WHITE CHOCOLATE PEPPERMINT CRUNCH

- Line a baking sheet with parchment or waxed paper. In a microwave, melt candy coating; stir until smooth. Stir in butter and oil until blended. Stir in candies. Spread to desired thickness on prepared pan., Refrigerate until firm. Break into pieces. Store in an airtight container in the refrigerator.

- Basic Candy:Preheat oven to 375°F (190°C).Bake potato for about 40 minutes.Cool completely and scoop out its flesh.Alternately, the potato can be boiled and mashed, then left on the burner to dry out.Gradually mix in icing sugar and vanilla, until dough is workable, adding sugar as needed.Roll the dough out thin, spread with peanut butter and roll up.Refrigerate then slice.Variations:Variation 1: Pinch off a walnut-sized bit of dough (about 2 tsp./10 mL), roll into a ball, flatten slightly and top with a half nut or dried fruits.Variation 2: Mix chocolate chips, chopped nuts or chopped dried fruit or a combination of these into the dough. Crushed peppermint candies are also good. Mix them into the dough. Shape dough into balls, which can be flattened or not as desired.Potato candies, whether basic or a variation, can be dipped in melted chocolate.

- In a small saucepan, melt chocolate chips with 3/4 cup condensed milk over low heat, stirring occasionally. Line an 8-in. square dish with waxed paper; butter the paper. , Spread half of melted chocolate mixture into pan; chill for 5-10 minutes (let remaining melted chocolate mixture stand at room temperature). , In another saucepan, melt white baking chips. Stir in remaining condensed milk until smooth. Remove from the heat; add extract and food coloring. Refrigerate until set. Spread over chocolate layer; spread with reserved chocolate mixture. Refrigerate until set. Cut into 1-in. pieces.

PEPPERMINT PATTIES
I have made these every year as one of many Christmas treats. My family really loves them, it wouldn't be Christmas without them! When you dip, tap the fork on the edge of the pan to shake off excess. Slide the patty onto waxed paper -- you can use the fork to make a little swirl on the top to make it pretty.

Steps:
- In a large mixing bowl, combine condensed milk and peppermint extract. Beat in enough confectioners' sugar, a little at a time, to form a stiff dough that is no longer sticky. Form into 1 inch balls, then place on waxed paper and flatten with fingers to form patties. Let patties dry at room temperature two hours, turning once.
- In a medium saucepan over low heat, melt chocolate with shortening, stirring often. Remove from heat. Dip patties, one at a time, into chocolate by laying them on the tines of a fork and lowering the fork into the liquid. Let cool on waxed paper until set.

- In a large mixing bowl, beat the mashed potatoes, butter and peppermint extract.
- Gradually beat in the powdered sugar.
- Press into a foil-lined 13x9-inch baking dish.
- Melt chocolate chips and shortening (either in the microwave or in the top of a double boiler).
- Spread over potato mixture. Cover and refrigerate until set.
- Using foil, lift candy out of pan. Remove foil and discard.
- Cut candy into 1-inch squares. Store in an air-tight container.
