This is easily the best Ham and Bean Soup we've ever had! It's a simple, adaptable recipe, perfect with chunks of crusty bread.

1 tablespoon oil ((olive oil, vegetable oil, canola oil, etc.))
1 1/2 cups onions ((diced, about 1 medium onion))
4 large garlic cloves ((chopped))
2 cups celery ((diced, about 5 ribs of celery))
2 1/2 cups carrots ((diced, about 6 medium carrots))
5 15 oz. cans assorted beans
9 cups water
2 large bay leaves
2 teaspoons dried thyme
2 teaspoons garlic powder
2 teaspoons onion powder
1/2 teaspoon white pepper
1/2 teaspoon black pepper
1/4 teaspoon paprika
2 tablespoons chicken bouillon paste ((adjust to avoid over-salting if using powdered bouillon))
14 ounces ham ((roughly shredded or diced; or 2 large smoked ham hocks))
1/2 cup fresh parsley ((chopped))
1/4-1/2 teaspoon liquid smoke ((optional, to taste: not needed if using smoked ham hocks))

Steps:

  • Heat a Dutch oven (you can also use a thick-bottomed soup pot, but may need to stir more often to prevent burning) over medium heat for about 3 minutes or so, until it's nice and hot. Add the oil and the onions. Cook until the onions begin to turn translucent. Add the garlic and cook for 1-2 minutes.
  • Stir in the chopped celery and carrots, and cook for an additional 5-6 minutes. Add the beans, followed by the water. Increase the heat to high.
  • Add the bay leaves, dried thyme, garlic powder, onion powder, white pepper, black pepper, paprika, and chicken bouillon paste. (If you don't have chicken bouillon paste, simply use chicken stock in place of the water.) Bring to a boil.
  • Stir in the ham. I like to cut it into big shards/shreds for extra texture. (Sarah likes hers cubed and orderly though. I won't judge either way!) If you're using a ham hock instead of ham, you can add it in now.
  • Reduce the heat to medium-low so the soup is at a somewhat energetic simmer--it should always be at a low bubble. Cook for 4-5 hours, stirring periodically. If the soup isn't cooking down, you may want to increase the heat to medium. Every stove is different, so don't just set it and forget it. Periodically check liquid levels.
  • In the last hour of cooking, add the fresh parsley, and cook for another hour. It's done when the beans and carrots are tender, and the soup is thickened. If you used a ham hock, fish out any bones, and chop up any large pieces of meat and skin (keeping the skin is optional) that don't break down during the cooking process before serving.
  • This soup is quite forgiving. If it ends up too salty for your tastes, just add water, and lightly mash some of the beans to release their starchiness and re-thicken the soup. If you are reheating the soup and there is not enough liquid, just add 1-2 cups of water to bring it back to your desired consistency.

4 cans navy beans, rinsed and drained (unsalted if you can find them)
2 tablespoons unsalted butter
1 medium onion, chopped
1 carrot, chopped
1 celery rib, chopped
1 clove garlic, minced
1 1/2-2 quarts chicken stock
2 large smoked ham hocks or 1 ham bone
2 tablespoons minced fresh parsley
1 teaspoon dried thyme
1 teaspoon dried rosemary
2 bay leaves
1 cup diced cooked ham (I buy the packet of diced ham in the meat dept. unless I have ham saved)
Salt and pepper to taste
6-8 bacon strips, cooked crispy and crumbled

Steps:

  • In large Dutch oven, melt butter over medium-high heat. Add onions, carrot, and celery and saute for five minutes. Add garlic and saute for thirty seconds.
  • Add 1 and 1/2 quarts chicken stock, beans, ham hocks, parsley, thyme, rosemary, bay leaves, and diced ham. Add a little freshly ground black pepper.
  • Bring to a boil. Reduce heat to medium-low, cover, and simmer for 1 to 1 1/2 hours. You may need to add additional stock.
  • Remove ham hocks or ham bone and allow to cool enough to handle, then cut the meat off the bones and add to the pot along with the cup of diced ham. Discard the bones.
  • If you want to thicken the soup, remove about 2 cups of beans and puree in a blender then add back to the soup.
  • Taste and season accordingly with salt and pepper. The ham is usually salty so I don't add much salt until I taste the soup. Serve with crumbled bacon on top.

