Southern Wilted Lettuce Salad With Hot Bacon Dressing image

This old-fashioned wilted lettuce salad (aka kilt lettuce) is served with a tangy hot bacon dressing. It's a very simple salad and a Southern classic.

For the Salad:
8 cups shredded lettuce ( iceberg or romaine)
3 to 4 green onions (chopped)
Kosher salt (to taste)
Freshly ground black pepper (to taste)
5 strips bacon
For the Dressing:
2 tablespoons bacon drippings (melted)
2 tablespoons apple cider vinegar (or white vinegar)
1 tablespoon sugar

Steps:

  • Gather the ingredients.
  • Combine the shredded lettuce and chopped green onions in a large bowl. Sprinkle with salt and pepper.
  • In a cast-iron or other frying pan, cook the bacon over medium-high heat until the desired doneness.
  • Remove the bacon to paper towels to drain and reserve 2 tablespoons of the bacon drippings.
  • Combine the bacon drippings, vinegar, and sugar in a saucepan and heat until it boils.
  • Pour over the shredded lettuce mixture. Toss to mix. Crumble the bacon and add it on top. Serve at once.

1/4 cup olive oil
2 tablespoons rice vinegar
1 tablespoon reduced-sodium soy sauce
1 tablespoon sesame oil
2 teaspoons minced fresh gingerroot
1 small garlic clove, minced
1 teaspoon sugar
BEEF:
1 tablespoon reduced-sodium soy sauce
2 garlic cloves, minced
2 teaspoons sugar
1 to 2 teaspoons crushed red pepper flakes
1 teaspoon sesame oil
1 beef top sirloin steak (1 pound), cut into 1/4-inch strips
1 tablespoon olive oil
SALAD:
8 cups torn mixed salad greens
1 cup shredded carrots
1/2 cup thinly sliced cucumber
4 radishes, thinly sliced

Steps:

  • For dressing, whisk together first 7 ingredients., Mix first 5 beef ingredients; toss with beef strips. In a large cast-iron or other heavy skillet, heat olive oil over medium-high heat; stir-fry beef mixture until browned, 2-3 minutes. Remove from pan., Combine salad ingredients; divide among 4 plates. Top with beef. Drizzle with dressing.

1/4 cup brown sugar
2 tablespoons mushroom soy sauce
2 teaspoons garlic, chopped
1 teaspoon cornstarch
1 teaspoon orange zest
1 lb ground lamb, coarse (from leg or shoulder)
2 tablespoons peanut oil
2 tablespoons peanut oil
1 tablespoon ginger, minced
1 tablespoon garlic, minced
2 tablespoons green onions, minced
1/2 teaspoon crushed red pepper flakes
1 ounce rice wine
1 tablespoon cornstarch, dissolved in 1/4 cup water
2 ounces rice noodles, soaked in water for 20 minutes
4 ounces shiitake mushrooms, stems discarded, thinly sliced
1 small onion, peeled and thinly sliced
1 medium carrot, peeled and julienned
1 red bell pepper, cored, seeded, and julienned
salt & freshly ground black pepper, to taste
1/2 cup basil leaves, chiffonade
1 tablespoon sesame oil
1 tablespoon soy sauce
40 wonton wrappers
1 egg, lightly beaten, for egg wash
peanut oil, for deep frying
1/4 cup finely chopped green onion
1/4 cup sweet chili sauce
1/2 lime, juice of

Steps:

