OATMEAL MOLASSES COOKIES

Steps:
- Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper.
- In a large bowl, whisk together the oats, flour, baking powder, baking soda, cinnamon and salt.
- In a stand mixer, mix the sugar and coconut oil until combined. Add the molasses and eggs and mix until combined. Add the dry ingredients and mix until just combined. Fold in the raisins and walnuts.
- Using a 2-tablespoon or 1-ounce scoop, portion the dough onto the baking sheets, 1/2 to 1 inch apart. If you like chewier cookies, leave the dough as is. If you like crispier cookies, press down with a spoon to flatten. Bake until the edges are brown, about 15 minutes. Cool before serving.

- Instructions Heat the oven to 375 F. Cream the butter and sugar in a large mixing bowl with an electric mixer. Add the egg, cardamom, salt, orange zest, and vanilla. Blend well. Blend in the pistachios. Add the flour and cornmeal gradually until well blended on low speed of the mixer. Roll dough into about 1 inch balls and roll in sugar. Place on a baking sheet--I do 20 per sheet, 4 rows of 5 cookies. Press the dough down with your fingers to form small discs. Bake about 13 minutes or until the sides and bottoms are golden brown. Cool on a wire rack. Makes about 55 cookies.

CORNMEAL COOKIES
These are really good cookies. They could be made with margarine, but are MUCH better made with BUTTER.

- Mix softened BUTTER and sugar until creamy.
- Add the egg and vanilla and beat well.
- In a separate mixing bowl, mix together the cornmeal, Baking Powder, salt and flour.
- Add to the creamed mixture.
- Drop by teaspoonfuls onto a greased cookie sheet.
- Bake in a preheated 350 degree oven about 15 minutes or until lightly brown.
CHEWY MOLASSES COOKIES
This recipe has been handed down in our family since World War II and it remains a favorite with the grandkids today. Do not substitute anything for the melted shortening; your results will not be as good. If you prefer a crispier molasses cookie, bake one minute longer. These cookies freeze well (if you can keep your family from eating them up first!)

- Preheat oven to 375 degrees. Melt shortening and allow it to cool.
- In a large bowl, mix together the shortening, sugar, molasses, and egg. Beat well.
- Sift together the flour, baking soda, salt, and spices. Add to shortening/sugar mixture, mix well.
- Chill dough about half an hour or until firm.
- Roll into 1" balls, then roll balls in sugar. Place about 2 inches apart on cookie sheet.
- Bake about 8 minutes at 375 degrees. The edges should be slightly brown. Do not overbake!
- Cool on racks before storing.

OLD FASHIONED MOLASSES COOKIES
These are basically a soft ginger snap. I made them for my 8 year olds class and they were fighting over the extras. I also made them for a very sweet older friend who said she hadn't tasted these since her mother made them when she was little, They make a ton and stay fresh for quite awhile. This works perfectly for Christmas or large amounts of company!

- Finally add dry ingredients.
- Roll in balls size of fifty cent piece.
- Roll in sugar--do not flatten!

These are my dad's favourite cookies. He says they remind him of the cookies his mom used to make. Chewy and delicious....they scream for an accompanying cold glass of milk or cup of tea. Enjoy!

- In a medium size bowl, mix the melted butter, 1 cup of sugar and the molasses.
- Add egg and stir until well mixed.
- In a separtate bowl, mix the flour, ginger, cinnamon, baking soda and salt.
- Gradually add to the butter mixture, stirring until a soft dough is formed.
- Shape the dough into 1-inch balls, then roll each ball in the remaining sugar.
- Bake on an ungreased baking sheet for 10 minutes.