1 can (14-1/2 ounces) diced tomatoes, undrained
1 large onion, chopped

Steps:

  • Rinse and sort beans; soak according to package directions., Drain and rinse beans, discarding liquid. Place in a Dutch oven. Add the tomatoes with juice, onion, ham hock, broth, water, salt and pepper. Bring to a boil. Reduce heat; cover and simmer until beans are tender, about 1-1/2 hours., Add more water if necessary. Remove ham hock and let it stand until cool enough to handle. Remove meat from bone; discard bone. Cut meat into bite-sized pieces; set aside. 1 (16 ounce) package dry navy beans - picked over, rinsed, and drained
10 sprigs fresh parsley
2 sprigs chopped fresh thyme
1 bay leaf
2 large smoked ham hocks
1 carrot, coarsely chopped
1 onion, coarsely chopped
1 clove garlic, coarsely chopped
8 cups cold water
1 pinch kosher salt and freshly ground black pepper to taste

Steps:

  • Place navy beans into a large pot and cover with cold water by 2 inches. Bring to a boil, reduce heat to low, and simmer for 5 minutes. Remove pot from heat, cover, and let stand for 1 hour. Drain beans.
  • Use a small piece of kitchen twine to tie parsley and thyme sprigs and bay leaf into a small bundle. Place soaked beans, herb bundle, ham hocks, carrot, onion, and garlic into a large soup pot or Dutch oven. Pour 8 cups cold water over ingredients. Bring to a boil, reduce heat to low, and simmer until beans and ham hocks are tender, about 1 1/2 hours.
  • Turn off heat; remove ham hocks and let cool. When they are cool enough to handle, remove meat from the bones, discarding the bones, fat, and skin. Chop ham into small cubes. Remove and discard herb bundle.
  • Transfer about 3 cups cooked beans along with some cooking liquid into a blender; puree beans. Pour pureed beans back into soup, add cooked ham, and bring back to a simmer over medium heat. Season with kosher salt and black pepper to taste.

2 cups navy beans
2 cups pinto beans
2 lbs ham (cut 1-inch cubes)
6 carrots (peeled & sliced)
1 large onion (peeled & diced)
3 stalks celery (cleaned & chopped)
1 teaspoon thyme (dried)
1 teaspoon cumin (ground)
1 bunch Italian parsley (cleaned & chopped)
1 teaspoon cayenne pepper (ground)
2 teaspoons red hot sauce

Steps:

  • Soak the beans overnight (follow instructions on the package) or quick soak them. After soaking, rinse the beans and place in a large pot.
  • Add the remaining ingredients to the pot, cover with water and bring to a boil.
  • Once boiling, reduce the heat and cook on medium to low for approximately 3-4 hours until the soup reaches desired consistency (usually thick and creamy). You may have to add water.
  • Remember to stir often, as the beans cook on the bottom of the pot.

HAM BONE SOUP

Don't let that leftover bone from your holiday smoked ham go to waste! Put it to use in this hearty, delicious soup, which can be made with ingredients you probably have in your fridge and pantry. It's nice if you have a little meat left clinging to the bone after you've carved off all the ham, but even if you don't, the bone alone will add rich flavor and smokiness to the dish. You'll need to soak the dried beans overnight, so plan accordingly. Luckily this recipe makes a big batch as the soup keeps well in the freezer (see Cook's Note).

1 pound dried navy beans
3 tablespoons extra-virgin olive oil
4 medium carrots, chopped (about 2 cups)
3 stalks celery, chopped (about 1 cup)
3 leeks, white and light green parts only, halved lengthwise, thinly sliced and washed well (about 1 1/2 cups)
Kosher salt and freshly ground black pepper
2 tablespoons tomato paste
1 tablespoon fresh thyme leaves, chopped
2 bay leaves
1 leftover ham bone
1 head escarole, coarsely chopped (about 6 cups)

Steps:

