preheat oven to 400 degrees.
  • In a large mixing bowl combine the blackberries, blueberries, raspberries, sugar, flour, cornstarch, lemon juice, lemon zest, and vanilla. Toss to combine until evenly coated. Place in refrigerator until needed.
  • In a medium mixing bowl combine the oats, brown sugar, flour, cinnamon and salt. Mix, then using a pastry blender, cut in the butter until pea-size clumps form. Place in refrigerator until needed.
  • Roll out or place a pre-made pie crust into a 9-inch pie dish. Press gently into the bottom of the pan, then flute the edge or crimp using a fork.
  • Add cold filling, then sprinkle on the topping. It will be a generous amount.
  • Place in the oven and bake for 30 minutes, then cover with foil and continue baking for 20-25 minutes. Tent the foil at the 45 minute mark to prevent the crust and topping from getting too brown.
  • Remove from the oven and allow the pie to cool at room temperature for 2 1/2 hours before serving, or allow the pie to cool at room temperature for 1 hour, then 1 hour in the refrigerator before serving.

Nepenthe restaurant, located in Big Sur, California, was one of my favorite hangouts when I lived there. This is what they say: This is one of the best desserts we've ever served. 1 1/2-2 teaspoons cinnamon
3/4 cup all-purpose flour
1 tablespoon all-purpose flour
1/2 teaspoon sugar
1 pinch salt
7 tablespoons cold unsalted butter (or 3 1/2 oz)
1 -3 teaspoon heavy cream
3/4 cup walnuts
3/4 cup all-purpose flour
3/4 cup rolled oats
3/4 cup brown sugar
1 cup cold unsalted butter

Steps:

  • Filling:.
  • Defrost frozen berries in a colander to drain excess juice.
  • To make crust:.
  • With first four ingredients for crust in food processor, pulse until garbanzo bean sized chunks are formed. Bring dough together with cream.
  • Chill up to ½ hour, roll out and fit into 10"pie pan, flute edges.
  • To make nut topping:.
  • Pulse all ingredients in food processor until garbanzo bean sized chunks are formed.
  • To prepare pie:.
  • Mix filling ingredients together, let sit five minutes, fill in prepared crust, top with nut crumb topping(you may have more topping than you need), covering all berries.
  • Bake in a preheated 350 degree oven until golden brown and bubbling like crazy, 35-45 minutes!

Really, I just made this up a few days ago, and it resulted in one of the most amazing pies I've ever eaten. I usually am very critical and not completely happy with recipes I come up with on my own, but this one is truly a sensation!

2 unbaked pie crusts (I make my own, store-bought works great too)
4 cups strawberries, washed and sliced
2 cups raspberries, rinsed
1 cup blackberry, rinsed
1/2 cup brown sugar
1/2 cup granulated sugar
1/4 cup cornstarch
1 teaspoon cinnamon
1/4 teaspoon salt
1 orange, zest of

Steps:

  • Preheat oven to 400. Combine the berries with a 1/4 cup of sugar and let stand over a sieve for a half hour to drain some of the liquid. Combine the rest of the ingredients minus the crust. Using a 9 inch pie plate, arrange your crust and spoon the filling inches Place the second crust over and crimp edges. Make sure to cut a vent into the dough or use a pie bird. You can also do a lattice top pie which is just gorgeous and is what I did.
  • You can brush the top of the pie with a mix of one egg yolk and a teaspoon of water (which makes for a lovely golden brown crust).
  • Bake for 20 minutes at 400 and then bake at 350 for another 40-50 minutes. Remove when crust is golden brown.

  • Prepare the pie dough according to recipe directions and chill for at least 1 hour. Roll out one disk of dough to roughly a 12″ wide circle, about 1/4″ thick. Place dough into a 9″ pie plate and lightly cover with plastic wrap. Similarly roll out the second disk of dough and use a (fluted or straight edged) pastry or pizza cutter to cut out 12 3/4″ sized strips for the lattice. Place dough strips on a large baking sheet and cover with plastic wrap. Place all prepared dough back into the fridge while preparing the filling.
  • Gently wash and dry the berries. In a large bowl, whisk together the sugar, cornstarch, and salt. Add in the berries, lemon juice and vanilla and toss gently to evenly coat. Place the filling into the prepared pie dough and dot with diced butter.
  • Lay 6 dough strips evenly spaced across the top of the pie. Rotate the pie about a 60 degree angle and place remaining 6 dough strips on top in a lattice pattern, alternating the dough strips over and under the previously placed dough strips. Trim any overhanging dough to 1/2 inch beyond the pie plate. Pinch the latticed dough and base layer of dough together and tuck the overhanging dough under itself so it is flush with the edge of the pie plate. Use your fingers to crimp the outside edge of the dough.
