PERFECT GRILLED SHRIMP
This grilled shrimp is perfectly seasoned and over the top good! Here's how to grill shrimp: it's easy and they cook up in 5 minutes. Or, try them with our Best Shrimp Marinade.

Steps:
- Thaw the shrimp. Then pat the shrimp dry.
- Preheat a grill to medium-high heat (375 to 450 degrees).
- Place the shrimp in a bowl and add the olive oil, oregano, garlic powder, onion powder, and salt. Mix with your hands to combine.
- Place directly on a grill and grill 1 to 2 minutes per side until bright pink and cooked through.
- Remove from the grill and squeeze on fresh lemon juice from several wedges of the lemon, to taste.

GRILLED SHRIMP WITH GARLIC (GAMBAS AL AJILLO)
Steps:
- Heat the grill to medium.
- Whisk together 1/4 cup of the oil, 2 tablespoons of the thyme, ancho powder and chopped garlic in a small bowl. Skewer the shrimp and brush with marinade.
- Place the remaining 1/2 cup of the oil in a small saucepan, add the sliced garlic and cook until the sliced garlic is lightly golden brown. Remove the garlic slices with a slotted spoon to a plate lined with paper towels. Reserve the oil.
- Increase the heat of the grill to high.
- Remove the shrimp from the marinade, season with salt and pepper and grill until golden brown on each side, about 1 1/2 minutes per side. Remove the shrimp from the skewers, transfer to a platter and drizzle with some of the reserved garlic oil and the garlic chips. Sprinkle with the remaining thyme and garnish with oregano leaves.

OAXACAN GRILLED SHRIMP
We watched these being cooked right by our table while in Huatulco. The smell when the marinade was brushed on the jumbo shrimp while on the grill filled the air - so good! This is our version. Enjoy! **Preparation time includes 30 minute marinading time (****edit June 25/07 - it was suggested that lime juice would be good instead of lemon juice so I tried it out and I prefer it that way. Thank you for that!) ***NOTE : ) Aug. 7/10 - discovered an even better way to enjoy this recipe! Ran out of skewers so just threw the prawns with all the marinade into a foil pan and threw that on the bbq stirring and turning for about 5 to 7 minutes (depending on size of your prawns). They turned out wonderfully moist and tasty and the resulting sauce was fabulous to dip a crusty bread onto. The sauce is also very tasty ladled on top of linguine. So fast and easy. Cuts the prep time down to basically nothing.

Steps:
- Thaw shrimp, if frozen. Shell and devein. Set aside.
- Soak skewers in water.
- Throw all the ingredients, except for the shrimp, into a blender and process until a fine puree.
- In a large glass bowl, sit together shrimp and marinade. Cover and chill for 1/2 an hour.
- Drain shrimp and reserve marinade. Thread shrimp on skewers.
- Grill skewers medium high heat just until they turn pink, turning frequently and brushing with reserved marinade. Takes about 15 minutes.

GRILLED ANCHO SHRIMP FILLING

- Peel and devein shrimp. Place in a small bowl with ancho-chile powder, cayenne, and oil, and stir until well coated.
- Cover; chill 30 minutes. Heat a grill or broiler. Salt shrimp, and cook 2 to 3 minutes on each side, until cooked through.
GRILLED SHRIMP WITH ANCHO PASILLA SAUCE

Steps:
- Soak skewers in water at least 30 minutes and up to several hours.
- Shell and devein shrimp. Holding 2 skewers parallel and slightly apart, thread 6 shrimp onto them (this will facilitate turning them on the grill). Thread remaining shrimp onto pairs of skewers in same manner. Brush both sides of shrimp with ancho pasilla sauce and discard any remaining sauce. Marinate shrimp, covered and chilled, at least 30 minutes and up to 6 hours.
- Prepare grill.
- Grill shrimp on a well-oiled rack set 5 to 6 inches over glowing coals 2 minutes on each side, or until just cooked through. (Alternatively, shrimp may be broiled on rack of a broiler pan under a preheated broiler about 3 inches from heat 3 to 4 minutes on each side.)
- Remove shrimp from skewers and serve with accompaniments.

- Mix the oil, chili and cinnamon in a bowl large enough to fit the shrimp, preferably one that has a good lid. If you can't find ancho chili powder, you can use regular chili powder which adds garlic powder, cumin, oregano and salt to the ancho chili. But nothing wrong with an extra bit of flavor.
- If you go with shrimp in the shell, I recommend a partial butterfly. Using a sharp knife, or one with a sharp serrated edge, cut through the shell along the top (back?) of the shrimp so that you cut halfway through the shrimp from the head down to the tail. This will let the marinade get in and flavor the shrimp better. Add the butterflied shrimp to the marinade.
- Put on the lid, or a healthy few layers of plastic wrap and shake to get all the shrimp covered. Return to the fridge or better, on a bed of ice, for about 15 to 20 minutes.