  • The day before you want to make the soup. put the beans in a large bowl and add cold water to cover by several inches. Soak overnight (or at least 8 hours) in the refrigerator.
  • Drain the beans and rinse. Heat the olive oil in a large Dutch oven over medium heat. Add the carrots, celery and leeks and season with 1 teaspoon of salt. Cook and stir until the vegetables are softened, about 5 minutes.
  • Add the tomato paste and thyme and stir to coat the vegetables. Let the tomato paste toast for 1 minute, stirring, then add the bay leaves and 12 cups of water. Add the beans and nestle the ham bone in. Bring to a simmer and cook, uncovered, until the beans are almost tender, 45 minutes to 1 hour.
  • Add the escarole, another 2 cups of water and 1 teaspoon salt. Return the soup to a simmer and cook until thickened and the beans and escarole are very tender, 20 to 30 minutes.
  • Remove the bay leaves and ham bone from the soup and let cool until you can handle the bone. Shred any useable meat left on the bone and stir back into the soup. Season with salt and pepper before serving.

INSTANT POT® NAVY BEAN AND HAM SOUP

The aroma filling the house as these cook will tantalize and smell so delicious that you will hardly be able to wait for the beans to become tender for a taste of these "simply delicious" pintos! My M-i-L was a simple Southern cook... everything was delicious & mostly "no recipe." Just came together because she willed it to be biscuits, cornbread, pintos, greens, corn casserole, oyster dressing, etc. Her pintos were my exposure to HOW GREAT pintos and cornbread could be! I'll admit that SHE did not use tomatoes in her beans... simple food being the key. The tomatoes I owe to the vendors in the Charleston Market with their 15-bean mixes and recipe variations for great pots of beans . A little more labor and time than some dishes, but inexpensive and WELL WORTH the time for a hearty delicious meal. (Prep Time does NOT include slow or quick soak time... only actual work time) Keeps a week plus in refrigerator & freezes well.

24 ounces dried pinto beans, sometimes I use 2 to 1 ratio of pintos to white beans
1 (15 ounce) can diced tomatoes (undrained)
1/2 teaspoon extra spicy Mrs. Dash seasoning mix
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon fresh ground black pepper
1 teaspoon salt (or less if salt is a concern... still delicious)
1 -2 tablespoon dried parsley flakes
1/2 yellow onion, coarsely chopped (or sliced)
1/2 red onion, coarsely chopped (or sliced)

Steps:

  • Sort dry beans removing broken beans and any foreign debris. Rinse the beans.
  • Soak overnight in a large bowl covered by 2-inches of water (slow soak) -or- put in a stock pot covered by 2-inches of water; bring to a boil for 2 minutes; remove from heat and leave covered for 1-hour (quick soak).
  • Drain and rinse the beans. Return to a stock pot covered by 1-inch of water.
  • Add all the remaining ingredients except for the ham bone; stir to mix well.
  • Nestle the ham bone into the bed of beans, cover and bring to a boil.
  • Reduce heat to a low simmer for about 3 hours,occasionally stirring gently in the beans under the hambone -or- until the beans are tender.
  • Carefully lift the ham bone (or hocks) from the soup and place on a board so the lean meat can be cleaned from the bones. Return the lean meat to the soup. Discard the bones.
  • Enjoy with hot cornbread!
  • Freezes well.

PINTO BEAN/HAM SOUP

I adapted the recipe from a Hungarian cookbook. When my family's extra-hungry, I serve it with "pocket bread" I've filled with either jam or cheese for a hearty variation.

4 quarts water
1 pound leftover ham bone with meat attached
1 onion, finely diced
2 carrots, sliced
2 stalks celery, diced
¼ teaspoon garlic powder
¼ teaspoon ground black pepper
½ teaspoon paprika

Steps:

  • In a large stock pot, add water, ham bone and pre-soaked beans. Bring to a boil, reduce heat and simmer until beans are close to soft.
  • Remove bone and cut off remaining meat. Remove 1/3 of beans and mash with potato masher or food processor.
  • Return ham and beans back to stock pot and add onion, carrots, celery, garlic powder, pepper and paprika. If you are using dripping from a previously cooked ham add those now. Simmer until vegetables are tender and serve.