  • Combine the sugar, soy, garlic, cornstarch, and orange zest in a large bowl. Add the lamb and mix well. Cover and refrigerate for at least 1 to 2 hours.
  • Heat a wok over high heat. When the wok is hot, add 2 tablespoons of the peanut oil and heat until just smoking. Add the ginger, garlic, green onions, and red pepper flakes and stir-fry until fragrant, around 30 seconds.
  • Add the lamb and stir-fry until well browned, about 5 minutes. Sprinkle with the rice wine and bring to a simmer. Stir in the cornstarch mixture and bring to a simmer to thicken. Remove from the heat and set aside to cool.
  • Drain the rice noodles and roughly chop. Set aside. Wipe out the wok and heat over high heat. Add the remaining 2 tablespoons peanut oil and heat until just smoking. Add the mushrooms, onion, carrot, and bell pepper and stir-fry until the vegetables just begin to soften, but still have some crunch, about 3 minutes. Season with salt and pepper, to taste. Remove the heat and cool.
  • Combine the cooled vegetables, cooled lamb, reserved noodles, basil, sesame oil, and soy sauce and mix well.
  • Place 1 egg roll wrapper on a flat surface in front of you with 1 point facing you so the wrapper is in a diamond shape. Make sure the unused wrappers are covered with a damp cloth. Brush all of the edges with egg wash.
  • Place 1 to 2 tablespoons of the filling about 1/3 of the way up the wrapper. Fold the point over the filling. Fold in the sides and then roll up. Press to seal. Repeat with the remaining ingredients. If you are going to hold these for a while before frying, dust with cornstarch so they don't get soggy.
  • Combine dipping sauce ingredients and chill.
  • Preheat 3 inches of peanut oil in a deep pot to 360°F Fry the egg rolls, a few at a time, until golden brown on all sides, about 4 to 5 minutes. Drain on paper towels. Serve whole or cut in half diagonally. If you want the halved rolls to stand up, Cut a small piece off either end with a serrated knife to make a flat surface. Serve with Dipping sauce.

Number Of Ingredients 9

1 egg
6 slices bacon
½ cup sliced onion
¼ cup white wine vinegar
¼ cup water
4 teaspoons white sugar
½ teaspoon salt
8 cups leaf lettuce - rinsed, dried and torn into bite-size pieces
8 radishes, thinly sliced

Steps:

  • Place egg in a saucepan and cover with cold water. Bring water to a boil; cover, remove from heat, and let egg stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside. Reserve excess grease.
  • Add onions to skillet with reserved grease and cook until tender. Add bacon, vinegar, water, sugar and salt. Stir and bring to boil.
  • Place lettuce in a large bowl. Pour hot dressing over and toss well. Garnish with egg and radishes.

5 bacon strips
8 cups torn salad greens
2 hard-boiled large eggs, chopped
2 green onions, sliced
1/2 cup sugar
1/2 cup vinegar
1/2 teaspoon seasoned salt
1/2 teaspoon garlic powder
1/4 teaspoon ground mustard

Steps:

  • In a skillet, cook bacon until crisp. Remove the bacon; crumble and set aside. Drain, reserving 1/4 cup drippings. In a large bowl, combine the greens, eggs, onions and bacon. Add remaining ingredients to the drippings; bring to a boil. Drizzle over the salad and toss to coat. Serve immediately.

I love and eat lettuce so much that in Greek everybody calls me "katsika" or female goat. Girls, eat this to maintain your figure and who cares if they call you a female goat cause you're ingesting this, at least they're not calling you that other female creature name that most of us get pinned with. Hmph. Oh, and note to non-Hellenes: Do not RIP or HALVE your head of lettuce and serve it like that. It doesn't fit in your mouth like that unless your Mr.Jagger! You have to finely slice it. Sorry to sound like a snot rag, but I hate ordering salads here because the lettuce is cut so big, the dressing splatters into my eye as I'm chewing, and ugh disaster. Cut your lettuce so it takes on an almost "shredded" look--Please.

1 head romaine lettuce
2 -3 scallions
1 cucumber
1/2 bunch dill
1/2 cup olive oil
1/4 cup lemon juice
salt

Steps:

  • Nicely chop your lettuce as described in my complaint above.
  • Make sure your lettuce is clean and devoid of any 6-legged creatures a.k.a "insects" that might pass as a piece of oregano.
  • You may slice your scallions on a bias if you want to give the salad a gourmet flair.
  • Slice your cucumber and pray that the seeds are not to ginormous. If they are, save this cucumber for tzatziki and try to find a nicer one with small seeds.
  • Chop your dill.
  • Place all ingredients in a bowl and toss.
  • For the dressing just whisk and then dress the salad evenly coating the lettuce leaves.
  • Add more dressing if desired.
