BLUEBERRY AND NECTARINE COBBLER

Blueberry and Nectarine Cobbler image

When adding juicy summer fruit (like blueberries) to pies and cobblers, you generally need something to help the fruit coalesce into a sauce. We love instant tapioca, as it thickens while fading into the background, letting the fruit shine.

Provided by Food Network Kitchen

Categories     dessert

Time 1h15m

Yield 8 servings

Number Of Ingredients 12

6 ripe nectarines, about 1 pound
2 cups fresh blueberries
1 cup sugar
1 tablespoon instant tapioca
2 tablespoons unsalted butter, diced into small pieces, plus more for the pan
1 1/2 cups all-purpose flour
1/3 cup sugar
2 1/4 teaspoons baking powder
1/2 teaspoon fine salt
6 tablespoons cold unsalted butter, diced into small pieces
1 large egg
1/2 cup heavy cream

Steps:

  • Position a rack in the middle of the oven and preheat to 375 degrees F.
  • For the fruit: Halve the nectarines along their natural seam, but leave skins on. Cut each half into 3 wedges. Toss nectarines with blueberries, sugar, and tapioca and put into a buttered 9-inch round gratin or casserole dish. Dot the top of the fruit with the pieces of butter.
  • For the cobbler top: Whisk the flour, sugar, baking powder, and salt in a medium bowl. Rub in 2 tablespoons of the butter with your fingertips until no visible pieces remain. Rub in the remaining 4 tablespoons butter just until it is in even, pea-size pieces. Whisk together the egg and cream and stir into the dry ingredients to make a shaggy, loose dough.
  • Spoon large spoonfuls of dough on top of the fruit in clumps (it should look like rough, old-fashioned cobblestones, hence the name cobbler). Bake until golden brown and a toothpick inserted in the center of the topping comes out clean, about 1 hour. Cool cobbler on a rack, about 20 minutes.
  • Serve warm or room temperature, with vanilla ice cream or whipped cream, if desired.
  • Serving suggestions: Vanilla ice cream or whipped cream.

This recipe uses up those stone fruits in a way that elevates them without being too fussy. It's pretty enough to be a treat for house guests, but still easy enough to make for an indulgent breakfast.

PEACH COBBLER WITH SUGAR COOKIE CRUST

Peach Cobbler With Sugar Cookie Crust image

While we were vacationing with friends in Duck, N.C. we bought a bushel of peaches. I was requested to make a cobbler with them, and I researched the internet for the perfect recipe to WOW everyone.I thought the boiling water in the dough was unique and decided to try this recipe that I adapted from All.Recipes.com turned out to be the hit of the vacation. I double the recipe and put in 9 x 13 pan.

Time 1h

Yield 4 serving(s)

Number Of Ingredients 16

8 fresh peaches, peeled, pitted and sliced into thin wedges (I have only used fresh)
1/4 cup white sugar
1/4 cup brown sugar
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 teaspoon fresh lemon juice
2 teaspoons cornstarch (I used flour)
1 cup all-purpose flour (I used self-rising and omitted the baking powder)
1/4 cup white sugar
1/4 cup brown sugar
1 teaspoon baking powder
1/2 teaspoon salt
6 tablespoons unsalted butter, chilled and cut into small pieces
1/4 cup boiling water
3 tablespoons white sugar
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • In a large bowl, combine peaches, 1/4 cup white sugar, 1/4 cup brown sugar, 1/4 teaspoon cinnamon, nutmeg, lemon juice, and cornstarch.
  • Toss to coat evenly, and pour into a 2 quart baking dish.
  • Bake in preheated oven for 10 minutes(I cooked filling on top of stove until thickened).
  • Meanwhile, in a large bowl, combine flour, 1/4 cup white sugar, 1/4 cup brown sugar, baking powder, and salt.
  • Blend in butter with your fingertips, or a pastry blender, until mixture resembles coarse meal.
  • Stir in water until just combined.
  • Remove peaches from oven, and drop spoonfuls of topping over them.
  • Sprinkle entire cobbler with the sugar and cinnamon mixture.
  • I sprinkled only a little bit, since it was turning the top too brown for my taste.
  • Bake until topping is golden, about 30 minutes.

  • In a food processor, combine the flour, baking powder, and salt. Scatter the chilled butter cubes over the flour mixture and pulse until the mixture resembles coarse crumbs. Do not over process. Transfer the flour mixture to a large bowl and add 1/2 cup of the sugar and the cream, mixing with a wooden spoon just until the dough comes together. Cover the bowl with a kitchen towel and let rest while preparing the filling.
  • Bring a large pot of water to a boil. Using a paring knife, cut a small "X" into the skin of the peaches and nectarines. Drop the peaches and nectarines into boiling water. As soon as the "X" curls away from the fruits, about 40 seconds, remove them from the water with tongs or a slotted spoon. When cool enough to handle, pull the skin away from the flesh and cut the peaches and nectarines into 1/2-in thick slices.
  • In a large bowl, toss the peach and nectarine slices with the cornstarch, the remaining 1/4 cup sugar, cinnamon, and nutmeg. Spoon the fruit into the prepared baking dish. Cover the fruit with heaping tablespoons of the cobbler dough.
